Have you heard the news? Bobs Red Mill just released a new product, a gluten-free baking flour that can be used cup-for-cup in your gluten free desserts, without bean flour. They suggest using traditional recipes and substitute the wheat flour/all-purpose white flour with their new Bobs Red Mill Gluten Free 1-to-1 Baking Flour. I created a copycat gluten free flour, similar to 1-to-1, which also works well in cookie, cake, brownie, muffin, and pancake recipes, to name a few.
Though I havent tried their new flour yet, I thought that if you or a family member were allergic to tree nuts or soy, you would appreciate this recipe. Bobs Red Mill gluten free flours are produced in a facility that also processes food containing these allergens.

Gluten Free Butterscotch Blondies Recipe
Makes 16 brownies. Prep time 15 minutes cook time 25-28 minutes
Preheat oven to 350Â°F. Spray and line an 8 x 8-inch baking pan with parchment paper.
In a light-bottomed saucepan, melt butter over medium high heat. Wait for it to bubble, crackle and foam. It will quickly darken in color and become fragrant. Immediately pour into a heat-safe bowl and let cool for 5 minutes.
Into the butter, add the sugars and whisk until mostly dissolved. Add both eggs and continue to whisk until mixture is shiny and viscous. Donât skip this step! Itâs what will give the blondies their shiny, crackly top.
In a separate bowl, stir together both flours, baking powder and salt. Add dry ingredients to the butter mixture along with the butterscotch chips, rolled oats and chopped pecans. Stir until combined. Mixture will be thick.
Evenly spread mixture into prepared pan. Bake for 25â28 minutes until top is golden and the sides just begin to pull away from the pan. While warm, top generously with flaky sea salt if using. Let cool completely before slicing.

Bobs Red Mill Gluten Free 1 To 1 Baking Flour Reviewed
As gluten free baking becomes ever more popular, the gluten free options at the grocery store have continued to improve. Where once you could only find a few gluten free flours and had to experiment with the ratios between them in your own kitchen, now you can choose from dozens of different flour blends and a variety of gluten free mixes. While a cake mix is handy, I still prefer having a versatile flour blend on hand that I can do different things with. Some gluten free flours are not all that versatile, but Bobs Red Mill Gluten Free 1 to 1 Baking Flour promised to be just that, so I couldnt resist giving it a trial run on a few recipes.
The flour blend is made with white and brown rice flours, potato starch, white sorghum flour, tapioca flour and zanthan gum. I am generally a fan of rice-based gluten free flour blends for baking, as they often help preserve a light, tender texture in cookies and cakes. This flour blend which promised that it could be substituted cup for cup in a regular recipe did not disappoint. A cake made with it had a tender, even crumb and rose just about as high as the wheat flour version I made. Cookies baked up to be crisp at the edges and tender in the center. The flour had a nice, mild flavor that didnt distract from the other flavors in the recipes.
Does It Store And Freeze Well
Be sure to wrap any unused bread in plastic wrap and store it on your countertop.
Simply heat a leftover slice of the bread in your toaster to help it become soft and doughy again. This bread will last for several days wrapped and, again, will taste best when slightly warmed.
This bread will freeze well too. Slice it as desired before freezing, and remove desired slices when ready. Defrost the slices of bread in your fridge overnight and dont forget to lightly toast or heat it in your microwave or stovetop before eating.

This easy recipe for gluten free chocolate chip muffins using Bobs Red Mill Gluten Free 1-to-1 Baking Flour takes only 30 minutes to makestart to finish.
My morning routine goes a little something like this: Wake up, get dressed, head outside, garden while its only 70 degrees, go inside, make breakfast, eat, clean up after breakfast. While were out there weeding the garden, pruning the tomatoes, and picking berries, our stomachs are empty and in dire need of food. Sure a berry or two slips in here and there, but for the most part we yearn for breakfast.
It makes me wonder how some people can just skip breakfast. Yesterday, I really wanted to use the Gluten Free 1-to-1 Baking Flour I received from the kind people of Bobs Red Mill to make breakfast with so I whipped up a basic muffin batter, added some chocolate chips, and made the BEST gluten free chocolate chip muffins ever.

I was surprised at how well the Bobs Red Mill Gluten Free 1-to-1 Baking Flour did at replicating the results of a wheat flour muffin. The muffin was still tender, moist and downright delicious. Plus, it also rose in the same manner as a wheat flour muffin.
I will definitely be using this in the future if I ever need to make a recipe gluten free in a flash. I love that theres no need to add xanthan gum because its already in it!
Then just place the pan in the oven and bake them for 15-20 minutes.

If you have read my site for long you probably know that I have mixed feelings on gluten free flour blends. I love the idea and convenience of them. I love the thought of having just one flour to replace regular all purpose flour in baking. A one product fits all baking needs really does sound wonderful, but it is not as easy as it sounds.
