    Now, lets get into how to make pie dough. I use a food processor, as it really creates the most consistent dough.

  • Add the flour and arrowroot powder to a food processor, and pulse the ingredients together.
  • Add in the cubed vegan butter or coconut oil to the food processor, and pulse the ingredients until the mixture resembles a sand texture.
  • Place the lid back onto the food processor, and begin to blend again. Remove the top insert from the lid and carefully pour in the maple syrup and water. Allow the dough to blend until it forms a large dough ball.
  • Stop the food processor and remove the dough. Place the dough onto a piece of plastic wrap and form the dough into a flat disk. Wrap the dough in the plastic wrap and chill in the fridge for 30 minutes.
  • When youre ready to roll out your pie crust, remove it from the fridge and dust a clean surface of parchment paper with flour. Sprinkle on a little extra onto the pie crust to make sure the rolling pin doesnt stick to the dough.

    If your dough is too cold, you need to allow the dough to soften for a few minutes at room temperature.

    Roll your dough out until its circular and about a 1/2 inch wider than the edges of your pie dish.

    Gently flip the dough into the pie dish and press lightly so that the dough is lined up to the edges of the dish.

    How Do You Make A Gluten Free Pie Crust From Scratch

    In a large bowl add the AP Flour, Xanthan Gum, Coconut Oil, and Dairy Free Butter.

    With a pastry cutter, start pressing it into the mixture. Continue to do this for about 1 minute, or until you have lots of little dough balls the size of peas.

    Add the water and continue to press your pastry cutter into the mixture. Once the mixture starts to form into one large ball, scrape all of the dough off the pastry cutter and begin to knead the dough with your hands. If you are not getting a ball and its falling apart when you try to form it, add an additional 1 tsp. of water and knead the dough.

    Knead the dough until it is smooth and all formed into a nice round disc.

    Wrap it in plastic wrap and refrigerate for 1 hour.

    Place plastic wrap on the surface you will be using to roll it out. I used two large sheets of plastic wrap.Take the pie dough out of the fridge and place on top of the plastic wrap. Put two sheets of plastic wrap over the top, overlapping just in the middle. You want enough plastic wrap to be able to roll it out without the dough pushing out of the edges .

    Once your egg free pie dough is rolled out remove the top layer of plastic wrap. Take your hand and gently shimmy it under the plastic wrap that is under your dough. Just gently lifting it from the counter top to make your transfer successful.

    Using A Pastry Cutter Or Large Fork

  • Add the flour, sweetener, and salt to a large bowl and whisk together.
  • Add the cubed butter to the flour and blend it in using your pastry cutter or the prongs of a large fork until the butter is tiny and pea-sized.
  • Slowly, tablespoon by tablespoon, add ice water to the dough until it begins to stick together and holds its shape when you press it between two fingers.
  • Now wrap the dough in plastic wrap and chill in the fridge for at least 1 hour.
  • Pro Tip: It’s better to add less liquid to start. You can always drizzle a bit more water on to the dough when you go to roll it out!

    Ive been working on a fabulous gift idea for you. See, I come from a family lineage that takes its pie crust very seriously. After two or three years of tweaks and trials, this gluten-free and vegan version has recently earned the approval of the current pie-crust matriarch. An impressive feat, if I do blog so myself.

    Packaging up the dry ingredients with a sweet label makes an awesome gift too! I suspect anyone who likes to make pie would be down for a delicious pie crust mix, and I bet people who like to eat gluten free or anyone who enjoys hosting people for dinners and parties would especially appreciate this baking mix.

    • 1 cup white rice flour
    • 1 cup tapioca flour
    • ½ cup garbanzo bean flour
    • 1 teaspoon salt
    • 1 window small tin-tie bag in kraft or other container larger than 1.5 cups
    • 1 small, sealable plastic bag with over 2 tablespoons capacity
    • 2 tablespoons ground flax seed
  • Combine the first four ingredients in a quart jar. Cap the jar and shake until the ingredients are combined thoroughly.
  • Open the jar, place the kraft bag over the top of the jar and overturn the two containers so that the flour mixture falls into the bag. This will help keep the air a little clearer of flour.
  • Place the ground flax seed in the pill bag, seal it and place it neatly into the kraft bag. Close the craft bag and label the front sweetly.

