Best Budget: Mason Dixon Bakery And Bistro

Mason Dixon Bakery and Bistro

Mason Dixon offers a solid selection of gluten-free cakes that can be shipped nationwide at an affordable price.

  • Vegan, soy-free, and egg-free options available

  • Not organic

Dr. Ashley Ramirez was diagnosed with Celiac disease in college, so she had to begin learning to prepare gluten-free meals for herself on a student’s limited budget. Luckily, her Ph.D.-level chemistry program proved helpful, and soon her recipes were fooling even ardent wheat-lovers. When a job-related delay left her in limbo in Huntsville, Alabama, Dr. Ramirez used her skills to open Mason Dixon, Alabama’s very first gluten-free bakery.

Mason Dixon Bakery offers a selection of 8-inch layer cakes available to ship. Most cakes are actually full-sized versions of Mason Dixon’s cupcakes, so see the cupcake menu for the most detailed flavor descriptions. Our favorites include the Cookie Monster, the Stacy, and the Fat Elvis. We hope that someday Mason Dixon makes full-sized versions of the Alabama Mud and the Trash Panda, but for now, you’ll have to order those in cupcake form. In addition to being gluten-free, some cakes are also dairy-free, soy-free, paleo, and/or vegan. Mason Dixon ships custom cakes as well.

Most of Mason Dixon’s 8-inch cakes cost between $35 and $45, plus a flat shipping rate of about $30. That makes Mason Dixon the most budget-friendly option on this list.

Say Hello To My Gluten Free White Chocolate And Raspberry Cheesecake Recipe So Many Of You Have Asked Me For More No

Gluten Free Cheesecake Bars Recipes

My gluten free white chocolate and raspberry cheesecake recipe is pretty much the dessert of my dreams and its 100% no bake. Lets get started

First of all yes, I have done something I dont often do too much Ive made a recipe using dairy products!

My blog started out posting the recipes that I basically used to make for Mark and myself meaning that they were mostly gluten free and dairy free for Mark.

But as my blog has grown, my Instagram DMs are rammed with requests for different bakes and desserts. So these days, Im more than happy to say thanks for putting up with me by creating a few recipes for you lot!

And one of the requests I just kept getting was for a gluten free white chocolate and raspberry cheesecake recipe. What great taste you guys have!

But one thing Ive always noticed online is the massive divide between the people who want purely gluten free products/recipes and the people who want gluten free and are also free from something else like dairy for example.

So the people who want purely gluten free products are pretty miffed about always having to buy gf and df products just because its convenient for brands to lump the two together.

But then, some people want products to be free from multiple things because, well they need to be free from multiple things! So in a way, you kinda feel like you cant win.

But as they always say you cant please everybody!

and here it is!

Notes On Ingredients For This Gluten

  • Cornstarch helps prevent the eggs from over-coagulating and is a great addition for cheesecakes made without a water bath. Theres only one tablespoon of cornstarch in this recipe but it really does make a big difference and helps prevent cracking. Dont skip this!
  • Cream Cheese: Its best to use softened cream cheese. Use the full-fat kind too!
  • Eggs: Use room temperature eggs. I do not recommend using an egg substitutes.
  • Graham crackers: You can use any brand of gluten-free graham crackers that you would like that you can find easily near you or order online.

Kinnikinnick Smoreables Graham style gluten-free crackers were used in this recipe. You can also make homemade gluten-free graham crackers using this gfJules graham cracker mix.

While making cheesecake takes some time, at least there arent a bunch of complicated ingredients to fuss with!

You may notice that we didnt use a water bath for this cheesecake. If youre wondering what a water bath is and does for a cheesecake, it is essentially a pan filled with water with the springform pan in the center. It helps keep the cheesecake moist and prevents cracking. I tend to not use a water bath when I bake my gluten-free cheesecakes and instead use a few other precautions to bake a perfectly smooth cheesecake.

How To Make Vegan Oreo Cheesecakes

Oreos, even the gluten free ones, aren’t certified as vegan. I know vegans who do eat them and others who don’t because of cross-contamination issues.

If you’re OK with Oreos, you can make this a vegan recipe with a few substitutions for a handful of ingredients:

For the unsalted butter, use a vegan buttery spread or coconut oil that’s solid at room temperature

For the cream cheese, use a vegan cream cheese like Tofutti or Trader Joe’s brand non-dairy cream cheese.

Check out The 14 Best Substitutes for Cream Cheese for more vegan and non-dairy cream cheese substitute ideas.

Instead of heavy whipping cream , use full-fat unsweetened coconut cream . For the best results, shake the can, then refrigerate the coconut cream overnight.

For the whipped topping, try a vegan whipped topping like So Delicious Dairy Free CocoWhip Coconut Whipped Topping. I’ve used it in recipes like Weight Watchers Pumpkin Mousse and it’s delicious.

More Tips For Making Oreos Cheesecakes

Best Gluten Free Cheesecake Recipe

Whipped topping: Use a topping like Cool Whip since it saves you time. I like using it since whipped topping doesn’t lose its fluffiness in an hour or two, unlike homemade whipped cream.

But if you have leftover heavy cream you don’t want to waste, then whip it up with some granulated sugar.

Optional toppings: Drizzle some chocolate syrup, caramel sauce, or strawberry sauce on your Oreo cheesecake. This is the perfect cheesecake recipe to have fun with!

The Best Vegan New York Cheesecake

Before going vegan, the only cheesecake I actually enjoyed was a New York style cheesecake. Its so much creamier than regular cheesecake, and has the most irresistible crust.

I wanted to finally create a vegan baked cheesecake that tasted nearly identical to the classic New York cheesecake while being entirely dairy free, egg free, refined sugar free, lower in sugar, and gluten free.

Well, we have it, folks.

This is my all time favorite baked vegan New York style cheesecake thats ultra creamy and decadent yet doesnt weigh you down. Its slightly tangy with notes of vanilla, and is undetectably gluten free with the sweet oat crust.

This cheesecake is baked to perfection, with that classic fluffy and soft texture, just perfect when topped with some amareno cherries and fresh coconut whipped cream!

Can You Freeze Mini Cheesecakes

Yes, you can! You can freeze them either left wrapped in the cupcake liners or unwrapped placed in a freezer safe container. Make sure you freeze them plain without adding any topping. They can be frozen for up to 1 month. Simple defrost overnight in the refrigerator or on the counter at room temperature for 5-10 minutes.

Do I Really Need A Water Bath For My Cheesecake

Coffee Cream Cheesecake (Gluten-Free!) | Thrive Market

The answer is yes, you do need to use a water bath for a baked vegan cheesecake, especially if you want the texture of a classic cheesecake. The reason being is that cheesecakes love moisture, and a water bath helps to create a really moist environment in the oven, which typically runs dry.

If you were to not use a water bath, your cheesecake would come out super dry, like a block of cheese. Not fun, nor pleasant to eat. Trust me, making a water bath for the cheesecake is not as difficult as it seems! The only part you need to really make sure you do right is wrapping the bottom of the cheesecake and the walls in tin foil. This will prevent any water from leaking into your cheesecake.
