We are grateful for the gluten-free cream of mushroom soup products sold in stores during this Thanksgiving holiday season. The following methods are used to achieve a creamy taste without using dairy. If you are unable to consume nuts, a good substitute is cashew cream . The cream of mushroom soup recipe, in contrast to traditional cream-of-mushroom recipes, has no dairy. Simply puree the soup ingredients without adding any cream to it. Soups are flavored with potatoes, cauliflower, and carrots, giving them a strong body and a creamy consistency.

Since I avoid gluten, this isnt going to be in my diet. But I have to give kudos to the Campbell company for the first 3 ingredients.

What makes me most nervous is the nutrition information: only 1/2 cup of the soup serves up a whopping 810 mg of sodium. The American Heart Association recommends less than 1,500 mg per day for normal people . That means one serving of green bean casserole at the potluck gives you more than half the recommended intake of sodium!

Grating the onion and garlic causes them to add lots of flavour without the risk of crunching on a chunk. But since we like onion, I take the pieces that dont grate well and chop them.

  • Gluten free flour Use a measure-for-measure flour blend versus a single flour like coconut, almond, or rice flour. I have not tested these recipes with cornstarch so I cant say for sure if thats a suitable substitute.
  • Gluten free chicken or vegetable broth Use vegetable broth to make this soup vegan.
  • Milk Again, I use dairy-free milk to keep the soups dairy free.
  • Salt and pepper Feel free to adjust the amounts in the recipe if needed.
  • Garlic powder Garlic powder adds lots of savory flavor to this soup without having to chop up actual cloves.

In several batches, dice mushrooms.

In a large saucepan add oil, mushrooms, garlic, salt, and pepper. Sauté over medium-high heat for 10-15 minutes.

Cook until mushrooms have released their juices and mostly evaporated.

Meanwhile in a medium bowl, combine soy milk, onion powder, and cornstarch. Mix well, making sure there are no lumps.

Add milk mixture to mushrooms and reduce to medium-low heat. Cook until desired thickness is reached, probably about 5 minutes.

Is Cream Of Mushroom Soup Dairy

Traditionally, cream of mushroom soup is not dairy-free, as it includes cream or milk in some form or another.

You can definitely make cream of mushroom soup to be dairy-free by swapping out milk or cream for a dairy-free milk.

In my own recipe, I like to use coconut milk to replace the cows milk because it is thick and rich. Oat milk or cashew milk would also work well to create dairy-free cream of mushroom soup at home.

I really recommend using Authentic Foods brand superfine white rice flour. Vitacost also has a superfine white rice flour that has a relatively fine grind, too.

If you dont have a truly superfine white rice flour, you can try using arrowroot in its place. You can also try using tapioca starch/flour, but it may make the sauce gummy so try using 20 grams instead of 30.

If you use too little thickener in your soup, you can continue to cook the soup over medium-low heat to thicken it further. The more water that evaporates, the thicker the soup will be.

Avoid These Brands Of Soups

There are several popular brands of canned soups that are not gluten free, nor safe for anyone on a gluten-free diet to consume.

These are two of the most common brands of soup to avoid:

Campbells: Campbells canned soups contain gluten and should not be consumed by anyone on a gluten-free diet. I looked at several Campbells cans and most say either Contains Wheat orMay Contain Wheat in the ingredient disclosure section. Avoid!

Healthy Choice: Healthy Choice brands will disclose, on the label, if any product contains one of the top eight allergens , but it does not disclose for all sources of gluten, which, in addition to wheat, includes rye and barley.

After inspecting several cans of Healthy Choice soups at the grocery store, I was unable to find any marked gluten free and I therefore recommend avoiding all Healthy Choice soups if youre avoiding gluten.

Sometimes fat-free products offer hope to vegans because alot of animal products like whole milk and butter are filled with saturatedfat. So, those ingredients are often replaced with plant oils which are, ofcourse, vegan.

Sure enough, some fat-free foods swap out butter with plantoils which works out well for plant-based eaters.

Unfortunately, fat-free cream of mushroom soup seems to be everybit as non-vegan as the full-fat version.

Cream of Mushroom Soup Gluten Free ~ Dairy Free

Melt butter in a 3-quart saucepan over medium heat until fragrant and bubbly. Saute the mushrooms with peppers and onions, and cook, stirring occasionally until tender, about 5 minutes.

Stir in gluten free flour and cook for 1 minute. Cooking the flour keeps your soup from tasting like raw flour.

Turn off the flame and whisk the milk in. Turn the flame back on and cook, whisking, until the soup comes to a boil and is thickened, about 10 minutes.

The mixture will thicken as it heats. Just keep stirring over medium low heat. Make sure to scrape the bottom of the pot so the flour doesnt stick.

Add parsley, and season with salt and pepper.
