Gluten Free Rice Krispies Treats

This brand, crafted from whole grain, non-GMO brown rice, is sweetened with organic fruit juice instead of sugar or high-fructose corn syrup. It may not work well for the most sensitive, however. It’s manufactured in a that also processes wheat, soy, tree nuts, and peanuts, and risking some exposure to those allergens. That said, the cereal is tested to make sure it contains less than 20 parts per million of gluten.

How To Make Brown Butter

One of my favorite ways to bring a ton of flavor to a recipe is by using brown butter. Making brown butter is super simple! All you will need is a lightly coated frying pan or pot, a wooden spoon, and a stick of butter. In this recipe, we use 10 tablespoons of butter.

  • Melt the unsalted butter in a lightly coated frying pan on medium-low heat, stirring frequently.
  • Watch closely as the butter begins to melt. Within 2-3 minutes the butter will start to foam and the milk solids will begin to caramelize producing a nutty aroma and chestnut color.
  • Once the color starts to change, quickly remove the butter from the heat.
  • Pour the brown butter into a glass container. Make sure to scrape all of the little brown bits into the glass container, this is where the flavor comes from.

    This no bake treat takes less than 30 minutes to make with only 2 hours of waiting time for the rice krispies to harden. Its the perfect easy gluten-free dessert!

  • Line a 9×13 inch baking pan with a piece of parchment paper or lightly grease the pan with oil. Set aside.
  • Melt the butter over medium heat in a very large pot. Within 2-3 minutes the butter will start to foam, whisk constantly until the butter begins to brown, then turn down the heat to low.
  • Add the marshmallows, reserving 2 cups aside. Continue to stir for 2-3 minutes until the marshmallows are melted. Its ok if there are a few clumps.
  • Stir in the vanilla and salt.
  • Add half of the cereal to the pot, and continue to stir. Fold in the remaining cereal and marshmallows and remove the pot from the heat.
  • Carefully pour the mixture into the prepared pan. The marshmallows will be very sticky, therefore an easy way to spread out the mixture is by using a greased rubber spatula. Gently press the mixture down into the pan with the spatula but avoid packing. This will allow the treats to form together but not overly harden.
  • Cover the pan with aluminum foil and allow the treats to set at room temperature for 2 hours.

    My Favorite Traditional Rice Crispy Treat Recipe

    I love making Rice Krispy Treats with homemade marshmallows. Theyre always less sweet than those made in a typical way, with melted butter, melted marshmallows and/or marshmallow creme, and I find that they stay fresh longer.

    But sometimes, you just need to whip them up in mere seconds. Below is my favorite traditional way to make gluten free rice krispy treats. I like to mix butter with marshmallow creme, since its easier to melt than whole marshmallows.

    Have you ever tried to make these treats with marshmallows that arent incredibly fresh? It does not go well. But marshmallow creme/fluff is always fresh enough for these treats. I also like to add a few more miniature marshmallows at the last minute, since they keep everything just gooey enough. Using marshmallow creme rather than marshmallows also makes for treats that are still soft the next day.

    If you dont have fresh mini marshmallows, just leave them out. Or add chocolate chips!

    Is Rice Krispies Cereal Gluten

    Kelloggs Rice Krispies cereal is not gluten-free because it has malt flavor listed in the ingredients. Malt flavor is made from barley, which is a gluten-containing grain.

    The good news is that there are several brands of gluten-free crispy rice cereal. The two brands I used to make these gluten-free rice Krispie treats are Malto O Meal and Natures Path Organic.

    The Malto O Meal is a brand made and sold at Walmart and comes in a 36-ounce bag. This brand of crispy rice cereal was the closest to the traditional Kelloggs Rice Krispies.

    I bought the Natures Path Organic Crispy Rice at Target, and it was a 26-ounce bag. Natures Path Organic cereal is made with brown rice and was a little different in flavor and texture than the traditional Kelloggs Rice Krispies.

    Both brands of gluten-free crispy rice cereals made yummy rice crispy treats.

    Arent Rice Crispy Treats Already Gluten Free

    Youd think so, but youd be WRONG!! When I was first diagnosed with Celiac I didnt realize, like most of you probably didnt either, that gluten is in nearly Evvvvverything! Especially things you wouldnt think itd be in . Most cereals are made with malt, or barley malt, which is made fromyou guessed itbarley. And we cant have barley.

    After that initial shock of not being able to eat things like RICE cereal, I began to find alternatives. Like tamari for soy sauce. And Aldis store brand rice crispies for Kelloggs Rice Krispies, which are naturally gluten free .

