How To Make Gluten Free & Dairy Free Mac And Cheese
Prepare pasta according to directions on package.
Cook bacon and set aside.
Bake sweet potato until soft. Remove skin and add potato to Mixing Bowl Mash well.
Roast sliced mushrooms for 10 minutes at 350° with a little salt and oil of your choice. Add to mixing bowl with sweet potatoes.
Add cheese, butter, onion powder, almond milk, lemon juice, and 1 cup of the water in which the pasta was cooked. Mix well.
Add pasta to mixing bowl and stir by hand until well combined.
Pour entire mixture into large Baking Dish. Coat with chopped bacon and green onions. Cover and bake for 30 minutes at 350°. Uncover and bake for 10 additional minutes.
This Sweet Potato Mac-N-Cheese is soooo good, its addicting! I definitely dont feel like Im missing out anymore!
Does It Freeze Well
No, cooked pasta never does. Im not a fan of freezing pasta dishes. The issue is the pasta coupled with dairy just doesnt come out like freshly cooked pasta. Pasta is so easy to make that I just havent had a reason to freeze it.
Some say you can assemble the dish and put it in an air-tight container or a sealable plastic bag and freeze it for up to three months.
If youre looking to reheat it for lunch then put the mac and cheese in individual serving containers.

To make mac and cheese dairy-free, youll want to start with a dairy-free mac and cheese recipe. Since the cheese sauce contains so many dairy products, it can be tricky to replace these ingredients one for one in a recipe.
In order to make a dairy-free mac and cheese, you can make a dairy-free cheese sauce with dairy-free alternatives, like dairy-free cheese, dairy-free milk, and vegan butter.
Or you can get creative with other foods that when mixed together, create a similar flavor and texture of a cheese sauce but contains no dairy.

Gluten free mac and cheese recipe, anyone? I can assure you that this is a little nicer than a certain free from ready meal mac and cheese that everyone seems to collectively hate ? This is exactly how mac and cheese should be!
Well, how should gluten free mac and cheese be, then?!
For me, its gotta be insanely cheesy, impeccably seasoned and smoky with a lovely crispy breadcrumbed top.
The macaroni has gotta be lovely and slightly al-dente too after a little blast in the oven then top with fresh chives and youre onto a winner!
Sounds good right?! And yes this recipe is totally vegan, yet it still ticks all of those boxes. You can use regular cheese if you want though and skip these next few paragraphs Ill leave that up to you.
And speaking of my gluten free mac and cheese recipe being vegan, I have a bit of a bone to pick with the usual vegan way of making mac and cheese.
The usual way being soaking cashew nuts and blending them to make your cheese sauce and then adding in nutritional yeast too. Ive got so many bones to pick with this method that Im gonna have to get out the bullet points

How To Reheat It
First, its best to gobble it all up while its hot! That way you know its good.
If you plan to make it ahead, its best to keep the macaroni and the cheese sauce separate if you know youll be reheating it later.
Some types of gluten-free pasta get soggy or weird when mixed with sauce and then refrigerated.
If you know that your macaroni wont get soggy, then you can reheat this gluten-free mac and cheese just like any other mac and cheese.
I really dont recommend reheating gluten-free pasta, and neither does Barilla because it can go south pretty quickly. Gluten-free pasta when heated a second time has a reputation of turning tasteless and mushy, so keep that in mind.

Growing up, you were either an Annies kid or a Kraft kid. But if you were vegan or lactose intolerant, you were neither kind of kid.
Now Annies has changed the game with the release of a dairy-free version of its classic macaroni and cheese. Its 100 percent vegan.
In fact, the company unveiled two vegan versions: One with shell-shaped pasta and a second with elbow-shaped pasta thats made from organic rice pasta and gluten-free. Both were found at Whole Foods for $2.89 a box. The cheese that makes up the marketed creamy sauce is made from a mix of pumpkin and sweet potato powders, and the sauce instructions call for half a cup of non-dairy milk.
HuffPost editors had the chance to get their tastebuds on the shells. One the main conclusions: It certainly doesnt taste like the cheese sauce in the brands dairy offerings. But with vegetable ingredients and seasonings like paprika, garlic and mustard powders, it never promised to.
We used plain old almond milk in the sauce, and felt the thickening mixture looked a little scary as we stirred the color was a bit Halloween-y, but not in that neon Kraft kind of way. Plus, there was an unexpected spicy odor, thanks to the seasonings. Once the shells were added back into the pot, however, things didnt look so bad.
Can I Make This If I Dont Have A High Powdered Blender
Yes! If you dont have a high powered blender like a Vitamix or Blendtec, then we recommend that you put all the ingredients except the cheese shreds into a normal blender or food processor and blend until creamy.
Afterwards, move the sauce to a sauce pot on the stove over medium heat and add the vegan cheese shreds. Stir until your vegan cheese has melted and you have a smooth, uniform vegan cheese sauce.

Quick Chili Mac & Cheese Made Dairy
When I was diagnosed with celiac disease 35 years ago, I went to culinary school to better understand how food was prepared. I discovered I could remake the recipes so they were safe for my gluten-free diet. As long as I maintained the ratio of ingredients in the original recipe, I could replace regular flour with gluten-free flour and the results were always delicious.
As a food editor, I am always thinking substitution when we make a recipe, and these basic principles I discovered 35 years ago still hold true. We regularly replace the gluten, dairy and sometimes the eggs in our recipes with yummy results.
I think of myself as the champion of substitution these days. But truthfully, its mostly about knowing the ingredients to replace. For that I keep a running list of suitable alternatives. I know, for instance, that some butter alternatives contain casein while others are vegan and completely dairy-free. I know that these dairy-free butter substitutions can be cut and frozen to make flakier pie crust and cookies. And I can list the alternatives for milk in order of the ones with the highest protein: Soy, Hemp, Almond, and Rice for starters.
My goal was to make something fast, yet flavorful. I wanted a chili mac and cheese full of creamy good taste without the time-consuming preparation. I had no desire to stir up a cream sauce or shop for ingredients. Instead, I used what I had on hand. Then I melded flavors and saved time by using the microwave.
What Cheeses Are Gluten Free
While most cheese is gluten free, it is always a good idea to check the ingredients of any cheese you want to purchase. Look for words like wheat starch or modified food starch, which is usually made from corn but a label will tell you if it is derived from wheat. My kids like these gluten free cheese brands:

Vegan cheeses are more at risk of containing wheat flour and gluten so check the labels. Our favorite vegan cheese is VioLife brand and these are gluten free. Kite Hill and Daiya vegan cheeses are also dairy-free.
