Gluten Free Crescent Rolls

| Posted In:Breads

These soft, intensely buttery gluten free crescent rolls are just as flaky and soft as the ready-made kind from the grocery store. And the dough is just as useful!

I assume you already know about the crescent rolls in the refrigerated section of nearly every grocery store in nearly every town in America. And if you havent been gluten free your whole life, youve probably already bought that dough and used it in a bunch of interesting and fun ways.

Well, with this gluten free crescent roll dough, you can have all of those recipes back. And, of course, you can have back the classic basket of buttery rolls that makes any dinner instantly better.

The dough will keep in the refrigerator, as long as its in a tightly sealed container, for a few days. Bake off the rolls on the same day you plan to serve them, preferably warm, though. Bread is always best the same day its baked.

How To Make Gluten

First, start by making sure to freeze or refrigerate 1 lb of butter that can be grated at least 6 hours before preparing these crescent rolls. If you are here and dont have 6 hours, you can still grate it cold at a refrigerated temperature.

Place 2 T milled chia and 1/2 C warm water in a cup, let soak 2 minutes . Meanwhile, dissolve yeast and 1 T sugar in warm milk, let sit to proof .

Using a stand mixer with the paddle attachment, combine all flours, starches, xanthan gum, baking powder, salt, sugar and gelatin .

In another bowl, mix the soaked milled chia and yeast mixture together with eggs, coconut oil, 1/ C melted butter and apple cider vinegar .

Slowly add that mixture to the flour mixture in stand and combine until well blended .

Roll the dough out into a big circle disc shape or divide it in half and roll into two discs on saran wrap heavily sprinkled with white rice flour .

Using a pizza wheel, cut into triangle shaped pieces like you would pizza .

Grate the frozen butter on to the disc before rolling it up . So if you have two discs youll do half the butter on each.

Pro Tip: Its important that its grated on after the discs are cut or the pizza wheel will pick up pieces of the butter and make a mess

Rollup each piece into the crescent shape, rolling from large end to small end .

Pro Tip: Tuck the grated butter in as you roll the crescents up

Bake for approximately 18 minutes at 350 degrees, depending on how dark you like them.

Are Crescent Rolls The Same As Croissants

Pillsbury Big & Buttery Crescent Dinner Rolls

In a word, no, crescent rolls are not the same as croissants. They are similar in shape to one another, but a crescent rolls is bread a croissant is pastry.

You can, indeed, make gluten free croissants . But youll need to work with the dough as if it were pastry, using cold ingredients and rolling and folding the dough so that it creates light, flaky layers. Croissants are like a cross between crescent rolls and flaky layered biscuits.

Ham And Cheese Sandwiches

Try making larger triangles by slicing each round into 6 or 8 pieces rather than 12. Then add a slice of ham and a slice of cheese to the top of the triangle before rolling it from base to tip.

Space the triangles farther apart from one another on the baking sheet. The cheese will melt onto the baking tray a bit. Just let it set a few moments after baking and before serving.

Gluten Free Vegan Garlic Crescent Rolls

Although this time of year is fun to see family and friends, it can also be extra stressful for those managing food allergies. Each year has been a bit tricky for us and Ive had to change our menu drastically. We even bring our own food when visiting our friends. It can be hard seeing all the regular non-allergy food that looks and smell so good. The first thing usually served is fresh warm rolls, straight from the oven. And Im not going to lie, this is the thing I miss the most.

This year, I really wanted to make something everyone could enjoy, food allergies or not.

I am going to say this loud and clear with stars around it. Not to seem abrasive, just so there is no misunderstanding

**If you want this true crescent roll result, stick to the individual flours and ingredients in this recipe, rather than using a gluten-free flour blend. These measurements have been tested over and over to get the crescent rolls just perfect.**

With that being said, I have made them with high quality GF flour like Cup4Cup or King Arthur gluten-free flour and both have turned out great. They just arent quite as amazing as when you blend your own flours.

Can You Make These Dairy

Almond Crescent Cookies ~ gluten-free ~

Yes, you definitely can make them dairy free! Just be sure to use full-fat canned coconut milk in place of the regular milk. The high fat content in it makes them turn out great.

Also, you will need to use dairy-free butter sticks that have been frozen when grating onto the dough. Earth Balance has some that Ive heard work very well.
