Who knew that a simple mix of rice flour and seasoning can make a delicious, crunchy gluten-free breading for chicken nuggets? I was mind-blown to find that out! And of course, as usual, I had to make this as easy as possible, so I set out to see if I can make the rice flour myself, without buying it. Indeed I can!! All I needed was my blender.

These Gluten-Free Chicken Nuggets are so easy to make and an absolute hit with my whole family! Just look at that coating. Crispy, golden and delicious!

Weaver Chicken Breast Nuggets

Weaver Chicken Breast Nuggets are also fully cooked and ready to eat chicken nuggets. They offer 190 calories per serving and are breaded in vegetable oil. However, the sodium level in these chicken nuggets is what caught our attention. They have 21% sodium and 10% fats, which is just a little too much for chicken nuggets. They also have 10 grams of protein but the high level of sodium in these nuggets brought them down in our list.

How To Make Air Fryer Chicken Nuggets

Start with a pound of chicken breast and cut into long strips around an inch wide.

Then cut each strip into 1-inch pieces.

Mix together gluten-free flour, nutritional yeast, paprika, onion powder, and garlic powder.

My favorite gluten-free and dairy-free flour mixes are Better Batter gluten-free flour and Pamelas Artisan Blend but you can use your preferred brand. You may be able to find nutritional yeast in the bakery aisle at your local grocery store as its becoming more commonly used. If not you can buy it online at Amazon.

Set up a little assembly line to dip your chicken pieces in. Spritz the basket of the air fryer with avocado or olive oil using an oil sprayer. Begin by dipping each piece of chicken into a bowl of almond milk and then into the gluten-free flour mixture. Make sure to completely coat the chicken in the flour mixture.

Then place in the air fryer in a single layer with some space between each piece so that the air will flow easily around them.

Use an oil sprayer to spritz as much of the top of the chicken with the oil as you can. You dont want a heavy coating but enough to wet the flour mixture. Sprinkle with salt and pepper. Then bake at 400° for 4 minutes. Pull out the air fryer basket and turn each piece of chicken over and spritz with oil again. Sprinkle with salt and pepper. Bake for 4 more minutes at 400°.

Your chicken is done! Just like that.

You can serve your chicken nuggets with your favorite dipping sauce.

To start with, here is where this Gluten-Free Chicken Nuggets Recipe came from ……I found the inspiration for this recipe in Simple Choices for Healthier Eating, a cookbook that was recommended to my by Linda, the owner of Whole Approach.

Whole Approach focuses on providing products and resources for those suffering from systemic candida. Unfortunately ), I became acquainted with Whole Approach about 3 years ago when it became quite clear that candida had a pretty bad hold on me.

I had to move on from Whole Approach when it was obvious that I had more going on than candida, but I have stayed pretty close to some form of the candida diet since then, and one of my boys has as well. Most likely another will be joining us soon as we have seen the effects of too many carbs on him.

In any case, Linda told me what a great book this is — filled with simple, tasty, and pleasing dishes. I couldn’t agree more.

Even though there’s a lot to admire here on the ingredient list, this pick isn’t one of our best chicken nuggets because of the high sodium content and MSG, which is a chemo-inducer of obesity, type-2 diabetes, and metabolic syndrome. But there are fewer calories and higher protein in a serving of these nuggets than many other brands, keeping them in the top half of the ranking.

Don’t be stuck with those expensive store-bought nuggets! Save money and your taste buds with The Best Gluten Free Chicken Nuggets Recipe. Make them ahead and freeze for quick dinners.

My kids are typical kids and they love chicken nuggets. The only problem is we need them gluten free and the store bought nuggets aren’t affordable. We have tried many brands and even splurged on the frozen ones from time to time, but we always come back to THE BEST Gluten Free Chicken Nuggets.

Let’s Make Some Nuggets

Step one: Preheat oven. Assemble your cooling rack on top of the cookie sheet. Set aside.

Step two: Prep the chicken. Pound your chicken using a meat pounder so that it has an overall even thickness. Avoid pounding too thin, as we want the nuggets to have some thickness to them. Cut chicken into about 1 inch cubes.

Step 3: Prep the dipping stations. Combine the gluten free bread crumbs, Parmesan cheese and all spices in a bowl. Mix well. Combine the butter and skim milk in a second bowl. Mix.

Next, get ready to bread!

OPTION 1: Set up your bowls very close to each other. Sometimes it helps to place a piece of waxed paper underneath for easier clean up. Dip the chicken cube first in the butter mixture, and then in the breadcrumb mixture. Tap off extra bread crumbs and place on the prepared cooling rack.

Option 2: This is the super secret hack to make dipping easy:

Place your chicken cubes in a medium bowl. Pour the butter mixture over the chicken and mix well using a spoon. Next place the bread crumb mixture into a large gallon zip-lock bag.

Using tongs, remove about half of the nuggets coated in butter, place in the zip-lock bag, seal and shake until evenly coated! Remove the chicken from the bag piece by piece, and place on the cooling rack. Repeat the process with your second half of the chicken.

I used the zip-lock bag method and it took 10 minutes. SO easy and very little mess!

Bake, dip in your favorite sauce & enjoy!!
