    Vegan Cinnamon Oat Graham Crackers

    Typical Graham Crackers are made with graham flour, which is a coarse whole wheat flour. I actually prefer the taste and texture of my veganized graham crackers when made with home toasted whole wheat pastry flour. These cookies have been unanimously praised by the students in my Essential Vegan Desserts course at Rouxbe, who say they are easy to make, delicious and versatile. Actually, its been quite interesting to read the notes from the students outside the U.S. whove never seen or tasted grahams, but get hooked on them.

    These simple cookies are showing up in smores, chocolate dipped treats, and ice cream sandwiches, too. Made with 100% whole wheat flour, they are healthy, but definitely not gluten-free. Well, one of the students in the inagural Essental Vegan Desserts course who avoids gluten, made the grahams successfully using oat flour. When she asked me about toasting the flour, I said that I wouldnt, since toasted wheat and toasted oats are miles apart. I was pleased when Erika reported that the oat graham crackers were successful, and I was curious too so I decided to make some myself. These are not too different from the poular Oat Sesame Cookies in my cookbook More Great Good Dairy Free Desserts Naturally or from the tart shells I sometimes make using all oat flour.

    Now, heres the thing thats open to discussion for me:

    If youre a regular reader of GFS, then you know I like to keep things light and easy. Eating small meals and snacks is super satisfying, quick to prepare and clean up, andbecause I have celiacI can control portions and quality much more easily.

    I made myself a light lunch with some Nairns Oat Crackers and a little Asian chicken salad on top. The carbs were light enough that I didnt feel tired afterward, and with only 25 calories per cracker, it was a nice, quick bite that satisfied me throughout the afternoon.

    I also had friends and family in town for a visit this weekendsome who dont eat gluten either. When it comes to feeding a mixed group of guests with dietary restrictions, Ive learned that simple works best. Since I had these tasty crackers on hand, I added them to our menu. Everyone loved them and Id certainly get them again!

    How To Make Graham Cracker Crumble

    Place graham crackers in a plastic baggie and crush using a rolling pin or process in a food processor. Pour into medium mixing bowl and add light brown sugar, fresh grated nutmeg.

    HINT: Some larger pieces are great for the graham cracker crumble if making a crust, make sure the grahams are crushed more uniform.

    Stir in cinnamon and flaky sea salt, then pour in melted butter, stirring to coat well.

    HINT | You can certainly use regular salt too, but flaky sea salt adds little bursts of sweet-salty goodness!

    Line a quarter sheet baking pan with parchment paper or spray with a little non-stick spray, spread gluten free graham topping evenly on the pan. Bake in preheated 325 degree oven for 8-10 minutes. Allow to cool at least 10 minutes before using.
