Schar Gluten Free Graham Crackers

Easy Gluten Free Graham Crackers

Saltine Bark with Assorted Toppings – Gluten Free Recipe – Cooking with Schar feat. Sarah Green

Yield: 10-12 crackers

  • 4 TBSP Dairy Free Butter Substitute , cold
  • ¼ cup Egg Whites
  • 2 TBSP Honey **
  • 2 TBSP Water , plus 2 more if needed
  • 2 tsp Cane Sugar for topping

In a food processor, combine the flour, sugar, baking powder, baking soda and salt. Pulse 3 times to combine. Next add the cold butter and pulse to form a coarse meal.

Next add the egg whites, honey and 2 tablespoons of water to the flour mixture. Blend to combine. Add 1 tablespoon of water at a time if you need the moisture to bring the dough together. This should not be a super sticky dough, but a smooth dough that can be rolled out.

Place the dough on plastic wrap, form it into a square and wrap it tightly. Place the dough in the freezer for 15 minutes.

Preheat the oven to 350°F. Once chilled, removed the dough from the freezer. Using another sheet of plastic wrap, cover the dough and roll to to ¼ of an inch thick. Cut the dough into 2 x 2 or 2 x 4-inch pieces. Sprinkle with extra cane sugar. Score the dough with a fork. Place in the oven on a cookie sheet and bake for 15 minutes, rotating the pan halfway through baking. After 15 minutes, cut the dough again to make sure its separated. Bake for an additional 5 to 10 minutes to brown. Allow to cool on the pan for 5 minutes then place on a cooling rack to cool completely.

How To Find Gluten

Most crackers are made with either wheat, rye or barley. These grains and their derivatives all contain gluten, which is a type of protein, according to the Celiac Disease Foundation.

While classics like Goldfish and graham crackers all contain wheat, you’ll likely find multiple brands of gluten-free crackers at your local grocer. But before you add any products to your shopping cart, it’s crucial that you read the ingredient list and check for appropriate labels on the package.

First, scan the nutrition label for any wheat, rye or barley-based ingredients, the Celiac Disease Foundation recommends. Always be on the lookout for hidden gluten foods, like malt or wheat starch. Also, check the allergen listing for gluten or wheat.

Next, look for a “Gluten-Free” label on the cracker package. When a food is marked Gluten-Free, that means it has been regulated by the FDA and contains 20 parts per million of gluten or less, which is a generally safe amount.

Your crackers are also safe to eat if the package has a Certified Gluten-Free seal. This means the food has been tested by a third party such as the Gluten-Free Certification Organization . The GFCO sets particularly strict standards and labels foods that only contain 10 ppm of gluten or less.

This delicious, creamy and gluten-free dessert tastes just like a chocolate eclair! Made with gluten-free graham crackers, whipped cream, vanilla pudding and chocolate ganache, it’s easy to put together and delicious to eat!

We had a hard time sourcing gluten-free graham crackers in our local stores so we ordered some on Amazon: Schar Honeygrams. They taste great and take a lot less time to prepare, but you could definitely choose to make your own graham crackers if you had the time. As the recipes sits together in the fridge the graham crackers soften so nicely, and work perfectly with the other textures of the dessert.

This recipe uses gelatin to help the dessert to set and stand up at room temperature. However, if you wanted to omit the gelatin, you could freeze the dessert and serve it straight from the freezer. I have not tried the recipe this way, so I can only guarantee it will turn out right with the added gelatin.

One more thing to note before you launch into making- we estimate with all the fridge breaks you take with this dessert that it’s about 4 hours to finish. The actual making part of this recipe is quick and easy and would be the perfect dessert to assemble the day before, store in the fridge overnight and serve the next day. To make extra clean cuts, stick it in a freezer for 15 minutes right before serving.

Rolling Out The Dough

No refrigeration is necessary before rolling out this gluten free graham cracker dough. On a piece of parchment cut to fit a half sheet pan , roll out the dough until its of uniform thickness.

If youre planning on making graham crackers for the purpose of using them whole, use a ruler and score them with a pastry wheel into rectangles as long and wide as desired.

Otherwise, you can leave the dough whole if youre going to be using it for crumbs. Slide the parchment and the dough onto the baking sheet and use a fork to poke holes throughout.

Can I Freeze The Crust

This gluten-free graham cracker crust can be easily made ahead of time and then frozen for later. Once the crust is completely cooled, wrap it in foil and then place it in a plastic freezer bag. Make sure your pie pan is freezer friendly.

You can freeze the crust and keep it in your freezer for up to 3 months. Thaw overnight in your refrigerator before using it in your recipe.

Do You Have To Make Your Own Graham Crackers

Im happy to answer this with one word: no. I always have a few emergency boxes of packaged gluten free graham crackers in my pantry. Simply put, there are times when I just dont have the time to make my own cookies and the rest of the dessert.

My gluten free son loves anything with a graham cracker crust, so I try to keep a batch of my homemade gluten free graham crackers around. They really do taste just like Nabisco, and Ill often make a double batch.

I keep one batch whole, wrap them tightly and freeze them. That allows me to make desserts like the decadent no-bake banana split or our no-bake chocolate eclair cake.     • Mix the gluten-free graham cracker crumbs, melted butter, and granulated sugar together in a medium-sized bowl until combined.
    • The mixture will be coarse and thick like wet sand.
    • Press the gluten-free graham cracker mixture into the bottom of a 9-inch pie pan and slightly up the sides. Press down into the pan to make sure it is tight and compact. I use the bottom of a flat measuring cup to help press the mixture down.
