Tips For Making Gluten

Quick and easy Chicken gravy ~ Gluten Free

There are a couple of quick tips that YOU MUST READ. They will really help you make the perfect fail-proof gravy.

Start with cold ingredients.

Put all the ingredients in the pot THEN heat. If you don’t your flour will clump. No body likes clumpy gravy.

You can use regular butter, or dairy-free butter.

All broth options work .

If you use turkey drippings, let it come to room temperature first. Also, test to see how strong the flavor is, you might want to add water.

If you don’t have broth or turkey drippings, you can use bullion cubes to make broth.

Again, follow these simple tips and you will have the perfect easy gluten-free gravy.

To Grandmothers House Easy Dairy

This dairy-free gravy mix is a variation of a brown gravy recipe my sister makes with beef bouillonusually to go with venison. I looked at several gravy mix recipes online and adapted it based on those. Its great for weeknights, and if youre travelling somewhere where the gravy being served has dairy, such as a relatives house for Thanksgiving.

My sister likes the gravy thin with just 1 Tablespoon of mix added per cup. I like 2 Tablespoons per cup, which makes a thicker, stronger-flavored gravy. Most of the recipes I researched use 2 Tablespoons per cup.

I often make this as chicken gravy, but it can easily be made vegan with the use of vegan bouillon. I really like Orrington Farms Bouillons. They dont use MSG, are gluten free and they use sea salt. I was noticing on their site that they also offer vegan beef and vegan chicken options . I bet those would be good in this.

You Can Also Pressure Cook The Poultry Parts To Make Bone Broth

You can also pile a bunch of chicken wings, which have tons of collagen and are easy to find and the aromatics and herbs in a pressure cooker with only enough water to cover them.

Its best if the wings or other parts have already been roasted, since that enhances the flavor. Either way, pressure cook the pieces on high for 3 hours, and you will have the best collagen-rich drippings ever.

Remove The Fat From The Turkey Gravy Drippings

Fat is a great vehicle for flavor delivery, but these drippings are best without it. Separating any fat from the drippings is easy.

A fat separator is really just a measuring cup with a spout at the bottom which allows you to pour off the drippings and stop once you get to the fat, which has risen to the top. But you dont need one.

To remove the fat without a fat separator, just pour all the liquid from the pan into a jar or glass. The fat will separate immediately, but you cant remove it yet.

Chill the fat until either the drippings gel from all the collagen they contain, or the fat solidifies. Then pour off or lift off the fat from the top and dispose of it.

    Amish Chicken And Waffles

I had originally made Chicken and Gravy with Mashed Potatoes which is a delicious all in one meal. One of my readers said she loves to put it on top of waffles, which sounded fabulous to me. Mind you, this is a different version from the Fried Chicken and Waffles covered in syrup but just as tasty.

I started looking up this version and found out it has a huge following in the Pennsylvania Dutch Country. Its so popular in certain regions Burger King even made a version of it! The sweetness of the waffle paired with the savory chicken and gravy make a killer combination you will be craving.

This down home version of Chicken and Waffles was actually being served even before the Southern Fried Chicken and Waffles. The Dutch brought the recipe for the waffles over with them and then paired it with the classic chicken and gravy Americans were eating. Generations have been eating this legendary recipe together so you know it must be good.

    Tips For Perfect Gravy

Even though gravy is pretty easy to make, you still might need a few tips to help you along!

    • To avoid lumpy gravy, use room temperature or warmer liquid! Adding cold broth or milk to the warm roux will cause clumping.
    • Whisk in only a splash of broth at a time, making sure it is fully whisked in before adding any more. Continue like this until all of the liquid has been added. This also helps avoid lumps!
    • You can keep the gravy warm on the stove-top. Remember to stir occasionally so it doesn’t burn to the bottom. Give it a whisk before serving and check the thickness. Add a little more liquid if the gravy becomes too thick.
    • If the gravy is too thick, add more stock.
    • If gravy is too thin, continue to simmer, uncovered, until you reach the desired consistency.

Can You Make Gravy Without Flour

Yes! You can make gravy without flour if the pan drippings are super rich, and have enough collagen in them.

If you omit the butter and flour, cooked into a gf flour roux, from this recipe, you can just simmer the drippings with stock and herbs. The gravy wont be as smooth or as thick, though.

If you dont want to use superfine rice flour, you can use sweet white rice flour or our basic xanthan gum-free gluten free flour blend. Dont use cornstarch because sauces thickened with it leak as they cool.

What Makes This Dish A Healthier Option

Traditional chicken and gravy is typically made with gravy packets or jars. If you take a peek at the ingredients, you will find that they arent usually the best. Some of these ingredients include sugar, milk, butter, lots of sodium, and natural flavors. In case you were fooled by the name, there is nothing natural about natural flavors. I often overlooked this but learned that its better to avoid foods with this ingredient if possible.

Gravy packets and jars also tend to contain gluten. The packets are easier to identify the source of gluten as they typically contain flour. However, the jars tend to be a little trickier to determine whether or not its gluten free. Its usually sneakily hidden in other ingredients that dont stand out as gluten. This doesnt mean that all gravy jars and packets contain gluten, it is simply a reminder to be extra careful if you choose to buy them.

So instead of worrying about the ingredients in store bought gravy, this recipe uses a homemade gravy that is made from scratch and simple to make! Its also gluten free, grain free, and dairy free. By using the crockpot for this recipe, it not only allows the chicken to get unbelievably tender but also creates left over juice that is perfect for creating the gravy. Just add some spices and a simple grain free roux and youve got a gravy that will have you ditching the jars in no time!
