Gluten Free Pita Bread
Whoever thought making pita bread could be so simple and quick? This is a great and easy recipe that you can quickly throw together for sandwiches or even better pita chips! You must be careful to spread the batter as evenly as possible as you want it to bake evenly. Give it a shot, its worth the effort. When was the last time you had a pita pocket or falafel?

Gluten Free Pita Bread
- 1 tablespoon oil or melted butter
- 1 tablespoon coconut flour, firmly packed
- 1/4 cup almond flour, firmly packed
- 1/8 teaspoon baking soda
*this recipe yields 2 pitas, which makes 4 pita pockets
*I like to double or even triple the recipe to stock up the freezer!
Let cool, cut in half, then with a small serrated knife, slice carefully down the center, creating the pocket.
For pita chips, cut into wedges and bake at 350 until crispy.

How Yeast Free Rice Flour Pita Bread Is Different From Traditional
Unlike traditional pita bread made with wheat flour and yeast to help it rise, this gluten free pita recipe is made with a rice flour blend, as well as baking powder and soda in lieu of yeast. My personal choice of gluten free flour is Cup4Cup Multipurpose Flour, but Ive also used Bobs Red Mill Gluten Free 1-to-1 Baking Flour in this recipe. In addition, Ive added yogurt to give the dough more stretchiness, and to keep the end result softer and fluffier.
Altogether, this makes for a bread thats like a blend between a pita bread and a naan bread. Soft and bread-y like a pita, but a bit heartier and with no pita pocket, like naan. Pita pocket or not, this gluten free pita bread has a similar flavor and can serve a similar purpose to any classic pitaperfect for dipping and snacking!

Glutenis a stretchy protein found in wheat that adds elasticity to a doughgiving the bread a light, fluffy texture. So, naturally, without glutens magical stretchy properties, many gluten free breads turn out dense, crumbly, or downright cardboard-like.

How To Make This Gluten Free Naan Bread
The simpler-style gluten free yeast bread recipes like this one are still really valuable, even in my house where I have all of the ingredients to make the newer style of gluten free yeast bread. Theres a recipe for gluten free naan using the new ingredients in Bakes Bread, but this recipe makes such soft, delicious naan that I thought it was time to highlight it.
This type of recipe just really calls for dumping all of the dry ingredients in the mixing bowl, and then whisking them. The wet ingredients are next, and then the mixer does all the work.
At first, the dough will really look like fluffy batter, but when you scrape down the mixing bowl with a spatula, it should come away clean. The dough will still be tacky to the touch, but hold together really well when you set it to rise.
Since the dough itself is quite wet, you can use a fair amount of extra flour to shape it, but work with it using a very light touch, so you dont incorporate too much flour. Yeast bread that is too dry simply wont come out fluffy no matter what else you do.
Shape a piece of dough loosely into a round, and then roll it into an elongated oval. While youre shaping the dough, heat a heavy-bottom skillet with a bit of ghee or virgin coconut oil. Place each piece of shaped dough in the hot skillet right away.
To make sure that all the dough comes into contact with the hot skillet, Ill occasionally press down on the dough with my spatula. It should puff right back up.
