The secret to good gluten free baking is all about the ingredients you use. Achieving the right texture and taste with gluten free baking can be tricky. Therefore, Im here to tell you all the secrets you need to achieve the best gluten free English muffins.
Gluten free flour mixture: If you have tried my other recipes, then you know I dont like store-bought mixes because they dont always achieve the correct texture. Therefore, to make these gluten free English muffins, you will need white rice flour, tapioca flour, corn starch, and brown rice flour. When measuring the flour, make sure to use a scale and sifter. This will help in creating a soft and fluffy texture. Meanwhile, to bind all the ingredients, you will also need xanthan gum. Xanthan gum will act similar to gluten and help the ingredients bind together.
Milk & Water: English muffins dough needs to be sticky and well moistened. Therefore, the dough will require a lot of liquid. I came to find that the use of both milk and water achieves the best outcome in terms of texture and flavor. Meanwhile, if you are dairy-free, you can substitute milk with canned coconut milk. Moreover, ensure that the milk and water are at a temperature between 49-55°C .
Instant Active Yeast: I prefer instant active yeast as it works most of the time and does the job instantly.
Salt: To provide the gluten free English muffins with flavor and control the yeast activity.
By Step To The Best Gluten Free English Muffins
Although toast may be the most well known quick breakfast bread for toppings like jelly and butter crispy, toasted gluten free English muffins have to be a close second.
And these English muffins are by far the very best! This recipe makes an amazing gluten free English muffin – so light, so airy and with the perfect texture. And that taste….

Matter of fact, they are heavenly – that’s the only way to describe them!
The tops and bottoms are light, golden brown and get their characteristic crispness from a quick sear in a skillet. And then with a few minutes in the oven… they are ready to eat!
Making Homemade Gluten Free English Muffins
The process of making gluten free English muffins is simple. All you need is a rolling pin, a cookie cutter, a non-stick pan with a lid. Now that the equipment is sorted, lets jump in!
- Activate the Yeast: Whenever you are making bread or anything with yeast, always activate the yeast to ensure it is alive. To start the yeast, add the warm water, warm milk, sugar, and yeast to a bowl and stir the bowl gently. Then cover the bowl and set it aside for 10 minutes. After 10 minutes, you should see bubbles and foam indicating that the yeast is active.
- Prepare the Dry Ingredients: Scale the flours and sift them into a bowl. Then add the xanthan gum and salt. Whisk the ingredients to make sure everything is well combined. Then create a hole in the middle.
- Form the Dough: Add the eggs and yeast mixture to the hole. Using a stand-alone mixer, with the paddle attachment attached or your hand, form the dough. If using a stand-alone mixer, set the speed to medium-high. The dough will be very sticky, and that is okay. Now, slowly add the butter, one tablespoon at a time, into the dough and incorporate it using the stand-alone mixer or your hand.
- First Rise: Transfer the dough to a greased bowl. Cover the bowl with plastic wrap followed by a damp kitchen towel. This will help create a humid, warm environment for the dough to rise. Allow the dough to rise for at least one hour.

My Favorite Tools For Making English Muffins
Neither of these are absolutely necessary in making gluten free English muffins. However, I do feel they make things a lot easier in creating the best muffins possible.
- An electric skillet. Ive used an electric skillet for many years, just like my mom, mainly for braising meats. For the sake of English muffins, it works so well because it almost acts like an oven and skillet all in one. Its absolutely perfect for making English muffins. However, if you dont have an electric skillet, you can always use a skillet that has a tight-fitting lid. I personally like the fact that you can know the exact temperature of what youre cooking with an electric skillet.
- English muffin rings. These rings help make your homemade gluten free English muffins neat and tidy and perfectly round. Of course, it doesnt really matter as long as they taste great. If you want nice and round muffins, Id suggest getting these, though. Theyre cheap, and theyre great for other uses as well, such as perfect pancakes or as an egg mold.

Tools You Need To Make The English Muffins
- Kitchen Aid I use my kitchen aid for this recipe to beat the batter and mix. You can make this recipe without a stand mixer, but I do recommend using a hand mixer or stand mixer.
- English Muffins Rings I got these English muffin rings off Amazon for $13 and they make this recipe so easy to make! The batter for this recipe doesnt hold a shape on its own, so you need some sort of form or mold to keep it in a circle.
- A Griddle You can use a griddle or skillet for this recipe, but using a big griddle allows you to make all 6 English Muffins at one time!
How To Serve These Muffins
I highly recommend spreading some kind of delicious spread on the English muffins, but what you choose to add is up to you and the possibilities are endless! A few ideas:
- Vegan mayo and sandwich toppings like veggies and tempeh bacon

These are delicious! Unlike English Muffins from the freezer case, these muffins are not gummy, heavy or biscuit like. They toast up beautifully and are particularly good with jam or marmalade. They are also substantial enough to make a sandwich with and it doesnt crumble in your hand while trying to eat it.

Great product. These are the best gluten-free English muffins I have found. However, shipping is a problem. My last two orders arrived moldy because the USPS shipment took so long 8 days on one order and 5 days on the other. I wish a more reliable shipping method were available.
Substitution Ideas For This Recipe
Now I know that you might not have all these flours on hand and might be curious about substitutions. If you want to make substations, here’s a list of what I would recommend:
- Sorghum flour: brown rice flour or quinoa flour
- Almond flour: another nut flour or I think you could try oat
- Tapioca starch: arrowroot powder, cornstarch or potato starch all work
- Quinoa flour: oat flour is the best sub!
- Xanthan gum: guar gum or maybe psyllium husks. I wouldn’t leave this out though as your muffins might be kind of crumbly.
- Honey: maple syrup or another sweetener
Unfortunately, I don’t think you’ll be able to substitute the yeast or egg in this recipe.

- To omit the almond flour: Make this coconut flour microwave bread recipe instead. I dont recommend omitting all the almond flour in the English muffins.
