For most of us, going on a gluten-free diet is a lifestyle choice, even Oprah Winfrey has tried it but its a necessary survival tool for those suffering from Celiac Disease and gluten-sensitivity. To date findings estimate about 2 million people in the United States have celiac disease but the actual number is hard to pinpoint. Add in several million more people who pursue the diet for personal reasons and you have a whole heap of intelligent consumers seeking tasty gluten-free foods.

Unfortunately the term gluten-free tends to inspire images of tasteless, bland food devoid of texture. Enter the 19 year-old founder of Bold Organics, Aaron Greenwald, who started eating gluten-free years ago to shape up for playing competitive tennis. I eat gluten and dairy-free as much as possible I feel better eating that way. Its unbelievable the difference in my energy when I eat gluten. I just notice how Im more tired, less focused and start to gain weight.

Undeterred by his grade, Greenwald sought out a local St. Louis chef, Eric Brenner , to help him craft the perfect gluten-free pizza crust. It took about 10 large scale test runs to really nail down what we were going for. Brenner wanted crust with that familiar outside crunchhe found it with a mixture of rice flour, potato starch and cornmeal. Brenner worked some more magic with dairy-free cheese and organic toppings and Bold Organics pizza was born.

We travel to the International Pizza Expo every year in search of a gluten-free crust that matches our high standards of flavor and deliciousness. We come into contact with dozens of crust makers who are all trying to tap into the demand for gluten-free. Unfortunately, we keep seeing the same thing over and over again: the crusts are either too thick or just taste horrible, plain and simple. Thats something we can never package and sell to our customers.

Why Is It So Hard To Find Good Gluten

If you live gluten-free, youve probably encountered this numerous times: finding a good pizza crust is hard to do. While gluten-free baked goods have come a long way in recent years, theres still much room for improvement.

So why is it so hard to find a decent gluten-free pizza crust? Most of them are bland, dry, and chewy. Unless youre making it from scratch in your home, its hard to get the texture and taste right, especially for the sake of mass production. Our conundrum is no exception.

Last year, my six-year-old daughter was diagnosed with celiac disease, an autoimmune disorder that causes damage to the intestines if she eats gluten. I now knew why she’d always been sick, and I set out to get her healthy. Luckily, we live in St. Louis, a city teeming with restaurants some of which had to cater to gluten-free diners, right? After months of Internet searches and time spent talking to servers and chefs, my family now has a list of locally owned restaurants we frequent. Whether you’re looking for pizza, sushi, pasta or shish kabobs, St. Louis has a restaurant for gluten-free dining.

With the exception of New Day Gluten Free, all of the restaurants on this list have gluten on their premises, and cross-contamination is a possibility. But the owners and chefs of these places aren’t professionals working for a chain with a corporate base in some far-flung locale. The live here they’re a part of our community and they care about their neighbors. They work hard to make sure their customers are safe and take extra steps so people with special dietary needs can enjoy eating out. I’m so grateful to them and all other restaurateurs in St. Louis who offer gluten-free options.

We were amongst the first in the country to offer vegan and gluten-free pizzas options and are thrilled to offer gluten-free pizza crust, appetizers, salads, beers and desserts, as well as many vegan options.

Our print menus include “gf” and “vegan” denotations, and our servers should also ask about allergies and aversions, but please also let us know which foods you avoid so we can be particularly careful when preparing your meal.

Please note: we take great care to ensure the dietary integrity of all menu items through attention to cleanliness, specific utensils and additional precautions to prevent cross-contamination.

However, we cannot guarantee these products due to the shared kitchen used to prepare our larger menu.

Our Classic Thin Crust, Stone Ground Whole Wheat and Deep Dish dough are vegetarian.

Several pizzas are vegetarian by design, including: Lincoln Park, Berkeley, Western Addition

Deep Dish can be made vegan with 4 hours advance notice. We will use olive oil instead of butter in the pan with this notice. The 4 hour advanced notice is required to allow the dough to sufficiently proof before baking.
