1. Place contents of a package of Oreos in a food processor. Process until there are just fine crumbs.
2. Pour the cookie crumbs into a large bowl.
3. Pour the melted butter into the crumb mixture. Mix until well combined.

My gluten free white chocolate and raspberry cheesecake recipe is pretty much the dessert of my dreams and its 100% no bake. Lets get started
First of all yes, I have done something I dont often do too much Ive made a recipe using dairy products!
My blog started out posting the recipes that I basically used to make for Mark and myself meaning that they were mostly gluten free and dairy free for Mark.
But as my blog has grown, my Instagram DMs are rammed with requests for different bakes and desserts. So these days, Im more than happy to say thanks for putting up with me by creating a few recipes for you lot!
And one of the requests I just kept getting was for a gluten free white chocolate and raspberry cheesecake recipe. What great taste you guys have!
But one thing Ive always noticed online is the massive divide between the people who want purely gluten free products/recipes and the people who want gluten free and are also free from something else like dairy for example.
So the people who want purely gluten free products are pretty miffed about always having to buy gf and df products just because its convenient for brands to lump the two together.
But then, some people want products to be free from multiple things because, well they need to be free from multiple things! So in a way, you kinda feel like you cant win.
But as they always say you cant please everybody!

Notes On Ingredients For This Gluten
- Cornstarch helps prevent the eggs from over-coagulating and is a great addition for cheesecakes made without a water bath. Theres only one tablespoon of cornstarch in this recipe but it really does make a big difference and helps prevent cracking. Dont skip this!
- Cream Cheese: Its best to use softened cream cheese. Use the full-fat kind too!
- Eggs: Use room temperature eggs. I do not recommend using an egg substitutes.
- Graham crackers: You can use any brand of gluten-free graham crackers that you would like that you can find easily near you or order online.
Kinnikinnick Smoreables Graham style gluten-free crackers were used in this recipe. You can also make homemade gluten-free graham crackers using this gfJules graham cracker mix.
While making cheesecake takes some time, at least there arent a bunch of complicated ingredients to fuss with!
You may notice that we didnt use a water bath for this cheesecake. If youre wondering what a water bath is and does for a cheesecake, it is essentially a pan filled with water with the springform pan in the center. It helps keep the cheesecake moist and prevents cracking. I tend to not use a water bath when I bake my gluten-free cheesecakes and instead use a few other precautions to bake a perfectly smooth cheesecake.

1. Remove the mixing bowl and beaters from the freezer.
2. Pour the heavy cream into the bowl. Beat on low speed for 1-2 minutes, then increase the speed to medium-high and beat until stiff peaks form.
3. In another large mixing bowl, beat the cream cheese until smooth.
4. Add powdered sugar and vanilla extract. Mix the cream cheese filling mixture until well combined.

1. Remove the springform pan from the refrigerator.
2. Add cream cheese filling on top of the crust layer, spreading it evenly.
3. Cover the pan tightly with plastic wrap. Chill in the refrigerator for at least 4-5 hours. Overnight is even better.

Oreos, even the gluten free ones, aren’t certified as vegan. I know vegans who do eat them and others who don’t because of cross-contamination issues.
If you’re OK with Oreos, you can make this a vegan recipe with a few substitutions for a handful of ingredients:
For the unsalted butter, use a vegan buttery spread or coconut oil that’s solid at room temperature
For the cream cheese, use a vegan cream cheese like Tofutti or Trader Joe’s brand non-dairy cream cheese.

The answer is yes, you do need to use a water bath for a baked vegan cheesecake, especially if you want the texture of a classic cheesecake. The reason being is that cheesecakes love moisture, and a water bath helps to create a really moist environment in the oven, which typically runs dry.
If you were to not use a water bath, your cheesecake would come out super dry, like a block of cheese. Not fun, nor pleasant to eat. Trust me, making a water bath for the cheesecake is not as difficult as it seems! The only part you need to really make sure you do right is wrapping the bottom of the cheesecake and the walls in tin foil. This will prevent any water from leaking into your cheesecake.
