What Macaroni Brands Are Gluten Free

Macaroni and Cheese ~ Gluten Free

There are many brands of gluten free macaroni available in grocery stores. I use mostly Tinkyada and Jovial brands. They seem to hold up better than most pasta brands. You can use any gluten free brand but please make sure to cook your gluten-free elbow macaroni according to package directions since it varies greatly by ingredient.

We Are Dairy Free Can I Use A Different Milk Or Cheese

You can! I havent tested this particular recipe as dairy free but lots of people have made my other mac and cheese recipes with almond and soy milk and it has been just fabulous.

You wont need to adjust any measurements or the cook time.

As for cheese youre on your own there. Ive never tested with anything other than the real deal.

What Gluten Free Thickener Should I Use

I know a lot of mac and cheese recipes use some blend of cream, eggs, and cheese and just stir it together and toss it in the oven and thats finesorta. But my version is going to require that you make a roux or white sauce first and that means youll need a thickener.

In my original baked macaroni and cheese I use flour of course but here I recommend an all purpose gluten free flour blend with xanthan gum in it. I LOVE King Arthurs Measure for Measure Gluten Free Flour blend. It works like a champ. You should be able to buy it just about anywhere these days or online as well.

  • Parmesan cheese
  • Salt, pepper, dried basil, garlic powder

Southern Baked Macaroni And Cheese

Gluten Free Baked Mac and Cheese

That was until I moved to the South. Yes, my friends, there is nothing better than southern macaroni and cheese. Southerners love macaroni and cheese like family. Theres even an old joke about it: You know youre in the South when restaurant menus list mac and cheese as a vegetable.

My gluten-free southern baked macaroni and cheese recipe is loaded with three kinds of cheeses and is made super creamy with the addition of evaporated milk.

Tips To Avoid Mushy Pasta:

Mushy pasta can ruin a meal faster than anything. Here are my best tips to avoid mushy pasta:

  • Cook the macaroni a minute less than the package says so that the pasta is very al dente. This way it gets some moisture from the cheese sauce and doesn’t get mushy.
  • After cooking, drain the pasta in a colander. Rinse the pasta well in cold water to halt the cooking process to avoid mushy pasta

Step 2: Preheat the oven to 350 F degrees. Add your cheese sauce ingredients to a non-stick pot. Cook on medium-low heat, whisk to blend.

Your cheese sauce will get all melty and delicious! Whisk frequently so it doesn’t burn.

  • Step 3
  • Step 4

Step 3: Add the cheese sauce to the pasta and mix well to coat all of the gluten free macaroni.

Step 4: In a small bowl, add your gluten free panko and topping ingredients and mix well. See below for fun topping ideas if you want to try something fun.

My New Favorite Gluten Free Macaroni

If you use my new favorite gluten free macaroni, which you see in the image above, you can refrigerate the boiled pasta before adding it to the cheese sauce of your choice. The brand is Rummo, and their gluten free pasta is a cut above.

Amazon does carry some Rummo brand gluten free pasta, but they dont often carry the elbow macaroni. Ive hunted it down, but from sources I consider too expensive for me to share.

I also regularly use Barilla gluten free elbow pasta , and theyre great, too. But Rummo actually cooks al dente and isnt hard even when its cold. Thats just a gluten free miracle.

Could I Use Cornstarch Instead Of Gluten Free Flour

How to Make Gluten Free Baked Macaroni & Cheese

You can thicken your pasta sauce with a cornstarch slurry if you dont want to use a flour blend. To do that, melt your butter, add the milk of your choice reserving about 1/2 cup to the side. Add a tablespoon and a half of cornstarch to the cold 1/2 cup milk, stir well, then add that to the milk in the skillet. Bring to a simmer to thicken, and then add your cheeses.

Pro tip: remember that if you simmer cornstarch too long it will lose its thickening power and go runny on you again. Once your sauce comes to a bubble, add the cheese.

How To Make This Gluten

  • Add all ingredients except the cream cheese, shredded cheese, and milk in the inner pot.

  • Close the instant pot lid and turn pressure valve to seal. Cook on manual high pressure for 6 minutes.

  • Allow for a quick pressure release and then add in the remaining ingredients, stirring in the cream cheese and cheese to melt with the pasta, and then adding in the milk a little at a time.

  • Serve in a large bowl or platter and garnish with grated cheese and fresh parsley.

  • Kraft Macaroni And Cheese

The number one ingredient in Kraft Macaroni and Cheese is enriched macaroni, which is made with wheat flour. As such, the macaroni used in Kraft Macaroni and Cheese does contain gluten. The cheese mix that is included in a box of Kraft Macaroni and Cheese does not list any gluten-containing ingredients. It is made primarily of whey, milk fat, milk protein concentrate, and salt. For those with gluten allergies, it is possible to enjoy the taste of Kraft Macaroni and Cheese by using gluten free pasta in place of the wheat macaroni noodles included in the box 2.

Can the Mac and Cheese be Made Ahead?

