It Was My Dads Birthday Recently And He Loves A Good Cheesecake So I Absolutely Had To Make My Gluten Free Baked New York Cheesecake For Him

Whilst I might make every cheesecake variation under the sun here on the blog, you just cant beat this one. So heres my gluten free baked New York cheesecake recipe!

Now, it can be pretty funny when you have a food blog.

Ill post pictures on my Instagram, like this cheesecake for example, and Ill receive a message from a random family member simply saying can I eat that cheesecake please.

But sadly for them, Im usually posting a photo I took 2 months ago so theyre much too late to the party!

But this time, everyone was coming over to ours for a family BBQ to celebrate my Dads birthday. This time I was going to be well prepared

Despite having tons of veg to prep for the BBQ, as well as meat marinades, potato salads etc. I still managed to make this cheesecake amongst all the chaos.

Hopefully that tells you that its super easy to make because as you know, Im terrible at multi-tasking!

But oh man. It was so worth it! It tasted absolutely out of this world.

Now, you can just enjoy a New York cheesecake totally naked, but I always love to put fresh raspberries in a berry compote on top.

The sharpness matches up so well with the creamy, sweet cheesecake filling and buttery biscuit base.

But if youre really in a hurry, you could easily serve this up with a little cream on the side too, or even just put raspberries on top. Its totally up to you!

I actually cut that big ol slice out of the cheesecake in the pic above just so it looked good in photos.

How To Store And Freeze Cheesecake

Cheesecake should be refrigerated after it’s cooled, chilled, decorated, and served. It can keep in the fridge for 5 days at least.

Cheesecake is also an excellent candidate for the freezer it’s especially helpful to freeze individual slices rather than the whole cake. Wrap each slice in plastic and then transfer to a freezer-safe container. When you’re ready to eat it, thaw in the refrigerator and dig in.

Make The Batter In A Minute

Next up, the cake batter.

Transfer the topping mixture into a small bowl there is no need to wash the food processor bowl as you will be adding more of the same ingredients.

Like the topping, my batter could not be easier.

Coconut flour and chickpea flour are gluten- and grain-free, so there is no need to worry about over-mixing the batter . So you can nix the fussy steps of creaming butter and sugar and slowly adding in sifted flour and liquid.

Instead, place all of the batter ingredients into the food processor and process until smooth. Thats it!

What Makes A New York Style Cheesecake

Are all cheesecakes created equal? You bet they aren’t. Sure, they can all be delicious. Being a New York Style Cheesecakes takes a little more, which I think is pretty in line to being a New Yorker in general.

But the cheesecake…

New York style cheesecake is typically a bit denser, heavier but still creamy. It’s sweet but not without loosing the tang of the cream cheese. The crust is the right amount of crumbly and crunchy with a subtle touch of cinnamon. Creamy, white cheesecake throughout with the perfect ring of browned edges on the top.

If you’re a lover of cheesecake, having a slice of is a bucket list must. This cheesecake recipe right here is my closest at-home copy of Junior’s.

How To Make Gluten

Follow these steps to bake your own crumb cake:

Prepare for baking: Preheat the oven to 325°F. Grease a 9×13-inch baking dish with nonstick spray or line it with parchment paper .

Make the crumb topping: In a mixing bowl, combine the flour, brown sugar, and cinnamon. Pour the melted butter on top and gently combine everything with a fork until you have a crumbly texture.

Make the crumb cake batter: In a mixing bowl, combine the remaining gluten-free flour, white sugar, baking powder, and salt. In a separate bowl, whisk together the egg, milk, oil, and vanilla. Combine the wet and dry ingredients with a rubber spatula until just combined.

Fill the cake pan: Pour the cake batter into the prepared baking dish and spread it into an even layer with a spatula. Sprinkle the crumb topping over the batter.

Bake: Bake the New York crumb cake for 20 to 25 minutes, rotating the pan after 10 minutes. The cake is done when a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it cool in the pan.

Serve: Dust the cooled with powdered sugar just before slicing and serving.

Use A Combination Of Chickpea Flour & Coconut Flour

I used two of my favorite grain-free flours, chickpea flour and coconut flour, in combination with melted coconut oil, cinnamon and a bit of coconut palm sugar .

Unlike traditional crumb coffeecake, where chilled butter needs to be cut into the flour-sugar mixture, my version is a snap: throw all of the topping ingredients into the food processor and pulse for a few seconds until crumbly.
