1. Cook for 6 minutes.

Al dente pasta gets digested more slowly for sustained energy, but the chickpea kind may have a shorter cooking time than what youre used to. You can follow the directions on the box or bag, but in my opinion, chickpea pastas taste best after boiling for six minutes.

2. Season with herbs, spices, and olive oil.

To maximize taste without sacrificing on nutrition, flavor with extra virgin olive oil, herbs, spices, and sea salt. You dont need to add protein from seafood or meat, but you can use some if you’re opting for a bigger meal. Vegetarians, sprinkle on a combo of cheeses like part-skim ricotta and shaved parmesan to avoid overloading on total calories or sodium.

3. When in doubt, add more vegetables.

This will make your pasta dish a touch lighter so you wont feel super stuffed after you eat especially if youre also adding meat or seafood.

My pro tip: Double up on the veggie serving youd normally have, and cut the pasta in half or by a third. Youll keep the flavor, add extra fiber, and generally max out on nutritional quality without ever noticing the difference.

How Do I Make Tabbouleh With Garbanzo Beans

For the Salad

  • Wash the parsley and mint, and pat dry. Finely chop each bunch of parsley, use both the leaves and stems. Repeat with the mint, and add the greens to a large mixing bowl. Add drained chickpeas.
  • Finely dice the tomatoes . I prefer to use cherry/grape tomatoes because they are a bit sweeter during the winter, but large roma or beefsteak tomatoes will work just fine anytime, especially in season!
  • Slice green onion and add to the bowl along with the greens and tomatoes.
  • For the Dressing

  • In a pint or quart sized mason jar: juice 2 large lemons, removing seeds. Add equal part olive oil to the lemon juice. Then using the garlic press press 2 large cloves of garlic into the dressing. Add a lil salt, add a lil pepper, and shake the jar to combine.

    Prepare The Chickpea Flour Dough

    You can do this process on a work surface, within a bowl, or even with a stand mixer.

    Combine the flour and water and form a dough, kneading well to obtain a uniform texture. Though this chickpea flour pasta doesnt contain gluten, kneading is still important for a smooth dough.

    Form into a ball and then set the dough aside in a covered bowl/ wrapped in cling film for 10-15 minutes to rest. Technically, as this pasta doesnt contain gluten, Im not sure this resting step is necessary, but I like to think that the extra time for the flour to hydrate makes for a slightly stronger dough, so I like to rest it for a little while at least.

    If you find that the dough is a little too crumbly, you can add some additional water. Add one tablespoon at a time until it forms a dough.

It can be rolled out without trouble thanks to the eggs, which give structure and elasticity. Besides, thanks to chickpea flour, the colour of the dough will be a lovely yellow.

    The proportions are the classic ones. For each person, you will need 100g of flour and an egg. Some like to add an extra egg yolk or oil, as in this recipe, and in cases where the dough is too dry, add a little cold water.

    • 400g chickpea flour
    • 2 tablespoons of extra virgin olive oil
    • Cold water
    • Fine polenta

    Method

    1. In a large bowl, place the chickpea flour, salt and break the eggs in the centre. With a fork, start working them from the centre, slowly but surely collecting the flour from the edges. Add the oil and continue mixing with a fork.

    2. Work the dough with a fork from the inside towards the edges of the bowl. If it seems that the dough is too dry, you can add a little cold water. When everything is well blended, finish kneading quickly on the work surface until you get a smooth and homogeneous dough.

    3. After letting the dough rest, roll it out with a rolling pin and a little bit of polenta flour until you get a sheet of about 2-3mm thick. Fold the pastry on itself and cut it into strips. Tagliatelle are now ready to be cooked.
