That was until I moved to the South. Yes, my friends, there is nothing better than southern macaroni and cheese. Southerners love macaroni and cheese like family. Theres even an old joke about it: You know youre in the South when restaurant menus list mac and cheese as a vegetable.

My gluten-free southern baked macaroni and cheese recipe is loaded with three kinds of cheeses and is made super creamy with the addition of evaporated milk.

How To Make It Primal

If youre not familiar with it, primal is like paleo, but with dairy.

So, if you use grain-free flour and use grain-free, primal-friendly pasta, then you have yourself some primal mac and cheese!

You can get Jovial brand cassava flour pasta, and it tastes great. A bit similar in taste and texture to whole-wheat pasta, I think.

Capellos is almond flour-based and supposedly super tasty. I havent had the pleasure of trying it yet!

For the flour, cassava flour works great. I used Ottos.

To Rinse Or Not Rinse

Thats a good question. Normally, I would say no because it doesnt prevent the pasta from clumping, it makes it difficult for the sauce to stick to the noodles, and it cools down the pasta and cold gluten-free pasta isnt very tasty.

But because gluten-free pasta is a lot starchier than normal pasta, I rinse it. Very quickly less than 5 seconds. Then transfer immediately to the sauce.

What Makes This Recipe With 3 Varieties Special

This recipe is a 3-in-1, so the ingredient list might seem intimidating. But let me show you the way, and youll probably be able to commit your favorite variety of the recipe to memory. Then, it will really be yours.

Baked gf macaroni and cheese is more like a casserole, and it calls for eggs. You can easily make that whole recipe ahead of time, freeze or refrigerate it, and then bake it when youre ready.

But these 3 recipe varieties are all egg-free. The cheese sauces must be made right before serving, but you can boil the pasta ahead of time, toss it with some olive oil, then cover it and keep it at room temperature for hours .

The first variety, pictured above, is the roux-based macaroni and cheese. It calls for a few more ingredients, but it makes a just-right balance of creamy and cheesy.

The second variety, called queso-style, is pulled from our recipe for gluten free cheese sauce. It makes a thick, rich sauce thats the easiest way to make the cheesiest sauce.

The third variety, called almost-instant, calls for cheddar cheese powder. Its a specialty ingredient that you probably dont already have, but it tastes like The Box and its the only type of gf mac and cheese that my non-gooey-cheese eating gluten free son loves.

Prepare The Pan And Boil The Pasta

  • Gather the ingredients.

  • Preheat oven to 350 F. Put 2 tablespoons of unsalted butter in a 3-quart baking dish. Set aside.

  • Fill a large stockpot half full with water. Cover and bring water to boil over high heat.

  • Add gluten-free elbow macaroni noodles and a pinch of salt and return water to a boil.

  • Cook according to package directions, until al dente.

    Gluten Free Flour Or Oat Flour

    We make a gluten free roux for the cheese sauce in this recipe. Classily a roux is made with all purpose flour and butter. For this recipe we have tested the two flours below. Both flours work to make a roux, but we do prefer the oat flour!

    • 1:1 gluten free flour
    • oat flour if you are going to use oat flour and have a serious gluten allergy, be sure you buy a brand that is certified gluten free.

    You can also make your own oat flour by blending oats in a food processor. Again, be sure your oats are certified gluten free.

    This Gluten Free Macaroni and Cheese is perfect when you are craving comfort food! It is an easy make ahead casserole your family crave time and again.

    While I do my best to eat right most of the time, I will be the first to admit that I am nowhere near perfect.

    I like quinoa pasta, but any pasta will work.

    If youve tried to buy a good gluten free mac and cheese at the store, your options have been mostly pre-packaged foil squeeze pouches over gluten free noodles or something frozen and they are alleh. Not only do they not taste great, they are still full of preservatives, additives and flavors we dont need.

    Instead, indulge in a version thats truly creamy and free from that curdled theres an egg in this appearance a lot of baked versions have. I hate that.

    You should be able to have a homemade version that no oneand I mean not one single soulshould be able to detect as any different than traditional.

    What Gluten Free Thickener Should I Use

    I know a lot of mac and cheese recipes use some blend of cream, eggs, and cheese and just stir it together and toss it in the oven and thats finesorta. But my version is going to require that you make a roux or white sauce first and that means youll need a thickener.

    In my original baked macaroni and cheese I use flour of course but here I recommend an all purpose gluten free flour blend with xanthan gum in it. I LOVE King Arthurs Measure for Measure Gluten Free Flour blend. It works like a champ. You should be able to buy it just about anywhere these days or online as well.

    I survived on gluten free macaroni and cheese while in Ireland. It somehow became our go-to meal and also turned into the dinner we made after a long day hiking in the mountains.

    We had made a conscious decision to stay in places with full kitchens while on holiday. That way, we didnt have to deal with eating out all the time and worry about what to eat for every meal.

    Gluten Free Kraft Mac And Cheese

    Kraft now makes a gluten free kraft mac and cheese and they are receiving mixed reviews. Some people feel that it’s the equivalent of traditional kraft boxed mac and cheese, while others disagree.

    More and more stores are now carrying gluten free kraft mac and cheese, making it a quick and easy option.

    We prefer our homemade gluten free mac and cheese and feel it’s just as quick to make as the gluten free kraft mac and cheese.

    You can make gluten free mac and cheese sauce in a few simple steps. Most people have the ingredients on hand.

  • While your pasta is boiling, add the half and half to a small saucepan. Bring the half and half to a boil.
  • Add in the spices and salt, and mix until combined.
  • Add in the sharp cheddar and stir.
  • Continue to stir until the cheese is melted and all the ingredients are combined and smooth.

    Best Cheese For Mac And Cheese

    I love cheddar and parmesan, but there are plenty of others to choose from.

    Smoked gouda, brie, gruyere, fontina, cream cheese or goat cheese melt terrifically and add modern flavor profiles.

    What I wouldnt use is pre-shredded cheese because the additives that are added keep it from melting and the mac and cheese will most likely be gritty.

    Feta is too dry and crumbly. It wont melt smoothly and will leave clumps of cheese. So thats not good.

    What Are The Best Cheeses To Use

    Non Dairy Gluten Free Mac & Cheese | Rockin Robin Cooks

    There is not a right or wrong one to use, as its based on preference. However, for a deeper flavor, you can use cheddar, sharp cheddar, gouda, jack cheese, pepper jack cheese, mozzarella, or Velveeta.

    Parmesan might be used for topping. Any combination used will work great in this recipe and will result in a rich and delicious dinner.

    One Pot Chicken And Rice

    Add the rinsed and drained pasta to a saucepan with 2 cups skim milk, 1 teaspoon salt, and a dash of cayenne pepper. Turn the heat to medium then stir constantly until the milk comes to a simmer Turn the heat down to low then stir constantly until the pasta is tender, another 12 minutes or so.

    Be sure to stick to low heat because if the milk cooks off too quickly there wont be enough left to cook the pasta. See how thick the skim milk gets by stirring with the starches released from the pasta?

    Once the pasta is tender add 1 cup freshly shredded cheese then stir until the sauce is smooth, adding in a splash of skim milk if you need it.

    This is the fun part of the recipe because you can play around with the cheeses you like and/or have in the fridge you really cant go wrong! If you want to stick with a more classic sauce though, choose medium-hard cheeses like cheddar, gouda, and fontina.

    Let the mac and cheese thicken for a few minutes with the lid on the pan, then scoop and serve! Make this once and youll be whipping it up from memory at least once a week its definitely a keeper. And you can, of course, use regular pasta in place of gluten free pasta, too. Mac and Cheese for all!
