How To Make This Recipe:

  • Step 1

Step 1: Add your dry ingredients to a large bowl and whisk to blend.

Step 2: In a smaller bowl, add your wet ingredients and whisk to blend.

Step 3: Pour the wet ingredients into the dry ingredients and mix.

This is what your batter will look like. I wanted to include this photo so you can see the consistency.

  • Step 4
  • Step 5

Step 4: Heat a pan over medium heat. Add a little light oil to prevent sticking if your pan isn’t non-stick. You can also use a cast-iron skillet or a griddle.

Step 5: Pour some batter into circles on your hot skillet. Cook 3-4 minutes until you see bubbles in the batter. Use a spatula to flip the pancakes over to the other side. Cook 2 minutes and remove from the pan to a plate.

Tips For Making Gluten Free Pancakes

  • I use a well seasoned cast iron skillet to make my pancakes. If you do not have a cast iron skillet then a non stick pan will work well too.
  • Grease the pan a little in between every batch of pancakes to make them easier to turn, you donât want them swimming in fat or you will end up frying your gluten free pancakes!
  • Donât expect them to show air bubbles like regular pancakes, they will make some but the batter is not exactly the same as regular pancakes, they also take a little longer to cook.
  • Make sure the baking powder you use is not old or your pancakes will not rise.
  • To prep ahead you can measure out your dry ingredients ahead of time and put them into ziplock bags to create your own gluten free pancakes mix that is ready to go in the morning when your children are getting ready for school.
  • Make the pancakes dairy free by using your favorite dairy free milk, I like to use unsweetened soy milk but any non dairy milk will work.
  • Serve them warm from the pan! This is the best way to eat them.

How To Make Fluffy Gluten Free Pancakes

Weve made this recipe over and over again, enough times to perfect it and make sure it yields a soft and delightful gluten free pancake every time we have breakfast for dinner.

This recipe has been tried and true hundreds of times, one of those yummy recipes Ive just kept testing as an excuse to make it again, even though the perfect gluten free pancake recipe was achieved 100 tries ago.

The secret to making fluffy pancakes is fresh baking powder. While we all have baking powder in our pantries, its important to note that after 9 months from opening it begins to quickly decline its rising power.

Meaning, its ability to provide your pancake batter lift and help them rise declines quickly or stops working. This is the culprit to pancakes not coming out as fluffy as they should with this recipe.

One simple trick is to mark the opening date with a pen in your baking powder bag or package so you know its always fresh! If your baking powder is still sealed but its expired, it will also not provide optimal lift.

Is anyone else enjoying their weekends more now that nothings open? I admit to over-scheduling weekends in the past to pack in all the fun I felt we should be having as a family on our days off together. The result was making wonderful memories, of course, but not taking the time to simply rest which I now realize is so needed at the end of a busy week!

For example this past weekend, instead of hustling off to some festival or the Farmers Market, we went for a family walk. I cleaned, gardened, read a book, and took a nap. TOOK. A. NAP. Totally unheard of! All without feeling guilty that we did nothingbecause theres nothing to do! Can you relate? Anyway, I entered this week actually feeling refreshed because we took it so slow. This is a change of pace that Im going to work hard to maintain for as long as possible after this whole mess is over.

One way things have stayed the same is that we still go the extra mile for breakfast on the weekends. Actually, make that half a mile. Heck, maybe even a quarter mileat a wog. That is to say, Perfect Gluten Free Pancakes are a totally tasty way to kick off the day and take mere minutes to make with fridge and pantry staples!

    Homemade Gluten Free Flour Blend

Using a homemade mix of gluten free flours made the very best, soft, fluffy pancakes.

I think this is because I was able to adjust the amount of gum needed and I used the bare minimum per recipe as any more than that tends to make them sticky, this is a problem with most ready made blends that have gum added which is often too much in my opinion.

I tested and retested this recipe with various gluten free flour combinations and the best results I got were using a combination of white rice flour, brown rice flour, and potato starch. If you can find those specific flours I recommend using them in the quantities listed in the recipe below. You could substitute one or more of the flours but the result will probably be different.

    How To Make A Gluten

One of my favorite things about german pancakes are that theyre so easy to make! The blender does all the work so clean-up is minimal.

  • Start by placing a 9×13 pan in the oven as it preheats with a chunk of butter.
  • Add the ingredients to the blender. Dont overblend the batter just pulse until combined.
  • Blend until smooth.
  • Take the hot 9×13 pan out of the oven and pour the batter in a figure-8 shape into the pan. Bake until puffy and golden!
  • Tip: Swirling the batter into the pan in a figure-8 pattern helps give the German pancake peaks and valleys which contributes to a better overall texture.

    How To Make Easy Gluten

    • I always like to start by mixing my liquid ingredients first. In a large bowl whisk the egg , granulated sugar, pure vanilla extract, and the vegetable oil together.
    • Add the gluten-free flour, xanthan gum , gluten-free baking powder, and salt to the egg mixture and mix until fully combined.
    • Stir in milk and mix until smooth. For thinner pancakes stir in 1 to 2 tablespoons of milk.
    • Scoop the batter into a ¼ cup measuring cup and pour the batter onto a greased griddle or pan for each pancake.
    • Cook the pancakes until the batter starts to bubble a little and the pancakes start to puff. Flip/turn over the pancakes and cook the pancakes until they are golden brown.
    • Top with butter, syrup or favorite topping. Enjoy!
    • These pancakes can be frozen and reheated in the microwave. To freeze the pancakes, allow them to completely cool and place them on a parchment lined baking sheet and flash freeze them for 10 minutes. Flash freezing them keeps them from sticking together. Once the pancakes are flash frozen, you can remove them from the baking sheet and place them inside a freezer-safe bag or air-tight container.

What Type Of Flour Should I Use

    King Arthur Gluten

The main trick for a perfect gluten-free dutch baby is to use a high quality gluten-free flour. You can use oat flour or an all-purpose blend.

In most of my recipes I recommend using a high-quality 1:1 gluten-free baking flour. This flour is usually a blend of several different types of gluten-free flour and a binder like xathan gum.

For this recipe, I like using King Arthur Flour Gluten-Free All Purpose Flour that doesnt contain xanthan gum for this recipe.

A blend with xanthan gum will work fine but might not be as puffy. This is because xanthan gum binds the pancake more than needed.

You can also use gluten-free oat flour in this recipe. It lends just the right amount of structure and a delicious wholesome flavor.

My favorite brand of gluten-free flour is GF Harvest Oat Flour. You can also easily make your own oat flour from gluten-free oats. Just be sure to buy 100% certified gluten-free oats.
