How To Make Gluten Free Dairy Free Choc Chip Cookies

Soft n Chewy Gluten-Free Chocolate Chip Cookies

To make these cookies dairy free, try using vegan butter. My favorite brands are Melt and Miyokos Kitchen.

You shouldnt need to make any other changes to the recipe. Just be sure your chocolate chips are also dairy free.

Ive tried making this recipe with Earth Balance buttery sticks in place of butter, but the texture wasnt great. Earth Balance has too much moisture.

What Can I Use Instead Of Oat Flour

If you cant use oats, another great option is almond flour. These two are a great swap for one another in most instances. Although, almond flour isnt as absorbent as oat flour.

Try to use super-fine almond flour for best results. Just make sure the cookie dough is easily scoopable and holds its shape. If the dough is too thin, add a couple extra tablespoons of the all purpose gluten free flour blend.

Why Are My Cookies Too Flat

There are several possible reasons for your cookies being too flat:

  • You didnt chill the cookie dough long enough . If thats the case, the butter in the cookie dough will be too warm the moment it hits the oven and/or the flour in the dough wont have sufficient time to fully hydrate, and the cookies will spread out too much in the oven.
  • You added too much sugar. Sugar causes the cookies to spread in the oven, so make sure to use the amount listed in the recipe below.
  • You didnt add enough flour. The amount of flour is crucial to controlling how the cookies behave in the oven, including how much they spread. Ideally, use a kitchen scale to measure it out correctly. If using volume measurements , dont scoop the flour directly from the container with the measuring cup, as that will compact it too much and youll end up over-measuring it. Instead, spoon the flour into the measuring cup and level it off with the straight edge of a knife or similar.

Chilling The Cookie Dough

This is another important step that you cant skip! Chilling the dough allows the dry ingredients to fully absorb the wet ingredients, creating a more robust dough that will spread more evenly when baked.

Pre-scoop the cookie dough using a large cookie scoop. Dot the tops with a few extra chocolate chips and transfer the uncovered dough to the fridge. They must chill for at least 2 hours, but its OK if they chill for longer.

If you need to let them chill overnight, allow them to sit in the fridge uncovered for 2-4 hours, then wrap the tray in plastic wrap and continue to let them chill overnight. This prevents the dough from drying out.

There have been a few people out of the hundreds that have tried this recipe that felt there was too much chocolate in these cookies. I cant fathom that, since in my opinion you can never have too much chocolate. But if you want more cookie and less chocolate, feel free to cut back the amount of chocolate chips you add.

Wow! Your recipe sounds amazing! I must say your instructions and tips are very precise and will be so helpful when I make these. I truly appreciate all bakersâ patience and diligence when creating a new recipe! â¤ï¸ Baking GF for my husband has NOT been easy for me, so recipes like yours are much appreciated! I am one of those people who want my cookies NOW, so the four chilling hours will be hard for me haha. BUT I am going to do it for these as they look absolutely delicious.I wonder if you have heard of Caputo Italian GF flour or tried it. It is exceptional. It does contain wheat enzymes, but it IS gluten-free and I have read many comments by celiacs that have no problem with it…however if you have a WHEAT allergy you should avoid it.Another challenge I will face will be the sugar…again due to my husbands issues, so I will be using a golden monk fruit sugar with these. I will let you know if I am successful or not.Thanks again ð

What Do You Need To Make Gluten Free Chocolate Chip Cookies

What is the best gluten free flour for baking cookies?

There isn’t one gluten free flour that is better than all the others for making cookies, however you will need to adjust your recipe depending on what gluten free flour you are using.

Not all gluten free flours work exactly the same, and some absorb more moisture than others.

With both Bob’s Red Mill’s 1 to 1 gluten free flour and Ryze’s blue bag, you’ll need to use a total of 1 cup to 1 ¼ cups of gluten free flour instead of the 1 ½ cups in the recipe.

With both blends, I used less than 1 ¼ cups of gluten free flour in this recipe.

If you are using any gluten free flour blend other than my gluten free flour, I recommend adding 1 cup of gluten free flour to start.

Check to see how the consistency of your dough matches the gluten free cookie dough in my tutorial video. If it is too soft, add more gluten free flour about 2 tablespoons at a time.

The best way to check to see if you need more flour, it to bake a single test cookie using 1 ½ tablespoons of dough.

Bake it at 350°f for 8-10 minutes and watch how it spreads. If it spreads too thin or crispy, add more flour.

You can always add more flour, but if you add too much you have to start over!

How To Brown Butter

If you havent had brown butter yet, you MUST try it. Browning your butter gives it an amazing complexity that enhances so many recipes.

  • Start by melting your butter over medium heat in a small sauce pan.
  • Whisk the butter constantly as it melts to ensure its evenly heated. As it melts the butter will start to foam. This is the sweet point between boiling the butter and not hot enough.
  • Keep a close eye on the butter. Like DO NOT WALK AWAY. As it transitions from its usual yellow color to a deeper golden hue and at last to a beautiful light brown. Youll know its done by the smell: a toasted, nutty, intoxicating scent. It can very quickly go from this light brown to burnt, so make sure you take it off the heat as soon as it makes the turn.
  • Take it off the heat and transfer to a bowl to allow it to cool before using in your recipe.