    How To Make Gluten

    Combine flour, sugar, and salt in a large bowl. Add non-dairy butter and cut vegan butter into flour until the mixture looks like breadcrumbs. Add water and knead into a dough ball.

    Spray a 9-inch pie plate with oil, roll out dough in between two parchment paper. Remove the top layer of parchment paper. Invert your pie pan, over the exposed dough. Carefully flip the pie pan with the dough on top.

    Carefully press dough into the bottom and sides of the pie plate. Crimp edges and prick the bottom of the crust with a fork and place in refrigerator until ready or you can pre-bake pie in a preheated oven. 350 degrees for 10 minutes.

    Your crust is ready to be filled.

    Can I Use Shortening Instead Of Butter In Pie Crust

    Yes. I use palm shortening to keep my gluten-free pie crusts dairy-free and vegan. You can use butter or regular shortening in this gluten-free pie crust recipe. I haven’t personally tried dairy-free butter in this recipe.

    This gluten-free pie crust recipe is the go-to recipe for all things pie in our house. I like to use Bob’s Red Mill 1-to-1 gluten-free flour blend when making pies, but you can also use a similar blend, or my gluten-free flour blend.

    Blind Baking The Pie Crust

    If you plan on using the crust for a pumpkin pie or hut custard pie, you’ll need to par-bake the crust. If you are using the crust for a “no-bake” pie where the filling is not baked, you’ll need to bake the crust to completion.

  • With your chilled and shaped pie crust, use a fork to poke a few holes in the bottom of the crust.
  • Cut a large piece of parchment paper, large enough that it covers the pie crust, and place that over the crust before adding dried beans or pie weights to the center in a single layer.
  • Bake the crust at 425°F for 10 minutes. Remove the crust from the oven, remove the parchment and weights, before adding the pie filling and processing with your pie recipe.
  • If you are baking the crust to completion, bake the crust with the weights at 425°F for 15 to 20 minutes, before removing the parchment and weights and continuing to bake the crust uncovered for about another 5-10 minutes, until the crust is golden brown.
  • Its Okay To Make Repairs

    Once in a while, tears in the gluten-free pastry dough will happen. Its just a fact of pie making. If its a small tear or just a piece that stuck to your rolling pin, go ahead and patch it up. But if its a large tear or a complete demolition, dont be afraid to re-roll the dough. One or two re-rolls shouldnt affect the flakiness too much. If youre concerned, you can refrigerate the dough for 15 minutes to keep the fat in the dough cool before re-rolling.

    How To Make Vegan Almond Flour Pie Crust:

    This almond flour pie crust recipe is adapted from Helyns 2 Ingredient crust.

    1.In a small bowl, combine flax meal, water, maple, and oil. Let it sit for 2 minutes. Mix in the vinegar, and spices, if using.

    2. In a large bowl mix almond flour and salt. Add flax mixture.

    3. Mix well to make a smooth dough. You will have to press and drag so the flax mixture gets incorporated. Mix the dough for about 1 to 2 minutes. Add a tsp or more water if needed.

    4. Pat the pie dough down into a flat round disc on a sheet of parchment paper. Place another sheet of parchment paper on top of your pie dough disc and roll the dough out. As you do so, slightly move the rolling pin from one end to the other. The dough will crack at the edges, which is fine.

    5. Place the pie or tart dish on the rolled out dough. Carefully flip it over, then press down on the parchment to transfer the dough to the dish, then remove the upper sheet of parchment paper.

    Alternatively, You can also directly pay the dough down on a lightly greased pie or tart pan. Shape the edges and bake.

    6. Shape the edges to your liking and bake the almond flour pie crust until golden, 14- 22 minutes. 14 minutes if you are planning to bake the crust again with filling. Bake 20-22 minutes or until the edges are lightly golden. Cool and use.. Easy peasy.
