If youre looking for gf cake recipes that are just good, for gluten free, and dont require much attention, this is not the right recipe blog for you. All of my recipes are reliably good, and can be proudly served to gluten-eaters and gluten-free eaters alike.
Keep in mind that good, for gluten free cakes are often the function of a gritty rice flour as part of your all purpose gluten free flour. If you build your own gluten free flour blend, youll need to use superfinely ground rice flour. If you buy a blend, make sure its a good one like Better Batter that uses only superfine rice flour.
Storing Your Gluten Free Vanilla Cake
I like the look of a naked cake, which just means that its frosted fully in between the layers and on top. The sides have a very thin crumb coat, and thats enough to keep in the moisture.
If youd like to serve a few slices of this perfect vanilla cake and then store it at room temperature for a few hours, just after taking a slice, use leftover frosting to cover the missing area, extending the cakes life in the fridge.

Ive gone through so many different store-bought flour blends within this time and even found that creating my own gluten free flour blend works best. Just recently I really gave gluten free vegan yellow cupcakes a go and realized that my current blend just wouldnt cut it. I needed something lighter, with the ability to create a fluffier and more tender bite. Thankfully I have learned a thing or 12 in the past 4 years and knew that it was time to make a light flour blend of my own. Best Gluten Free Flour Blend For Cakes
Youre going to see me talk a lot about gluten free flour in this tips section. Thats because its so important to achieving the best gluten free cake.
You know that there are lots of gf flours available. Theres almond flour, coconut flour, rice flour, oat flour, and more. Which is the right one to use?
Ill cover measuring and working with the flour later, but first, lets start with what I consider the best gluten free cake flour recipe blend around.
After hours of testing, Ive found this is to be the perfect ratio:
- 82% all purpose gluten free flour blend (my favorite is Better Batter, and my mock recipe is linked to build your own
- 18% cornstarch
Measuring gluten free flour the right way
To put it a way thats easier to understand, in all of my recipes that call for an all purpose gluten free flour blend, 1 cup weighs 140 grams. The volume measurement is provided for convenience purposes, but the weight is all that matters.
Sometimes, a reader will use a 1 cup dry measuring cup, scoop a gluten free flour blend, and then weigh the contents. Theyll tell me there must be an error in my recipe because their cup weighed more or less than 140 grams.
Theres no error, though. When youre baking by weight, you completely ignore the volume measurement, and just focus on weight. Since dry volume measurements are inherently unreliable and imprecise, its useless to test your vessel against the weight of its contents.

Can You Make This An Egg Free Gluten Free Vanilla Cake
I have not tried this cake with an egg substitute. But Im afraid I just cant see working out very well since this cake is very egg-dependent.
My typical egg replacement suggestion is a chia egg . But this cake calls for mostly egg whites, and a chia egg is not an egg white substitute.
If youre feeling adventuresome, you can try replacing the whole egg with a chia egg and the egg whites with slightly whipped aquafaba. Aquafaba is simply the brine from a can of chickpeas.
Im working on a true vegan gluten free vanilla cake recipe because I really prefer a cake that is designed to be made egg-free, rather than one with an egg replacer. But, in the meantime, here we are.

Amaranth Flour: Best For Boosting Micronutrients
This gluten free flour has a nutty, earthy flavour and tends to absorb the flavours of other ingredients. Rich in fibre and protein, amaranth flour also contains plenty of magnesium, manganese, phosphorus, selenium and iron. It is also particularly high in folate, a nutrient that is very important for pregnant women. Amaranth flour also provides about twice as much calcium as milk per serving. Baking with amaranth flour is a little tricky because it is best combined with other gluten free flours, particularly for recipes like bread, pie crust and tortillas. When baking with this flour, youll need to stick to a ratio of 1 part amaranth flour to three parts other gluten free flours. When making substitutions, youll need about 1 cup of amaranth flour per 1 cup of wheat flour. Amaranth flour browns quickly, so keep an eye on your oven temperature and your bake time.
Does Gluten Free Flour Affect Baking
Gluten free flour is drier and less absorbent than regular flour which can sometimes result in a denser bake than you might be expecting. However, once you adjust your liquid levels in the recipe using trial and error you can create a lighter, softer bake. Certain flours produce a naturally lighter bake, in particular Caputo gluten free flour.
Its also worth following a recipe which has been written and tested using gluten free flour, as different flours will produce different results.

Can I Just Replace Regular Flour With Gluten
Gluten-free flour which you buy in the supermarket is great. However, results can be variable. Each brand of gluten-free flour has a blend of different alternative flours involved.
Some contain more starches, some contain xanthan gum and some contain oat flour which many coeliac sufferers just cant tolerate. So always check the labels.
There are some occasions where you can certainly just do a straight swap and use one of these gluten-free flour blends instead of regular flour. In these instances I would stick to recipes where there isnt a lot of flour to begin with, like in a brownie or friand recipe.
Baker’s Tip – That said, you can have great success using these gluten-free flours in conjunction with nut flours. It’s an easy way to convert cake recipes from a non gluten-free recipe. I discuss how to do this in my guide to Nut Flours.

A gluten-free flour blend that can trace its lineage back to the French Laundry? Yes! Cup4Cup flour was created for gluten-free recipes at the famous Yountville, CA, restaurant. This blend, like Bobs Red Mills Baking Flour Blend, works really well in cakes, cookies, and muffins.
Theres one big drawback to this mix: It contains milk, putting it off limits to those who need to avoid dairy. The milk powder helps baked goods made with this flour blend brown beautifully thanks to the the Maillard browning reaction. If youre using butter or dairy in the recipe, reach for this mix. It enhances both flavor and browning.
Use this when a recipe includes dairy. May be used as a replacement for wheat flour in recipes for cakes, cookies, brownies, and muffins.
Note: Cup4Cup makes a whole-grain gluten-free baking flour blend. Its dairy-free but does carry a warning that its processed in the same facility as dairy.

- Theres too much moisture There are many reasons why your gf cake might be too moist. You may have added too much liquid by overmeasuring some wet ingredients, or undermeasuring your flour, which raises the overall moisture.
- Your oven may have been too hot, which causes baked goods to rise quickly and bake fully on the outside before the center is baked fully and can hold. As they cool, they collapse, leaving a compressed, gummy result.
- You used an all purpose gluten free flour blend that already contains xanthan gum like Better Batter or Cup4Cup, and you still added more xanthan gum to the recipe even though the recipe said to leave that additional ingredient out if your flour blend already contains it.

How To Make This A Corn Free Gluten Free Vanilla Cake
In place of cornstarch, try arrowroot or even potato starch. Either should work fine. Were really using cornstarch to make our all purpose gluten free flour blend into more of a gluten free cake flour.
If you are using a higher starch all purpose gluten free flour blend like Cup4Cup , replace the cornstarch in this recipe with an additional 54 grams of your flour blend.
