How To Make Gluten Free Dairy Free Apple Crisp

So, lets talk about how this easy dessert goes down:

Mix up the apples. First up, in a large bowl, well toss together some sliced apples, sugar, lemon juice, cornstarch and spices.

Spread in a baking dish. Well transfer the mixture to a baking dish and spread in an even layer.

Prepare the topping. Next, well quickly stir together some oats, oat flour, pecans, sugar, spices and coconut oil, and then sprinkle the mixture over the apple filling.

Bake until golden. Finally, well pop our baking dish in the oven and bake until bubbly, crisp and golden brown.

The hardest part? Letting it cool slightly before serving with a big ol scoop of your favorite vanilla ice cream!

Whip The Eggs To Bring Lift And Structure To The Cake

Youll whip 8 large eggs to double volume, which should take you about 5 minutes of whipping.

What are you looking for?Great question.

The eggs will start getting foamy, then gradually increase in foaminess and volume, while also lightening in color.

As long as the eggs are completely whipped, light yellow in color, and very foamy, youve got what you need to lift this cake.

Youll slowly add about of the egg foam to the melted chocolate, then stir it all together until it becomes mostly homogenous.

Add about half of the remaining egg foam, stir again to combine, then add the last bit of the eggs.

Once all of the eggs are in, you should have a smooth chocolatey batter which will go right into your prepared pan.

Once all of the batter is in, pour hot water into the outer pan, about halfway up the side of the inside pan. This is your water bath, and the steam from the bath will help lift the cake evenly.

Allow the cake to cool completely, then refrigerate until completely chilled.

We have enjoyed this dairy free gluten free cake with many toppings, my favorite of which is ice cream. The texture of the cake is most comparable, in my opinion, to a mix between cheesecake and a brownie.

Its truly the best of both of those dessert worlds.

As mentioned, making custard ice cream has a few more prep steps. Youll need:

  • An ice cream maker of course , and I always store the bowl in the freezer so its ready to go!
  • Egg yolks! Thats what makes this custard ice cream.
  • A large mixing bowl or roast pan for the ice bath.
  • A blender or mason jar to break up the coconut cream so its nice and smooth.
  • A fine-mesh strainer for the eggs.
  • Cacao powder to make it chocolate!
  • A whisk.
  • Any desired mix-ins such as chocolate chips, nuts, or cacao nibs .

Tips For Baking The Best Gluten

  • Line the bottoms of the 9-inch cake pan with parchment paper. Trace the bottoms of the cake pans with a pencil and cut them out with scissors to have them fit perfectly!
  • Use gluten-free cooking spray to grease your cake pans. I like gluten-free coconut oil cooking spray.
  • Make sure to take the time to soften the butter.
  • Allow the cakes to cool in the pans for 15 minutes and then finish cooling on a cooling rack.
  • Allow the cakes to completely cool before your frost them.
