Ginger cookies are a holiday staple, and these delicious treats strike perfect balance of spice and sweet. These can easily be made grain-free with a gluten-free flour and are the perfect gift for a neighbor or loved one celebrating from afar.
Naturally-sweetened and downright delicious, this might be one of the healthiest holiday desserts around.
Layers In Sex In A Pan Dessert
Traditionally, sex in a pan dessert contains six layers. These include:
- Pecan shortbread crust
- Whipped cream
- Shaved chocolate
All the versions that I know of are made with sugar and wheat flour. In fact, a couple of the layers usually include instant pudding. For me, these would be no, no, and definitely not.
I knew there was a way to make it better and low carb without sacrificing the sinfully delicious taste and texture.
My take on chocolate layer dessert isnt exactly healthy, but at least it is gluten-free, sugar-free, and made without questionable ingredients.
It does include similar basic layers:
- Pecan shortbread crust
- Whipped cream
- Shaved chocolate
Okay, its not quite identical. But, its close enough that Im still declaring it sex in a pan.
Best of all, none of my extended family could tell the difference when I served it. Yay!

There are a myriad of other health problems that are linked to excess sugar in the diet, including obesity, metabolic syndrome, insulin resistance and hypoglycemia. More recently, studies have been published suggesting that cancer, hypertension and heart disease are linked to excess sugar.
Candida, a yeast overgrowth, is another condition that requires avoiding refined sugar. Hashimotos Disease and Lyme Disease are often improved with a dietary decrease in sugar intake. Inflammation in the body can be caused by sugars high glycemic index, a system representing how quickly and how high a food can increase blood sugar levels, and the resulting insulin response. The higher the number is on the glycemic index, the more severely blood sugar rises.

This is an easy dessert recipe that works for vegan folks, keto followers, and anyone who is watching their sugar intake.

I should also mention that this is a three part recipe.

How Do You Make Sugar Free Cake From Scratch
Turn on the oven and allow it to preheat. Line 2 cake pans with parchment paper and set aside.
Place all of the dry ingredients other than the sweetener in a large bowl and stir with a whisk to combine. In a separate bowl, add the eggs, sweetener, greek yogurt and vanilla and stir well. Add the dry mixture to the wet and stir until everything is well incorporated.
Gently fold in the carrots, nuts and coconut flakes and stir until just combined. Let the batter sit for a little while so that the coconut flour can absorb the moisture.
Divide the batter between the cake pans and bake them until done! Cool completely, then frost the cake!
Here are a few ways to switch things up with this coconut flour carrot cake to suit your needs and preferences:
- Dairy Free: Use dairy free cream cheese and dairy free greek yogurt.
- Paleo: Use plant based yogurt instead of greek yogurt. Also, you may be able to use coconut sugar instead of erythritol but I have not personally tried this.
Is White Sugar Gluten
Gluten is a protein found in wheat, rye and barley and these grains’ derivatives.
When it comes to the many marvelous types of grains, knowing which varieties do and don’t contain gluten can be tricky. But sugar comes from the sugar cane plant, which is naturally gluten-free, according to the American Farm Bureau Foundation for Agriculture.
So in its natural form, sugar is gluten-free. But sugar can be exposed to gluten-containing ingredients either during preparation or manufacturing, according to the Celiac Disease Foundation. Or, at a cafe, your sugar may be poured into a container that formerly held a gluten ingredient so it’s probably safest to stick with packets.
When buying sugar, check the packaging to make sure it’s safe from cross-contamination. If your package is labeled gluten-free, that means it contains less than 20 parts per million of gluten, which is a safe amount for people with celiac disease, according to the FDA.
In some cases, the sugar you buy may even have a Certified Gluten-Free seal on the package. In that case, the product has been tested by the Gluten-Free Certification Organization , which follows even more stringent standards. Any foods certified by the GFCO contain less than 10 ppm of gluten, according to the GFCO.

How To Make A Vegan And Nut Based Crust
I am offering two crust recipes depending on if you want to stick to vegan or sugar free.
This is a simple recipe that can be made in a food processor or using a strong blender. Feel free to use this crust or the crust of your choice in this recipe.
Here is what you will need to make the crust.
Nuts 1 Â½ cups, unsweetened cocoa powder 2 tablespoons, and dates Â½ cup pitted . Process these ingredients until you get a fine to crumb-like texture and then press it into a round pie dish or springform pan. Freeze this while you work to allow it to firm up.

How To Make Vegan Apple Crumble
Start by preheating your oven and get a small to medium-sized baking dish. Wash and chop your apples, then add them with the sliced banana and chopped dates to a bowl.
Grab all of the cozy spices and top your fruity filling, mix everything with a spoon and transfer it into your prepared baking dish. Bake for around 10 minutes, just until the apples have turned soft and begun to bubble a bit.
In the meantime, create your simple oat crumble topping by combining rolled oats, sugar-free applesauce, vanilla extract and a pinch of salt in the same bowl youve just used for your apple filling.
You can add some oat flour for a slightly different texture if you like or 1-2 tablespoons of maple syrup for extra sweetness.
Once the apple and banana mixture becomes soft and fragrant, take it out of the oven and top it evenly with the oat crumble topping. Back into the oven for another 15-20 minutes until your crumble has become slightly golden and crispy!
Make sure to let your homemade vegan crumble sit for around 5-10 minutes before serving warm on its own or with some vegan ice cream.
