If you want it to actually look like a cake, you will need a springform pan, but if you could also make this in a 9×13 pan and it will be equally delicious and much easier to decorate!
For the icing I just used cream whipped with powdered sugar, but I cheated on decorations and used a white icing. It was much easier to work with, I tried piping with whipped cream and it just didnt look as pretty!

- You want to work very quickly once the cake is built with the ice cream center. Let the cake fully freeze 1-2 hours before frosting. Then after frosting cake but before decorating, freeze another 1-2 hours. You dont want it to be out too long and melt, especially if you live in a warmer climate.
Sometimes I dont feel like I have it all figured out or that maybe I could be further along in life . Perhaps I should be more successful at this point in my life.

Does Ice Cream Cake Have Cake In It
Ice cream cake can be made of just ice cream or can include layers of actual cake. For an ice cream only cake, you may add various mix-ins like caramel, peanut butter, or chocolate, or use different flavors of ice cream to create layers.
For an ice cream cake with actual cake layer, you can opt for just one layer of cake topped with a layer of ice cream, or sandwich the ice cream between two layers of cake. I opted for a higher cake ratio here to cut the creamy sweetness a bit.
Organize For Success Raspberry Brownie Ice Cream Cake
Advance preparation is the key to a successful ice cream cake. I made the chocolate truffle brownies two days ahead of serving. I chilled the brownie overnight then carefully cut it in half horizontally. Then I put the brownie back in the pan with wax paper separating the two layers and froze it. This step can be done days or weeks in advance. For the final assembly I spread vanilla ice cream and raspberry sorbet on the brownie layers. The assembled dessert then went back in the freezer overnight.
Ice cream cakes are difficult to cut if they are frozen solid. A way to get around this is to simply cut it in advance. At the last minute arranged these on a pedestal tray, topped each piece with whipping cream and raspberries then added a garnish of fresh mint. This recipe is for a stabilized whipped cream frosting.
- Place your mixing bowl in the refrigerator or freezer for a few minutes.
- In the cold mixing bowl, whip the heavy whipping cream on medium speed for 15-30 seconds or until its foamy.
- Add the pure vanilla extract, powdered sugar, and cornstarch and continue mixing at medium speed until stiff peaks form and it becomes firm.
- Refrigerate until ready to frost the cake.
You can skip this step and use Cool Whip or Cocowhip for the dairy-free option.
How To Store An Ice Cream Cake
Once youve decorated your cake, you probably want to store it before youre going to serve. I recommend storing the cake in the freezer with the decorations on. After 15 minutes in the freezer, you can gently and carefully cover it with plastic wrap, but generally, the cake shouldnt dry out, as the buttercream offers insulation to keep it moist.
About an hour before youre ready to serve the ice cream cake, transfer the cake to the fridge to start to thaw. This will allow the cake to become soft again. Then serve and slice the ice cream cake!

How Do You Store Ice Cream Cake
Make sure you store your ice cream cake well to avoid freezer-burn. There’s nothing worse than a cake that tastes like freezer!
When freezing the assembled pre-frosted cake, cover it in plastic wrap or foil. If you’re making the cake far in advance, make sure to create an air-tight seal of plastic wrap then a layer of foil.
After you’ve frosted the cake, let it freeze uncovered for 30 minutes to firm up then carefully cover the cake in plastic or foil to keep it from getting freezer burn. Don’t frost your cake more than 3-5 days in advance because the longer it sits in your freezer without an airtight seal, the more likely it will taste like your freezer when you go to serve it. Instead, if you need to make the cake further in advance, seal and wrap up the cake right after you’ve frozen the layers overnight, but before you frost it!
Finally, slice and freeze any leftovers in an airtight container .
Almost Done With This Amazing Gluten Free Ice Cream Dessert
Finally, right before you serve, remove the cake from the freezer. Let it sit just a minute so that your pan can thaw slightly. You may need to run a knife along the edges to loosen the cake. Remove the ring, keeping the cake on the pans plate. Frost the ice cream cake with cool whip.
In addition, you can decorate the top of the cake with either cookie crumbs or gluten free sprinkles!
To easily cut and serve the cake, heat your knife with hot water. Serve immediately!

