Tips For Making Gluten Free Sugar Cookies

  • Best flours to use: Youll need a measure for measure, 1 to 1, or recipe ready gluten free flour blend for these Christmas cookies. I prefer King Arthur Flour GF Measure for Measure Flour or Bobs Red Mill Gluten Free 1-to-1 Baking Flour. Both blends already include xanthan gum as a binder.
  • What flours to NOT use: You cannot swap the gluten free flour blends for single gluten free flours like coconut flour or almond flour, for example. These flours do not contain binders and can be more or less thirsty than the blends. For example, coconut flour requires a ton of liquid/moisture when added to gluten free baking recipes.
  • Leave time to chill: If youd like to roll the dough to cut with cookie cutters, plan on leaving enough time to chill the dough for several hours, or up to overnight.

    Pro Tip For Measuring Gluten

    I have found the best way to measure gluten-free flour is the spoon & level method. I use a spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.

    Please do not scoop the flour out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe because the flour often gets compacted in the bags.

    You know how cookie cakes are a thing, right? Well, have you ever tried a cake-y cookie? As in, a cookie made from cake mix? I used to make these types of cookies ALL the time in college. Im pretty sure I won over my now husband with cake mix cookies. Once I started eating a gluten-free diet, cake mix cookies became a thing of the past. That is, until I saw gluten-free cake mix during a recent trip to ALDI. These are just as great as I remember!

    The best thing about them is how easy they are to make. My son is a very mobile 9-month-old, which leaves me little time to do much else. We entertain a lot and having a box of this cookie mix makes dessert a no-brainer. You only need three things to make these cookies: cake mix, eggs and oil .

    I was about to tell you that gluten-free shortbread are my favorite cookies. And then I thought of chocolate chip cookies. And sugar cookies. And lemon wafers. And then I realized that cookiesare my favorite cookies.

    Funny how that works!

    Shortbread cookies, I must say, are right up there. Before going gluten-free, Id often pick up a box of Walkers shortbread. They now make a gluten-free version. They are good! But they are pricey. So I still prefer making my own. I freeze the extras and then whenever I want a shortbread cookie, I head to the freezer.

    Shortbread cookies are an old cookie. How old? Historians date shortbread to the medieval times. The first printed version appeared in 1736!

    Made with flour and butter, two expensive ingredients, shortbread was often reserved for Yuletide baking. And to this day, Walkers sells more shortbread during the holiday season than any other time of year.

    Im guessingand go with me herethat in 1736 people didnt pull out their KitchenAid mixer to whip up a batch of shortbread. But Im no historian. So what do I know?

    What is the best gluten free flour for baking cookies?

    There isn’t one gluten free flour that is better than all the others for making cookies, however you will need to adjust your recipe depending on what gluten free flour you are using.

    Not all gluten free flours work exactly the same, and some absorb more moisture than others.

    With both Bob’s Red Mill’s 1 to 1 gluten free flour and Ryze’s blue bag, you’ll need to use a total of 1 cup to 1 ¼ cups of gluten free flour instead of the 1 ½ cups in the recipe.

    With both blends, I used less than 1 ¼ cups of gluten free flour in this recipe.

    If you are using any gluten free flour blend other than my gluten free flour, I recommend adding 1 cup of gluten free flour to start.

    Check to see how the consistency of your dough matches the gluten free cookie dough in my tutorial video. If it is too soft, add more gluten free flour about 2 tablespoons at a time.

    The best way to check to see if you need more flour, it to bake a single test cookie using 1 ½ tablespoons of dough.

    Bake it at 350°f for 8-10 minutes and watch how it spreads. If it spreads too thin or crispy, add more flour.

    You can always add more flour, but if you add too much you have to start over!
