How to make gluten-free egg pasta!

To cook the pasta, bring a pot of salted water to a boil and add the pasta. Cook it for between 7-8 minutes, until al-dente. Stir every minute or so to make sure the chickpea pasta doesnt stick together.

Once cooked, drain the pasta, and enjoy it with a little butter and parmesan or your sauce of choice .

How To Cut Gluten

My dough is made just like regular pasta, by hand, incorporating the eggs into the flours. After the dough begins to form a ball I knead it gently and allow it to rest under a damp towel.

Once youre ready to cut and cook the pasta, you want to cut the dough into 4 pieces and work with one piece at a time. Gently roll the dough out as thinly as possible then cut into strips with a knife or pizza cutter. Since this dough has no gluten it will not bend and stretch just like regular pasta dough. For this reason, I cut the pasta into shorter noodles, about 6 inches long, as I found this made them easier to work with. After cutting the pasta you want to gently separate the strips of dough and cook off in salted boiling water, as you would any fresh pasta.

These Gluten Free Bow Tie Noodles from Clean Eating Mag are an amazing blend of gluten free flours and seeds. There arent any gums or fillers in this recipe, so the pasta is slightly more delicate than some others you might be used to. You can use a pasta machine when flattening the dough, then use your fingers to lightly press it into bow tie shapes. Quick And Easy Tomato Sauce

If its a simple sauce youre searching for, try this recipe for Quick and Easy Tomato Sauce. Even though it can be made and on the table in an hour, the flavors taste like a marinara sauce thats been simmering all day long. Its the perfect, simple sauce to serve with our gluten free pasta recipe above.

Ingredients

  • Salt and Pepper to taste

Instructions

Heat oil in a sauté pan over medium heat. Add onion and cook until soft and translucent, about 10 minutes. Add garlic, spices and tomato paste and mix well. Cook until fragrant, about 1 minute.

Add tomatoes and water and stir well season with salt and pepper. Reduce heat to medium-low and slowly simmer, uncovered, for about 25 minutes. Serve over pasta.

Alfredo Lasagna Florentine With Mushrooms

9 lasagna noodles without baking

1 15-ounce mug of full-fat ricotta

1 16-ounce bottle of Alfredo sauce

1½ cups of whole milk

1 teaspoon of oregano

2 tablespoons of olive oil

1 16-ounce packet of fresh mushrooms, rinsed and chopped

2 teaspoons of chopped garlic in oil

1 10-ounce packet of frozen spinach, thawed and drained thoroughly

2 cups of grated mozzarella cheese

2/3 cup of grated parmesan cheese

Salt and pepper to taste

Directions

1. Preheat the oven to 350 degrees. Lubricate a 9×13 inch baking dish with nonstick spray.

2. In a large bowl, whisk together the ricotta, alfredo sauce, milk, oregano and basil Mixture should be pourable. Put aside.

3. Heat olive oil in a large pan. Fry the mushrooms and garlic over medium heat until the mushrooms are tender. Set aside to cool.

4. Fold the spinach and mushrooms into the alfredo mixture. Spread 1/3 cup in the prepared bowl and shake it to coat the bottom. Add three rows of lasagna pasta lengthways,

5. Cover with half of the alfredo-spinach mixture Sprinkle with 1 cup of mozzarella cheese, 1/3 cup of parmesan. Repeat. Cover with greased foil.

6. Bake for 45 minutes uncover and bake for another 15 minutes or until pasta is tender. Cool 20 minutes before cutting. Makes 12 servings.

Making The Gluten Free Pasta Dough

First, well mix the gluten free flour and xanthan gum together until evenly distributed. Well then make a well in the middle and crack in the eggs.

This is a 1-bowlrecipe, folks. No fuss.

Next, well scramble the eggs slightly and start mixing in the flour/xanthan mixture. Eventually, well end up with a slightly sticky pasta dough.

Well turn the dough onto a generously floured surface and knead it for 2 to 3 minutes. Because this is a gluten free pasta dough, theres no gluten to stretch and activate, but kneading ensures a smooth dough with no flour clumps.

How Do You Cook Gluten

Gluten Free Pasta Recipe

Most gluten-free pasta is cooked the same way as white pastain boiling water for about 8 to 12 minutes, depending on the pasta type. But some gluten-free pastas differ. For example, the Cappellos Almond Flour Fettuccine comes frozen and only needs to sit for a few minutes in hot water.