    How To Make Chocolate

  • Whisk together the flour, cocoa, baking powder, baking soda, and salt
  • Cream the butter with both sugars until fluffy beat in the egg and vanilla, then mix in the dry ingredients and chocolate chips
  • Scoop the dough into balls and place on parchment-lined baking sheets bake at 375°F for 10 to 12 minutes or until they are slightly firm when gently pressed on top
  • Cool on wire racks and finish baking remaining dough

    How To Make Gluten-Free Chocolate Chip Cookies With Almond Flour Matcha
    • You can refrigerate gluten-free cookie dough for up to one week before baking off your cookies.
    • If you are planning on refrigerating the dough and baking the cookies off at a later date, there is no need to freeze them for one hour. Just wrap the bowl of dough tightly in plastic wrap and refrigerate for up to one week. Scoop the cookie dough right before baking or simply portion out as much dough as you would like to enjoy that day.
    • Store baked cookies in an airtight container on the counter for up to three days. Baked gluten-free chocolate chip cookies do not need to be refrigerated.
    • Freeze baked gluten-free chocolate chip cookies in a zippered plastic bag in the freezer for up to one monthdefrost before enjoying.

    Can You Freeze Gluten Free Cookie Dough

    If a cookie recipe calls for chilling the dough before baking, you can freeze the shaped, raw cookie dough. Just place the shaped dough on a lined baking sheet and freeze it until solid.

    Then, pile the frozen balls of cookie dough into a sealed freezer-safe container until youre getting ready to bake. To bake the cookies, allow the dough to come to cool room temperature before baking, or they wont melt in the oven at all.

    For example, I often freeze the shaped dough for our recipe for New York Times-style gluten free chocolate chip cookies. Those cookies are so special, and require special ingredients, so I always make extra to store in the freezer for emergencies.

    Does It Matter What Type Of Chocolate Is Used

    Nope, as long as you use what you like! I’ve tested this recipe dozens of times over the past few months, and have had multiple taste testers and recipe testers! Ultimately when it comes to the chocolate – use what you like! My husband loves these cookies with mini chocolate chips whereas I enjoy them most with either just semi-sweet chocolate chips or a blend of semi-sweet chocolate chips and bittersweet or dark chocolate chunks. I’ve also just chopped a chocolate bar, before, too – chocolate is chocolate, still works great!

    One of my husbands favorite cookies is the Triple Chocolate Peppermint Cookies that I make every year for Christmas. But, since theyre peppermint flavored and sprinkled with bits of candy cane, I only make them in December.

    He misses them every other month of the year and patiently waits for me to make them again.

    So, I decided to turn those beloved cookies into a more evergreen recipe Gluten Free Double Chocolate Chunk Cookies which can and should be enjoyed year-round.

    This recipe yields a thick, medium-large cookie thats about 2 ¾ inches in diameter. Theyre ever so slightly crisp on the edges and soft and dense in the center.

    The center of these cookies shouldnt be gooey unless thats what youre going for and you really under-bake them.

    These are basically bites of chocolate heaven and everything a chocolate lover would want in a cookie. Dare I even say, theyre double chocolate chip cookies Subway would be jealous of.

    S For Making Small Batch Chocolate Chip Cookies

    (The BEST!) Gluten

    Making the dough for small batch gluten free chocolate chip cookies wont require much time but a tiny bit of patience. Make sure to measure your ingredients correctly since just a few extra grams of flour or butter can throw off the entire recipe.

    Step 1: Preheat your oven to 350F and line a baking sheet with parchment paper. Set aside.

    Step 2: Place a whole egg in a small bowl with warm water and allow to sit while the butter browns, cools and you prepare the other ingredients. This will bring the egg to room temperature quickly.

    Step 3: Brown the butter in a heavy-bottom saucepan until the butter starts to smell nutty and turns a medium amber color. Remove it from the stove and transfer it to a small, heat-proof mixing bowl. Make sure to get all the bits on the bottom of the pan. Allow the brown butter to cool for 5-10 minutes.

    Step 4: While the butter is cooling, measure out your dry ingredients and sugar.

    Step 5: Once the butter is cooled, add both sugars and vanilla extract and with a fork or small whisk, whisk to combine. Add the egg yolk and make sure its fully incorporated. The sugar/butter/egg yolk mixture will be lightly pale brown.

    Step 6: Add the dry ingredients and chocolate chips and with a flexible spatula or a spoon, fold everything together. It is possible your dough will look fairly dry and crumbly at this stage. This is when I recommend switching to your hands and just bringing the dough together with your clean hands instead.

    How To Store Homemade Chocolate Chip Cookies

    • To store: Pack your leftovers in a bag or container, and theyll keep for up to one week. You can store them either in the fridge or at room temperature.
    • To freeze: If you want to save a few sneaky pieces more than one week, you can freeze them! Just make sure to place parchment paper in between each cookie and store in a freezer-safe bag or container. They will be good for up to 3 months.
    • To defrost: Just let the cookies come to room temperature before eating.

    Back in 2006 when I found out I have a gluten intolerance, the gluten free world was very limited. We had to go to the expensive health food store to find gluten free products and they were bad. Iâm talking cardboard bread. And gluten free all purpose flour was definitely not a thing then.

    Iâm thankful there have been so many gluten free food developments over the years, but you definitely still need to weed through them and decide whatâs actually good.

    Iâve seen a lot and tried a lot of different kinds of gluten free flours since 2006. The one that I personally like the best based on taste and texture is King Arthurâs Gluten Free All Purpose Flour. I think it mimics the taste and texture of regular flour the best.

    I canât say with 100% certainty that this recipe will work with any gluten free all purpose flour because I exclusively use King Arthurâs, so if you try these cookies with a different brand of gluten free flour, please leave a comment and let me know your experience!
