You can certainly use up leftover chicken or rotisserie chicken. Simply shred whatever chicken youd like to use. You can use a whole chicken, or less. The amount of chicken is very flexible and can be suited to your liking. You can then reduce the cooking time to 5 minutes in the instant pot or 15 minutes on the stove top. Basically, all you need to do is give it a little time to meld the flavors, but it will save you time, which is always nice.

Also, youre welcome to use chicken thighs or chicken breasts . I prefer breasts but either work great. And, dont forget about this soup the day after Thanksgiving! Leftover turkey is fabulous as well!

Can You Substitute A Different Milk For Canned Coconut Milk

In most recipes the answer is no because those other milks are all a lot thinner. But here I say yes since the potatoes do a lot of the heavy lifting when it comes to achieving the texture we want. Youre welcome to use regular cows milk, almond milk, or the refrigerated coconut milk instead of canned coconut milk. Be sure whatever you use is unsweetened and add less since these other milks are not as thick.

Heres Exactly What You Need To Make This Healthy Lasagna Soup:

  • Raw cashews This is what youll use to make the base of the soup creamy. If you have an allergy to cashews, you can leave them out, and replace 1 cup of the broth with a non-dairy milk or creamer. I would recommend Oatlys full fat oat milk or Plain Nut Pods.
  • Just boiled water Used to soak the raw cashews until theyre ready to be blended.
  • Diced tomatoes Regular or fire roasted are both delicious.
  • Broth Veggie broth, chicken broth, or beef broth would all work for this recipe. Obviously if youre making a vegan version choose a vegetarian broth.
  • Fresh herbs Optional, but adding them to the top of the soup does bring a little brightness to each bowl! Parsley or basil would both be excellent choices.
  • Dairy free parmesan Dairy free parmesan or regular parmesan are a really nice touch to sprinkle of the top before serving!
  • Pine nuts Again, optional, but more garnishes > less garnishes IMO

Most store-bought brands of chicken broth, chicken stock, bone broth, bouillon cubes, or powdered broth base are not gluten-free. Make sure to check the label!

To make this vegan tomato soup youll need:

  • 1 small white potato. I did not peel my potato before making this soup. The peel of the potato contains so many nutrients! And it still blends well.
  • Canned tomatoes. Pretty much any canned tomatoes for this recipe will work, as long as they are not seasoned. You can use diced, whole, crushedIve used all 3 with pretty much the same results! They will all get blended at the end, so it doesnt really matter.
  • Vegetable broth. To keep this recipe vegan, use vegetable broth. If you arent a vegetarian, you can sub chicken broth here. You can also use water and bouillon cubes instead if thats what you have available .
  • 2 large carrots. If you wanted to make this recipe quicker, you could use 1 1/2-2 cups canned or frozen carrots in its place.
  • Italian seasoning.
  • Sweetener. I find a bit of your favorite sweetener really improves the flavor. I just used a bit of regular white sugar. If youre doing Whole 30, you can omit this, but the result will taste a bit more acidic.
  • Fresh basil. This is great for garnish!

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  • Saute garlic, onion and mushrooms and set aside.
  • Melt butter over medium heat. Whisk in flour. Cook for about 2 minutes.
  • Add milk and broth. Add sauteed garlic, onion and mushrooms.
  • Bring to a boil, stirring regularly.
  • Reduce heat and simmer, stirring regularly, until it reaches desired consistency .
  • Use as you would a can of condensed Cream of Something Soup in any recipe.

    How To Thicken Gluten

    During soup season, it is common to crave a thick cheese chowder or split pea soup, the problem is, these types of soups typically call for being thickened with flour.

    Even though youll have to make these soups without your beloved flour, you dont have to eat them thin, as you can replace the flour and other related gluten ingredients with cornstarch. So have at least one box of cornstarch handy before you begin cooking your gluten-free soup.

    You can mix this cornstarch with some melted butter on the stove to make a roux, just as you normally would with flour, and it will thicken the soup the exact same way, just without the gluten.

    Yes absolutely. Other types of ground meat will work well in this recipe. Just keep in mind that ground beef, ground pork, or ground chicken are not yet seasoned as the italian sausage is.

    If you decide to use a plain ground meat I recommend seasoning it with salt and pepper to your liking while its browning in the pot.

    Really any kind of rice will work. I prefer to use a simple long grain white rice , but use whatever you have on hand: brown rice, short grain rice, sushi riceetc. Just follow the directions on the bag for the cook time and liquid to rice ratio. I prefer to use my wild rice blend in my creamy chicken wild rice soup and keep it simple for this recipe, especially for my kids so the whole family will love it..

    How you should cook your rice in this chicken and rice soup recipe

    Ive tried to make this soup all in one pot. I really wanted to. But no matter whos recipe I tried, the rice would end up bloating way too much and would end up soaking up way too much of the broth. It always felt more like a casserole than a traditional soup. So, I gave in and made my rice in its own pot, and then only added it right before I serve the soup and what a difference that makes!

    The only concern was if the rice would still have a good flavor, since it didnt cook in the broth. My work around is to add the chicken bouillon to the rice as it cooks, so its already got flavor infused in it. #Winning
