My girls have been asking for pies in their lunch boxes lately. I couldnt figure out what they wanted. They assured me that they had eaten peanut butter and jelly pies with lunch. I was convinced they got snacks at day care.

Turns out they were right.

I have been buying some of the thin, round sandwich thingies at the grocer every once in a blue moon . They are not big bread eaters actually, so its been easy to maintain a gluten free house for the most part.

Schools doesnt break for summer vacation here until June 23.

And THAT seems very far away at the moment. And thankfully so, I have a ton left to do at work. But I cant wait for some time with my girlies too. I hope we have a warm summer and they sun comes to visit.

A lot has happened on the sourdough front over the last few weeks. While I published my guide to gluten free sourdough starter last year, I had planned to tinker with the gluten free sourdough recipe at my own pace. Needless to say, corona threw those plans out the window. The gluten free amongst us need bread too, you know. However, my only personal gripe with sourdough is the wastefulness of the discard process, particularly when flour is scarce. Enter: gluten free sourdough starter crackers.

These gluten free sourdough crackers are the PERFECT no-waste solution. Theyre outrageously delicious and offensively easy to make. Im going to say it: I almost enjoy them more than the bread itself.

The crackers are gluten free, nut free, FODMAP friendly and made with pantry basics. They can be made vegan and can have endless flavour varieties, depending both on the flours used in your starter and the ingredients you add.
