Buckwheat is a pseudo cereal and is naturally gluten free. Its a good source of linoleic fatty acids, B vitamins, plus it has eight essential amino acids, folic acid, and magnesium.

Instead of yogurt I used a dairy free cashew cream. Its rich and creamy texture makes a hearty and filling gluten free vegan breakfast.

Adding maca powder which is known for balancing healthy hormone levels, will increase your energy levels and provide proteins, vitamins, and minerals.

Easy Roasted Vegetables For Breakfast

No babysitting your veggies. Preheat oven to 425 degree. Rinse and dice broccoli and potatoes. Placed on large parchment lined baking sheets.

Drizzle with olive oil and sprinkle with salt & pepper. Do not cover with foil as this well stream veggies not roasting.

  • Preheat the oven to 425°F.
  • Chop and prepare your vegetables and set them aside.
  • In a large mixing bowl, mix together your chickpea egg. The amount of liquid you need will vary so continue adding liquid until it is runny but still a bit thick. Adjust seasonings to taste.
  • In a greased large 9×13 casserole dish, layer in the hashbrowns.
  • Then add the chopped veggies and 1 cup of the vegan cheddar cheese shreds.
  • Now, Pour the chickpea egg mixture over the casserole and spread it out so everything is covered.
  • Top the casserole with the rest of the vegan cheddar and some sliced green scallions, if desired*.

    We used the plant-based Just Egg product to replace eggs in this breakfast bowl. Just Egg is made from mung beans, water and canola oil. It comes in liquid form and is sold in the refrigerated section of the grocery store.

    You get loads of protein but avoid egg allergies and animal products. This mung bean products does a great job of replacing eggs as a traditional breakfast option. We use it to make our savory breakfast quiche too.

    Vegan Butter On Gluten


    I dont know about you, but sometimes when Im feeling sick or just not in the mood for much of a breakfast, nothing satisfies quite like butter on toast.

    But this is vegan butter on gluten-free toast. I dont eat this often as theres just not much nutritionally to offer here, but it feels like simple comfort food sometimes.

    What Meat Do I Use And Can I Make It Meatless & Vegan

    Weve used Jimmy Dean regular sausage, as well as Johnsonville, Falls Brand and Great Value. We havent had a problem with any of them, as according to their package theyre all pork sausage and spices for the most part. Be sure to find a brand you feel comfortable with.

    If you need these to be vegan, there are a decent amount of vegan meat crumbles you could use. You could also omit the meat and the potatoes and vegan eggs would be filling too! You could always add beans if you need more texture as well.
