There are many brands of gluten free macaroni available in grocery stores. I use mostly Tinkyada and Jovial brands. They seem to hold up better than most pasta brands. You can use any gluten free brand but please make sure to cook your gluten-free elbow macaroni according to package directions since it varies greatly by ingredient.

You can! I havent tested this particular recipe as dairy free but lots of people have made my other mac and cheese recipes with almond and soy milk and it has been just fabulous.

What Gluten Free Thickener Should I Use

I know a lot of mac and cheese recipes use some blend of cream, eggs, and cheese and just stir it together and toss it in the oven and thats finesorta. But my version is going to require that you make a roux or white sauce first and that means youll need a thickener.

In my original baked macaroni and cheese I use flour of course but here I recommend an all purpose gluten free flour blend with xanthan gum in it. I LOVE King Arthurs Measure for Measure Gluten Free Flour blend. It works like a champ. You should be able to buy it just about anywhere these days or online as well.

What You Need To Make This Recipe:

  • Gluten free macaroni or shaped pasta – I really like Jovial and Tinkyada brands. They hold up the best to sitting in a sauce.
  • Cream cheese – full fat makes this recipe so much better!

  • Gluten free panko – or use one of the topping ideas below!

Mushy pasta can ruin a meal faster than anything. Here are my best tips to avoid mushy pasta:

  • Cook the macaroni a minute less than the package says so that the pasta is very al dente. This way it gets some moisture from the cheese sauce and doesn’t get mushy.
  • After cooking, drain the pasta in a colander. Rinse the pasta well in cold water to halt the cooking process to avoid mushy pasta

Step 2: Preheat the oven to 350 F degrees. Add your cheese sauce ingredients to a non-stick pot. Cook on medium-low heat, whisk to blend.

Your cheese sauce will get all melty and delicious! Whisk frequently so it doesn’t burn.

If you use my new favorite gluten free macaroni, which you see in the image above, you can refrigerate the boiled pasta before adding it to the cheese sauce of your choice. The brand is Rummo, and their gluten free pasta is a cut above.

Amazon does carry some Rummo brand gluten free pasta, but they dont often carry the elbow macaroni. Ive hunted it down, but from sources I consider too expensive for me to share.

I also regularly use Barilla gluten free elbow pasta , and theyre great, too. But Rummo actually cooks al dente and isnt hard even when its cold. Thats just a gluten free miracle.

How to Make Gluten Free Baked Macaroni & Cheese

You can thicken your pasta sauce with a cornstarch slurry if you dont want to use a flour blend. To do that, melt your butter, add the milk of your choice reserving about 1/2 cup to the side. Add a tablespoon and a half of cornstarch to the cold 1/2 cup milk, stir well, then add that to the milk in the skillet. Bring to a simmer to thicken, and then add your cheeses.

Pro tip: remember that if you simmer cornstarch too long it will lose its thickening power and go runny on you again. Once your sauce comes to a bubble, add the cheese.

How To Make This Gluten

  • Add all ingredients except the cream cheese, shredded cheese, and milk in the inner pot.

  • Close the instant pot lid and turn pressure valve to seal. Cook on manual high pressure for 6 minutes.

    How To Make Baked Macaroni And Cheese

    There are a few little tricks I learned when researching baked mac and cheese. They make every difference in the world between a great mac and cheese and a dry one:

  • Boil the noodles. One of the best tips I learned from my research is to undercook the pasta. Undercooking the pasta by just a couple of minutes helps separate the pasta from the sauce and allows them to join together in the oven, instead of the pasta breaking down into the sauce .
  • Shred your own cheese. This should really go without saying, but shredding your own cheese, to me, is a must in anything where cheese is the star of the recipe.
  • Make a roux. What is a roux? A roux is just a fat mixed with flour to create a thickening base for many sauces. In this case, melt the butter and add the cornstarch or arrowroot. You can use my xanthan gum-free flour blend , but its even easier to use cornstarch so I dont bother. After the roux has been made and allowed to bubble for one minute, slowly add the milk and then the cream. Adding it slowly will allow you to keep lumps from forming. Then add the spices and continue cooking until the sauce thickens.
  • Add 1/3 of the cheese to the sauce. We only want to add 1/3 of the cheese to the sauce because were going to layer the cheese with the noodles and sauce.
  • Begin layering. In a casserole pan , layer half the noodles and sauce on the bottom, followed by another 1/3 of the cheese. Repeat this layering one more time, ending with the final third of cheese on top.
  • What Vegan Cheese Should I Use For This Recipe

    As Ive probably said a billion times already, Id recommend always usingApplewood smoky vegan cheese from Asda for this recipe.Results may vary massively if using other vegan cheese soplease dont use any old random vegan cheese and be disappointed!The Applewood cheese has an AMAZING smoky flavour that this recipe reallyneeds, so I wouldnt overly recommend using any plain old block of vegancheese.