While you could use just about any ice cream and gluten free cake combination to make an ice cream cake like this, but I used my own recipes to make a nutrient dense dessert! It’s not overly sweet, and contains a dozen eggs along with other delicious and nutritious ingredients. My only complaint using my recipes is that the cake tends to dry out a little in the freezer, so if you have a more desirable choice for a frozen gluten free cake feel free to substitute! It’s also gluten and dairy free, so very appropriate for those with food allergies.
Whats In That Chocolate Crunch Layer
When I first made a semifreddo ice cream cake, it was only vanilla and shaped in a standard loaf pan. But the smooth creaminess and reduced sweetness of semifreddo seem just right for a more dressed-up ice cream cake.
If youre going to make a Carvel- or Baskin Robbins-style ice cream cake, youre going to need a chocolate crunch layer. Some homemade ice cream cake recipes use crushed Oreos and hot fudge.
I prefer to make the chocolate crunchy layer with crushed chocolate sandwich cookies , that arent crushed into sandy crumbs. Crush them by hand just until theyre small chunks, and then add a mixture of melted chocolate and coconut oil.

Assembling this gluten-free ice cream cake is very straight-forward and easy with a little patience. If you’d like to make it even easier, you don’t need to make all the layers from scratch . I list out some substitutions in the section. Once you have all your layers ready, follow these steps to assemble:
How To Make Gluten
To make a gluten-free ice cream cake, it’s best to start two days before you want to serve the cake. Ice cream melts pretty quickly, especially if you use a high-cream brand like Tillamook. The good news is, ice cream cake takes very little hands on time, just a little planning in advance!
On the first day, you’ll bake and cool the cake layers and caramel sauce. Once cool, you’ll assemble your cake into layers and pop it in the freezer for at least 6 hours or overnight to firm up.
The next day you’ll frost and decorate the cake. While you decorate the cake, though, the ice cream will start to soften again, so you’ll need to pop it back into the freezer for another 2-4 hours or overnight to firm up before slicing.
On the third day, you slice and eat the cake. If you let it sit at room temperature for 3-5 minutes, it’s just a bit softer and easier to slice, while still firm enough to hold its shape!

What Do You Need For A Carvel Style Ice Cream Cake
First things first, you need cookies. Oreo style cookies. Since my son is gluten-free, I used gluten-free Oreo style cookies from Trader Joes. There are others out there but I cant vouch for them as I havent tried them. If gluten isnt an issue, Newmans Own makes a great organic Oreo style cookie.
Chocolate Sauce is optional but really takes this over the top! Whole Foods has an organic 365 one that is very affordable. You can use whatever is leftover to drizzle over the top!
Next up, you need to make some homemade whipped cream. Its easy and takes minutes. I include the instructions for that below in the recipe.
As for the ice cream, Carvel uses soft serve. I experimented with whipping the ice cream to get that softer texture before re-freezing. It does lighten up the final cake a bit and the texture is nice but overall, I do not think it is worth the extra effort, time and mess it takes so I say skip it and just use your favorite brand of ice-cream.
What Is A Carvel Style Ice Cream Cake
In case you arent familiar, Carvel is a chain ice cream shop that is pretty famous for their ice cream cakes. This isnt just your traditional ice cream cake though, its an ice cream cake with a hidden layer of cookie crumbles inside that add that perfect crunch.
An old-school Carvel ice cream cake is usually two different flavors of soft-serve ice cream, separated by a middle layer of cookie crumbles and chocolate sauce. Super yummy but made with low-quality ingredients. Not anymore! I have cracked the code and now we can make gluten-free ice cream cake that is a Carvel copycat with whatever quality ingredients we want!