I wouldnt recommend making this too far in advance, but if you want to assemble it and keep it in the fridge for a few hours prior to serving, that would be fine. Any longer than that and the sauce will absorb too much into the macaroni. Youll need to add a few minutes to the bake time due to the cold temperature of the entire dish.

Can I Halve or Double the Recipe?

Yes, this recipe works well for reducing or increasing for your needs. Just halve everything or double everything accordingly, making sure to scale up or down the size of your saucepans and casserole dishes.

How is Mac and Cheese Stored?

This macaroni and cheese will keep in the fridge, covered, for 3-5 days. It can be reheated in the microwave in short bursts or in a low oven , covered with foil so it doesnt dry out, for 15-20 minutes. You can also freeze it and then thaw it in the fridge overnight before proceeding as above.

      Can I Use Other Cheeses?

Feel free to mix up the cheeses in this mac and cheese. Using cheeses like gruyere, fontina, or mozzarella in addition to one of the cheddar cheeses or to replace both of them would work very well. I would, however, at least use the Velveeta in the sauce because it creates a texture like no other.

Unique Additions To Mac And Cheese

This homemade gluten-free mac and cheese isnt just a replacement for your basic boxed variety. Goat cheese and roasted red bell peppers create a bold and unique flavor. Ive still included shredded cheddar to keep the sauce extra gooey.

If you dont have roasted red peppers then sun-dried tomatoes would be a great substitute they will still give a nice sharp and tangy flavor to cut through the rich cheesy flavors.

Is Macaroni And Cheese Gluten Free

No, the noodles in Mac & Cheese are made with wheat flour, so they are not gluten free. However, the cheese mix does not contain ingredients with gluten, so technically, you could use gluten free pasta with the cheese mix to make this family favorite.

What Makes This Recipe With 3 Varieties Special

This recipe is a 3-in-1, so the ingredient list might seem intimidating. But let me show you the way, and youll probably be able to commit your favorite variety of the recipe to memory. Then, it will really be yours.

Baked gf macaroni and cheese is more like a casserole, and it calls for eggs. You can easily make that whole recipe ahead of time, freeze or refrigerate it, and then bake it when youre ready.

But these 3 recipe varieties are all egg-free. The cheese sauces must be made right before serving, but you can boil the pasta ahead of time, toss it with some olive oil, then cover it and keep it at room temperature for hours .

The first variety, pictured above, is the roux-based macaroni and cheese. It calls for a few more ingredients, but it makes a just-right balance of creamy and cheesy.

The second variety, called queso-style, is pulled from our recipe for gluten free cheese sauce. It makes a thick, rich sauce thats the easiest way to make the cheesiest sauce.

The third variety, called almost-instant, calls for cheddar cheese powder. Its a specialty ingredient that you probably dont already have, but it tastes like The Box and its the only type of gf mac and cheese that my non-gooey-cheese eating gluten free son loves.

How To Make Baked Macaroni And Cheese

There are a few little tricks I learned when researching baked mac and cheese. They make every difference in the world between a great mac and cheese and a dry one:

    • Boil the noodles. One of the best tips I learned from my research is to undercook the pasta. Undercooking the pasta by just a couple of minutes helps separate the pasta from the sauce and allows them to join together in the oven, instead of the pasta breaking down into the sauce .
    • Shred your own cheese. This should really go without saying, but shredding your own cheese, to me, is a must in anything where cheese is the star of the recipe.
    • Make a roux. What is a roux? A roux is just a fat mixed with flour to create a thickening base for many sauces. In this case, melt the butter and add the cornstarch or arrowroot. You can use my xanthan gum-free flour blend , but its even easier to use cornstarch so I dont bother. After the roux has been made and allowed to bubble for one minute, slowly add the milk and then the cream. Adding it slowly will allow you to keep lumps from forming. Then add the spices and continue cooking until the sauce thickens.
    • Add 1/3 of the cheese to the sauce. We only want to add 1/3 of the cheese to the sauce because were going to layer the cheese with the noodles and sauce.
    • Begin layering. In a casserole pan , layer half the noodles and sauce on the bottom, followed by another 1/3 of the cheese. Repeat this layering one more time, ending with the final third of cheese on top.
    • What Vegan Cheese Should I Use For This Recipe

As Ive probably said a billion times already, Id recommend always usingApplewood smoky vegan cheese from Asda for this recipe. Results may vary massively if using other vegan cheese soplease dont use any old random vegan cheese and be disappointed! The Applewood cheese has an AMAZING smoky flavour that this recipe reallyneeds, so I wouldnt overly recommend using any plain old block of vegancheese. They arent as cheesy as you think sometimes leaving the meal a littlebland.

What Are The Best Cheeses To Use

There is not a right or wrong one to use, as its based on preference. However, for a deeper flavor, you can use cheddar, sharp cheddar, gouda, jack cheese, pepper jack cheese, mozzarella, or Velveeta.

Parmesan might be used for topping. Any combination used will work great in this recipe and will result in a rich and delicious dinner.
