Is Canned Cream Of Mushroom Soup Gluten Free

Low-fat Gluten free creamy potato soup

Yes, and no! Most canned cream of mushroom soups you can buy contain gluten.

Like Campbells cream of mushroom soup, they usually have some form of wheat flour. The base of the soup is a butter-and-flour roux.

Here, we make that roux with butter and superfine white rice flour. That thickens the stock and evaporated milk, and creates a gorgeous, shimmering creamy soup.

There are varieties of canned cream of mushroom soup that are made gluten free. Pacific Foods brand has a cream of mushroom soup that contains cornstarch and rice flour in place of wheat starch.

Gluten Free Cream Of Chicken Soup

Our family has been slowly incorporating gluten free recipes into our menu plan. One thing I have really missed is the rich and creamy soups and casseroles that use cream of chicken as a base. There is just something about cream of chicken and what it adds to a casserole.

I found the solution when I made this gluten free substitute for cream of chicken soup. It is absolutely wonderful and even my gluten loving family could not tell the difference! This soup is seriously that good!

I think you are really going to love it! It is a delicious alternative to use in any recipe that calls for cream of chicken soup such as green bean casserole.

Creamy Potato Soup Gluten Freed Recipes

I made this soup recipe TWO times last week! We ate it on Monday, before the election, and again on Thursday as the results dragged on and on. My techniques for keeping anxiety in check involved exercise and fresh air as well as eating comforting food, drinking cocktails, and working my way through our huge bags of Halloween candy!

My kids love this soup recipe. Recently, we found out that one of my daughters has to eat gluten-free. It has been a learning curve in our kitchen, especially when baking with gluten-free flours. Some recipes, like this one, are an easy adjustment using gluten-free 1 to 1 flour replacement for thickening the soup. If you do not need to eat gluten-free, you can use regular flour.

I have tried a number of Loaded Baked Potato soup recipes and eventually combined different ingredient ratios and techniques finalizing this verison . Sometimes potato soup can be bland. The secret to the intense flavor is cooking the bacon in the soup pot. A little bacon grease goes a long way adding a smoky flavor to the soup.

This recipe isnt as thick as some baked potato soups. I dont care for stand your spoon up thick soups but prefer a bit of creamy broth with chunks of soft potato. Be sure not to cut the potatoes too large or it will increase cooking time. And, keep your half-inch diced potatoes a consistent size for consistent texture.

Then Add Vegetables To The Soup

The namesake potatoes and other hardy vegetables come next, including carrots, turnips, any other root vegetables, and sometimes cabbage.

Look at these gorgeous purple potatoes grown locally here in Michigan:

I then just barely cover the potatoes with chicken stock:

Salt and pepper are added next, almost a full tablespoon of salt. Soups really need the salt since I use homemade stock everything falls flat without enough.

I turn the heat up to high to get the broth boiling and balance my steamer basket right on top of everything .

Dont forget to use the broccoli stems, too just cut them in small dices or slice thinly:

I used to put the veggies right in the water too and use the veggie water to thin the cream sauce , but now I understand that its not recommended to reuse cooking water if you dont use organic produce and youre using broccoli, kale, spinach, or cauliflower .

The chemicals from non-organically grown produce reside in the cooking water, and the antinutrients like oxalic acid and/or goitrogens from the cruciferous veggies also sit in the water. Good news though the antinutrients are reduced by cooking, so were on the right track!

It only takes about 10 minutes for the potatoes to get done when I chop them small, and sometimes I pull the steamer basket off before that point so the broccoli doesnt get overdone.

    How To Make Potato Soup

Easy recipes are the best kind of recipes! Follow these instructions to make this simple soup.

Cook the Bacon: In a dutch oven on medium heat, sauté the diced bacon until crispy. Use a slotted spoon to remove the crispy bacon, but leave the bacon fat in the dutch oven.

Sauté Aromatics: Add the butter, carrots, and onions then sauté until translucent. Add the garlic and cook for 30 more seconds. This will prevent it from burning.

Add Flour: Stir in the gluten-free all-purpose flour.

Add Broth & Simmer: Add the chicken broth, potato chunks, and salt. Bring the mixture to a boil, then reduce the heat. Let the mixture simmer until the potatoes are fork tender. Stir the mixture occasionally to prevent the bottom from burning.

Add Milk & Cheese: Stir in the milk, cream, and parmesan. Let it cook for 3 more minutes so the cheese can melt.

Blend & Serve: Use an immersion blender to blend the soup to desired thickness. For a chunky soup, leave some potatoes and veggies unblended. Serve and add your favorite toppings!

How To Make Condensed Gluten Free Cream Of Mushroom Soup

Cream of mushroom soup is a thickened cream-based mushroom soup made with a roux, made with flour and fat . You begin by cooking the vegetables until theyre soft and fragrant.

Remove some cooked mushrooms. Well add those back into the soup when its nearly done, and smooth.

Then, make the roux by melting butter and cooking it for about 1 minute with superfine white rice flour, freshly ground black pepper, and some salt. It will clump up, so keep whisking.

Add the liquids: vegetable stock, and evaporated milk. The roux will thicken them as it cooks.

Keep cooking the mixture so some water evaporates. This will concentrate the flavor and thicken the soup even more.

Then, puree all the soup until super smooth. I like to use an immersion blender since the liquid is hot, so a standing blender will spurt and splatter the soup if you use it with hot liquid.

Then, add back in the reserved mushrooms, and serve hot!