Each pasta will have the directions written out on the box. Its especially important to follow these cooking instructions, as gluten-free pastas can overcook quickly, becoming mushy and sticky.

Rolling Out The Gluten Free Pasta Dough

The amount of ingredients in the recipe below makes 4 nests of tagliatelle-like gluten free pasta, so well cut the dough into four evenly sized pieces. If you want to be extra precise, feel free to weigh the pieces to get them to the same weight.

Wrapping the three pieces of dough we wont use immediately in cling film ensures they dont dry out trying to roll out dried out pasta dough is a nightmare and, trust me, you will want to avoid it.

Now, Ive rolled out the pasta dough with a pasta machine its handy, quick and it doesnt make your hands tired. Plus, you feel like a total pasta making badass, and thats a helluva feeling. But if you dont have a pasta machine, you can easily follow the exactly same procedure with a good ol rollin pin and a bit of elbow grease.

First, well flatten the piece of gluten free pasta dough a bit and flour it generously on both sides. Well then pass the flattened piece through the pasta machine, starting on the widest setting. Well stay on this setting for a few minutes, so get comfy.

Now, different pasta machines can have different widest settings. What Im trying to say is that the widest setting can produce pasta sheets of different thicknesses. In my case, the widest setting gives pasta sheets about 2 mm thick, which is actually quite thin compared to some other machines. Moral of this side-story: get to know your pasta machine.

Can You Freeze And Reheat Gluten

Unfortunately, its not advisable to store gluten-free pasta to be enjoyed at a later date. Many gluten-free pasta shapes are made using either corn or rice, which tend to break down quicker than pasta made with wheat. Because of this, cooking it a second time could lead to some unpleasantly mushy pasta. Beef Bougnion On Noodles

2 pound chuck roast, trimmed and diced

3 tablespoons of all-purpose flour

½ teaspoon dry rosemary

3 tablespoons of olive oil

4 cloves of garlic, chopped

2 medium-sized yellow onions, finely chopped

1 tablespoon of tomato paste

1 bay leaf

3 cups of beef stock or broth

3 cups of red wine

Salt and pepper to taste

1 16-ounce package of whole grain egg noodles

Directions

1. Preheat the oven to 350 degrees. Pat the stewed meat dry with kitchen paper. Mix the flour, rosemary and thyme in a large bowl. Fold in stew meat until coated.

2. Heat the olive oil in a Dutch oven over medium to high heat. Add stew meat in batches and brown evenly put aside.

3. Add onion and garlic to pan, reduce heat and cook until onion is translucent. Add beef Stir in tomato paste, bay leaves, broth and wine until the meat is just covered. Bring to a simmer, then cover and place in the oven.

4. Cook 3 hours checking at 2 hours Add more broth when the pan gets dry. If the meat is tender and easily shredded, keep it warm until ready to serve.

5. Prepare pasta al dente according to the instructions on the packet drain. Serve beef and sauce over hot noodles. Makes 6 servings.

How To Make Gluten Free Pasta

Making homemade gluten free pasta is surprisingly easy!

It starts with adding the following to a food processor:

  • Almond flour
  • Sea salt
  • & Eggs

The leftover egg whites can be used to make omelets and frittatas, as a binder for macaroons , and so much more!

The mixture is then processed into a doughy texture .

The dough is split into two pieces and placed on a floured cutting board.

Then the dough is rolled out into a very thin layer. You want to get it as thin as possible without breaking.

Next, its cut into thin strips. We find a small pizza cutter works well.

Although weve mainly tested it as fettuccini, we also think it would work well as just about any shape, including lasagna noodles!

Once all the pasta is in the shape you want, it gets added to boiling water and cooked until al dente about 5-7 minutes.

And just like that, youve got incredibly delicious gluten free pasta that rivals pricier store-bought varieties such as Capellos brand.

In our cost analysis, we found that our homemade version is less than half the cost of similar store-bought products !

IMPORTANT TIP! Before you begin, look at the cook time instructions on the pasta package and then subtract two minutes. This is your starting cook time. In my experience, gluten-free pasta rarely adheres to the cook time on the package, so it’s best to start checking it a couple of minutes early to make sure you don’t miss the window and the pasta descends into gumminess or mush.
