To Make the Gluten Free Vanilla Cake:

  • Preheat oven: 350°F.
  • Prepare Cake Pans: Grease two 6 round cake pans.*
  • Mix Dry Ingredients: In a large bowl, whisk together flour, oats, baking powder, baking soda, salt and xanthan gum .
  • Add Wet Ingredients: Add the remaining ingredients to the bowl and stir until combined.
  • Bake: Pour batter into two 6 cake pans. Bake for 25-28 minutes or until a toothpick comes out clean.
  • Cool: Allow the cake to cool completely before decorating.
  • Notes:

    • This recipe will make two 6 round cakes or one 9 round cake. If you want to have more layers like the pictures shown, you can double the recipe.

    What does it mean to eat a sugar-free, gluten-free diet? Being sugar free is a relatively new concept, and how the diet works in each persons life is unique.

    There are natural sugars in fruits and vegetables, and our bodies actually need certain sugars to survive. However, eliminating or greatly reducing refined sugars can significantly benefit health and longevity.

    Generally speaking, refined sugar includes processed white sugar made from sugarcane or sugar beets. It also includes brown sugar, which is white sugar coated with molasses. Because refined sugar is highly processed, our bodies absorb and process it almost immediately. When too much sugar is consumed, we experience a sugar high and soon after comes the blood sugar crash.

    Can You Freeze Gluten

    This is a great recipe to keep on hand for quick treats so that means yes! You can freeze gluten-free cookie dough.

    To freeze:Prepare the dough as directed. Make sure you are able to roll your dough between two sheets of parchment paper well.

    Troubleshooting the dough is essential before freezing .

    Make a ball or log with your dough and wrap it in several layers or plastic wrap tightly. Place it in a zip bag and freeze for up to 2 months.

    Can You Freeze The Cakes

    Its really easy to freeze unfrosted cakes. Once your cakes are completely cool, wrap the cakes with plastic wrap , wrap again with aluminum foil, and then place in a plastic freezer bag.

    The cakes can be frozen for up to 3 months. You can defrost the wrapped cake at room temperature for 2-3 hours or overnight in the refrigerator.

    What Makes This Sugar Free Carrot Cake Recipe Healthy

    This dreamy carrot cake has that moist, carroty, nutty flavor we ALL love but it also boasts a ton of healthy ingredients.     How Do You Make Sugar Free Cake From Scratch

    Prepare

    Turn on the oven and allow it to preheat. Line 2 cake pans with parchment paper and set aside.

    Stir

    Place all of the dry ingredients other than the sweetener in a large bowl and stir with a whisk to combine. In a separate bowl, add the eggs, sweetener, greek yogurt and vanilla and stir well. Add the dry mixture to the wet and stir until everything is well incorporated.

    Fold In

    Gently fold in the carrots, nuts and coconut flakes and stir until just combined. Let the batter sit for a little while so that the coconut flour can absorb the moisture.

    Bake

    Divide the batter between the cake pans and bake them until done! Cool completely, then frost the cake!

    Recipe Variations

    Here are a few ways to switch things up with this coconut flour carrot cake to suit your needs and preferences:

    • Dairy Free: Use dairy free cream cheese and dairy free greek yogurt.
    • Paleo: Use plant based yogurt instead of greek yogurt. Also, you may be able to use coconut sugar instead of erythritol but I have not personally tried this.

    Paleo Cookie Dough Bites

    I earned about 4000 cool point from my kids with this recipe.

    Im one of those moms. You know, the ones who dont give their kids processed food at snack time and cringe at the sight of fruit snacks, gogurt, and crackers.

    So, imagine their surprise when I whipped up a batch of these and let them eat their hearts out. Coolest. Mom. Ever.

    The best part?

    Theyre actually very nutritious.

    Remember my little Energy Balls? These are similar only the base is purely blanched almond flour instead of the almond-coconut-oatmeal mix. So theyre gluten , refined sugar, dairy, and egg free. Pretty neat, eh?

    And being the cookie dough fanatic that I am, imagine my surprise that they actually taste like cookie dough. My dreams just came true.

    Seriously.

    Only to be dashed to pieces when I discovered my breastfed baby gets cranky and rashy when I eat a lot of nuts. Im SO glad I bought almond flour in bulk. Thank goodness for our extra freezer.