    How To Make Gluten

    • Line a 9-inch x 13-inch pan with parchment paper or grease with gluten-free cooking spray.
    • Measure out 2 cups of the mini marshmallows and set aside to add at the end of the recipe.
    • In a large pot, melt the butter on low heat. Do not turn up the heat or you could brown your butter.
    • Add mini marshmallows and stir until they are completely melted.
    • Add the pure vanilla extract, milk, and salt and stir until fully combined.
    • Turn off the heat or remove the pot from the heat.
    • Add the gluten-free crispy rice cereal and mix until the cereal is completely coated with the marshmallow mixture.
    • Add the remaining 2 cups of mini marshmallows and stir until fully combined and slightly melted.
    • Using a greased spatula, spoon the mixture into the prepared pan. Smooth the mixture to make even.
    • Wet your hands and lightly press the mixture down into the pan.
    • Cover with plastic wrap and allow them to cool at room temperature for 1 hour. You can also place them in the refrigerator to chill for 1 hour.
    • Cut into squares and serve. Enjoy!

    How To Make The Best Rice Crispy Treats

    Making GLUTEN FREE Rice Krispie Treats

    The thing I love most about these rice crispy treats is how they come together with only about 5 minutes of hands-on work. From start to finish, you could be snacking on these treats in just over 30 minutes!

    The first thing you want to do is measure out all of your ingredients. These treats will come together fast so you want to have all of your quantities ready to go. This is why I love my Pyrex glass mixing bowl set and mini mis-en-place bowls.

    Once ready to go, combine the vegan butter with the majority of the mini marshmallows in a large microwave-safe bowl. Heat for 30 seconds at a time, stirring in between intervals with a greased spatula until fully melted.

    Once melted, add in the vanilla extract and stir.

    After melting the wet mixture, quickly add in all of the crispy rice cereal and the remaining mini marshmallows. Stir with your greased spatula to coat everything.

    Pour and spread the entire mixture into a parchment-lined 9×9 baking dish. I like to spray my rubber spatula with coconut oil and use it to press the rice crispy treats into the pan. You want to make sure you compress them enough that they will hold together, and not so much that they turn into one big brick .

    Once nicely shaped in the pan, let the rice crispy treats sit to cool for about 30 minutes.

    Nature’s Path Crispy Rice Cereal

    This cerealfrom the maker of perennial gluten-free kid cereal favorite Koala Crisp Cerealalso is certified gluten-free by the GFCO. It’s certified gluten-free by the Gluten-Free Certification Organization , which requires testing to below 10 parts per million of gluten. That’s an important number to know depending on how much gluten can make you sick.

    The cereal contains organic brown rice flour, organic evaporated cane juice, sea salt, and organic molasses. Nature’s Path makes this cereal in a facility that also processes tree nuts, peanuts, and soy.

    Are Rice Crispy Treats Gluten

    Whether these tasty snacks are gluten-free or not is a very tricky question to answer. Whilst the SmartLabel of allergens and ingredients on the Kelloggs website states that the only allergens are milk and soya the list of ingredients makes me feel a little uneasy about the allergens they have disclosed.

    The ingredients listed are as follows:

    Toasted rice cereal , folic acid), corn syrup, fructose, vegetable oil, sugar, corn syrup solids, contains 2% or less vegetable glycerin, dextrose, gelatin, natural and artificial flavors , salt, DATEM, acetylated monoglycerides, soy lecithin, BHT for freshness.

    Whilst those ingredients may appear to be gluten-free, the ingredient, malt flavor, listed above makes alarm bells ring in my mind. Malt flavoring is often derived from barley, which is, of course, a no-go for gluten-intolerant individuals.

    What I find most interesting is that the UK equivalent of Rice Krispies Treats, Squares have a clear label that they are not suitable for gluten-intolerant individuals. The label clearly states that barley is an ingredient and therefore is not gluten-free. Same brand, same product just a different name. Yet the labeling is different seems odd, doesnt it?

    Rice Crispy cereal itself also has the same issue. The label states the only allergens are milk and soya but malt flavoring is listed as an ingredient. Therefore, to me this product is not suitable for anyone that lives with celiac disease or can not tolerate gluten.

    Whats better than an original Rice Krispies Treat? One made with chocolate, of course!

    You can never, ever go wrong with adding chocolate. In my opinion, that is.

    Not only do we use chocolate cereal here, but my recipe is also a little heavier on the marshmallow side than most recipes out there.

    I use a whole 10 oz bag and then add an extra cup of mini marshmallows. Because again, you can never go wrong with adding extra marshmallows!

    Since this recipe only uses a handful of ingredients and the butter plays a major part in the flavor, you want to make sure youre using good butter. I know that makes me sound like Ina, but it really is true.

    My go-to is grass-fed butter but European butter would be great too. Trust me, it makes a difference!

    Is It Worth The Risk

    If you feel the risk is worth taking, that choice is entirely yours. But I certainly wont be trying them any time soon. Especially as Im from the UK and the barley is clearly marked.

    What I find frustrating is that it should be really simple to make a product like Rice Krispies gluten-free especially because the main ingredients are essentially sugar and rice! Even more frustratingly, in 2011 Rice Krispies launched a gluten-free cereal, but according to their website the sales were disappointing, and manufacturing constraints were an issue. The product was discontinued. Its a shame because I feel as though it would certainly be more popular now.
