How To Make Gluten Free Candy Bar Cookies
Does The Type Of Gluten Free Flour Matter
To get the best results, use a good quality all-purpose gluten free flour when making these candy bar cookies. I like to use Bobs Red Mill 1 to 1 which contains xanthan gum. If your gluten free flour doesnt contain xanthan gum, trying adding ½ teaspoon to the recipe.
Xanthan gum works to hold the bread together. The gluten in all-purpose flour acts as the binding agent in traditional baking. Gluten free baking requires a substitute for the binding agent and thats the role of xanthan gum.
Your results may be different depending on the type of gluten free flour you use. I havent tried using coconut flour or almond flour in this cookie recipe.
Remember to use the spoon and level method when measuring your gluten free flour. Simply use a spoon to scoop the flour into the measuring cup and then use the back of a table knife to level off the top. Using the measuring cup to scoop the flour directly from the bag or canister can give you more flour than needed in the recipe.

How To Store Them
I must admit, storing these chocolate treats in the house during a lockdown and managing not to eat them all in one day has proven to be a challenge!
When theyre not in your mouth, these bars need to be chilled because these bars have a soft centre. You can of course keep them in the fridge but I think that they taste best when stored in the freezer, as the inside doesnt freeze but the outer chocolate shell becomes crisp .
My next plan for these vegan mars bars is to remake them with an ice-cream layer in the middle, hello summer. So make sure you stay tuned for that one, which will likely be in the near future cos the suns been out blazing here lately.

Now for the sticky caramel layer, lets backtrack to the two aforementioned ingredients- The sticky sweetener and nut or seed butter of choice. To create the caramel layer, youll need to just combine the two, melt and voila- Instant, healthy caramel.
To take the caramel up a notch, add the optional coconut oil to the mixture. It not only adds a silky and smooth texture, but you wont be able to taste it whatsoever!
