Gluten Free Chocolate Chip Cookies
This last week I attempted to create a go-to Gluten Free Chocolate Chip Cookie. One that you could depend upon, knowing they would turn out fabulous every time you baked them. Made from easily-accessible ingredients, ones that normally lived in my pantry and fridge. That way, I could just whip them up at a momentsContinue reading
Focaccia With Ramps Or Scallions
We have all become so bored of quarantine meals. It was time to make something DIFFERENT for dinner today. We were feeling indifferent with the steady staple of 1) some protein from the freezer or tofu, 2) a vegetable that has been resting in our cold garage that hopefully is not moldy yet. 3) gnocchi/rice/potatoContinue reading

If you can’t eat gluten or choose not to, that doesn’t mean you have to forgo one of the greatest foods in life: bread. If you aren’t up for making your own bread from scratch, there are plenty of pre-batched mixes on the market that exclude gluten, and like any other store-bought mix, they merely require pantry staples, like butter, eggs, and milk.
Without gluten, you may be worried about your loaf becoming compromised and losing its elasticity, ending up nothing more than an oddly textured, chewy disaster. Nobody has time for bad bread, which is why we researched top-rated brands to get you tasty results.
Here, the best gluten-free bread mixes on the market.
King Arthur Flour has been producing high-quality flours and other baking ingredients, including mixes, for home and commercial bakers for many years. While many of its mixes include wheat flour, the brand’s line of gluten-free mixes has been growing and quite well-received by consumers. Each box of bread mix makes one large loaf of bread.

Pamelas Gluten Free Bread Mix
I recently tried Pamelas Gluten-Free Bread Mix. I am sharing my thoughts and how I made it. Pamelas has no clue who I am. I am just sharing my thoughts on a gluten-free product that I tried.
Gluten free breads and gluten free doughs that contain yeast are some of the hardest gluten free recipes to make.
It is not so much that they are hard to make, it is more that they are hard to get like the regular, gluten-filled, version.
Dough needs gluten to give it the texture, rise, and stretch that is required. Without the gluten it is hard to get a great taste and texture. Or at least one that is close to the real thing.
Zucchini With Crispy Garlicky Breadcrumbs
With summer winding down, our gardens seem to be bursting with unpicked ripe zucchini. Farmers markets are overrun with them, and those you picked up last week seem to be miraculously reproducing in the crisper drawer of your refrigerator. I thought at this time, you might appreciate one more recipe to use some of yourContinue reading

Will I Use Pamelas Bread Mix Again
I definitely will buy this mix to keep on hand. I loved how easy this was to make. It took less time to put together than my recipe.
I love that all the dry ingredients and the yeast are included in the mix because it made it quick to put together without a lot of thought.
I also like that the fact that they bread contains some whole grains without me having to keep all those different whole grains on hand.
Amazon carries this Pamelas Gluten-Free Bread mix and that is what I linked to above, but you can probably find it cheaper at a store that carries Pamelas gluten-free products.

Seared Gnocchi With Bacon And Vegetables
I know there are legions gnocchi fans out there, sadly though, I have never been one. If given a choice for a Italian carbohydrate it would always be spaghetti for me. With spicy tomato sauce, carbonara, aglio e olio peperoncino, or just butter and parmesan cheese, each one my favorite. However my daughter sent meContinue reading

Homemade Gluten Free Bread
I have a homemade gluten free bread recipe that I love. I developed the recipes years ago and it is still a favorite. It is the gluten free bread recipe I make when I want gluten free bread.
However, as I have mentioned many times this year, 2020 has changed my gluten free baking life. Gluten free flours and products have been hard to find, both online and in stores in my area.
When my sister told me that she had tried and loved Pamelas Gluten Free Bread Mix I knew that I wanted to try it. It would still give me homemade bread, but everything that I needed would come in one mix. Including yeast, which has been very hard to find in 2020.
What Bread Is Naturally Gluten Free
Only bread made with gluten-free flours and grains is gluten free. Bread made with wheat, barley, spelt, or rye contains gluten. Some ancient grains such as einkorn contain less gluten than modern wheat varieties, but breads made with those grains still contain gluten. Only breads with non-gluten flours, such as buckwheat, sorghum, amaranth, teff, and brown rice, are gluten free.

Gluten Free Bread Dough
The dough for this mix was a wet dough, but gluten free doughs tend to be more sticky than a gluten filled yeast doughs.
You need to mix gluten free dough well, but it doesnt really knead because it doesnt contain the gluten.
Instead of forming the dough for this into a loaf you spread it into the pan. It is not the prettiest of doughs, but trust me, if yours looks like this it is just fine.
I was really surprised at how well the Pamelas Bread dough did when rising. Not all gluten free dough will rise well.
After it baked I was even more impressed. It looked and smelled delicious when I took it out of the oven.
But how did it taste?

Best Bargain: Bobs Red Mill Gluten Free Hearty Whole Grain Bread
Because it requires special ingredients, gluten-free bread mixes tend to be expensive, but this mix from Bobâs Red Mill is quite affordable. Each 16-ounce bag makes one loaf of gluten-free bread. The mix includes a variety of grains and seeds that produces a complex, whole-grain bread with more flavor than a typical loaf of white bread.
While traditional cornbread includes a lot of cornmeal, it also includes wheat flour, so itâs not usually gluten-free. This mix eliminates the wheat, creating a tasty cornbread that can be baked in a cast iron skillet, in a square pan, or in a muffin tin. Itâs simple to make, tooâjust add milk, egg, and oil, stir to combine, and bake. This 15-ounce box makes one pan of cornbread or 12 corn muffins.
Brazilian cheese bread isnât something that needs to be adapted to be gluten-freeâthe recipe never had gluten originally. Instead, these little bread balls are made with tapioca flour and no wheat at all. While this mix is designed for making cheese bread, it doesnât actually include cheese in the mix. While sharp cheese is preferred, you can add your own favorite, or you can leave it out for delicious, cheese-free rolls.
Chicken With Artichokes And Olives
While it seems I do experiment with a lot of different foods to share with you here, I tend to default to one, maybe two, recipes per season for dinner parties. Cornbread With Jalapens And Chives
As the summer winds down, I usually do a mental inventory of all the seasonal foods we have cooked and enjoyed to make sure we havent missed out. This Raspberry Pecan Tart falls firmly into the if it worked make it again, just change up the flavor a bit category. Why Is Gluten
Gluten-free bread is more expensive than regular bread because it requires special gluten-free flours, which are less common and pricier. Also, the production process is more involved. To make sure the bread is 100% gluten free, all ingredients must be traced meticulously from their source to the bakery. It also requires monitoring of the entire production process and handling of the final product to avoid any cross-contamination with gluten products.
