I have found that the best way to measure gluten-free flour is to use the spoon & level method. It is always best to use a dry measuring cup to measure flour, not glass measuring cups used for liquid.
Use a spoon to scoop the flour out of the bag into a measuring cup. After spooning the flour into a measuring cup, use the back of a knife to level the flour off of the measuring cup. I do this over a bowl to catch the flour.
Please do not use a measuring cup to scoop the flour directly out of the bag or you could get more flour than the recipe calls for.

Cornstarch works remarkably well as a thickener in sauces, gravy, and pie fillings, and some prefer it to flour. You won’t be able to taste the cornstarch the way you sometimes can taste the flour. However, instead of deep frying, you can shallow fry your coated chicken in a large, oven-proof frying pan with a 1/2cm layer of oil in it. Then, once the coating is looking ever so slightly golden, pop it in the oven at 200C to finish for around 20-25 minutes.

How To Make Gluten Free Donuts
First you need to activate the yeast by adding the sugar and yeast to the warm water. Its ready when it doubles in size. Heat the milk to be warm. Add the coconut oil and vegan butter to the milk and stir to melt.
Beat the eggs on medium speed for 4 minutes and turn off the mixer.
With the mixer on low add the yeast mixture to the eggs and then the milk mixture. Mix for 2 minutes.
Add the salt, sugar, xanthan gum, and gluten free flour. Mix for 2 more minutes.
Lay a sheet of plastic wrap on the kitchen counter. Put 1/2 cup of the dough on top of the plastic wrap. Put another piece of plastic wrap on top and gently push down to flatten the dough slightly. Cut your donut with a Doughnut Cutter, remove the plastic wrap, and place the donut on a baking sheet lined with parchment paper. You will have donut holes too. Repeat this cutting method until the dough is gone. This recipe makes about 10 donuts.
Cover them and let them rise for 20 minutes.
