A Few Notes About Gluten Free Flour:

The Best Gluten

There is no one size fits all when it comes to gluten free flours. A lot of people I talk to are looking for one flour that does it all. While there are many great flour mixes that I love, I always have more than one on hand to use in different types of recipes. Youll have the best results with your baking if you use a blend suited to the recipe youre using. Ive included below the recipes on this site that work particularly well with each flour blend.

Removing Gluten From Baking

So what happens if we want to remove gluten from all our baked goods? In many cases we still need some sort of flour in our recipe to give our bakes structure.

Not always, see this post on 11 Flourless Bakes for amazing tips and recipes which dont use any flour.

What flours can we use to replace wheat and still achieve successful results?

We need to find flours that mimic the same function that gluten and regular flour provides in our baked goods.

Bakers Tip: There are other ways to replicate gluten in baked goods, not just the choice of flour. For more information please read this Ultimate Guide to Gluten-Free Cakes which gives even more expert tips for successful gluten-free baking.

Terrasoul Superfoods Organic Almond Flour

Best almond flour

If you dont have a nut allergy, almond flour is definitely worth a try. It offers a boost of protein and fiber to any recipe, plus has a pretty neutral taste that makes it super versatile. Terrasouls almond flour is made from blanched Spanish almonds and has a superfine texture. Its also free of chemical residues, like propylene oxide, that are common in other almond flours. While you wont be able to substitute it one for one for wheat flour, adding more flour than whats called for in a recipe can help you get a stiffer batter or dough. You can also use xanthan gum, egg whites or psyllium husk powder to achieve a sturdier texture. Use almond flour to make cookies, pancakes, quick breads and other baked goods.

Q: Which Type Of Gluten

The truth is there isnt one single gluten-free flour that is the best for baking across the board. Instead, it is important to use a flour that is best suited to the recipe you are making. In a blend, each component, particularly the type of flour, will impact the baked good this is indeed an example where the sum of its parts is critical to the outcome. Certain flours, such as blends incorporating garbanzo flour, brown rice flour, or coconut flour will have distinctive tasting notes.

Free From Gluten Woolworths Brand

Flourless Moist Chocolate Cake / Gluten Free / No Flour

The Woollies brand flour has come an awfully long way. In previous years it was unreliable and well, crappy. But since then it has undergone a remodel. Now it bakes far better and is a good cheaper option to some of the brands I list here.

The Woolworths flour blend is very similar in structure to White Wings, only that it throws in the added bonus of Rice Bran and doubles up on the corn starch. Ultimately this comes down to price, which is why youll often find this flour is cheaper than the others. Again being very high in starches means this flour can be too sticky and sometimes dense.

Youll find it in all good Woolworths stores.

The Best Gluten Free Flour Mix

Now lets get something clear right off the bat: there is no such thing as the best gluten free flour mix. There is simply no all purpose gluten free flour mix out there which will work great for every single occasion. Rather, you will use a gluten free flour mix as the base for most your recipes, adding harder or softer flours depending on the recipe for best results.

Having said that, there are some killer gluten free mixes out there. We are fans of the following:

If you are bringing in your own gluten free flour mix to the table, make sure you read up on the ingredients. Our recipes are developed around gluten free flour mixes with 60-80% medium and hard flours, and 40-20% starches or soft flours.

What we are essentially doing here at Gnom-Gnom, is developing gluten free recipes which attempt to maximize the harder flours with higher nutrition density profiles, while limiting the use of starches. No one likes empty calories after all.

So read through below for a comprehensive list of the most popular gluten free flours currently out there. ??

Almond Flour: The Flavoursome Alternative

Easily 1 of the most popular gluten free flours, almond flour is a flavoursome alternative to traditional wheat flour. Consisting only of ground almonds, this type of flour is loaded with nutrients including magnesium, calcium, potassium and manganese, not to mention dietary fibre and protein. Almond flour has a high total fat content but research suggests that almonds may help lower LDL cholesterol levels, particularly in people with high cholesterol or diabetes. Almond flour is particularly good for baking, especially cakes and pies. When substituting wheat flour, use a ratio of about twice as much almond flour as regular flour but the moisture in other ingredients will play a role. Almond flour is tricky when it comes to direct substitutions, so your best bet is to find a recipe that uses almond flour rather than trying to make the conversion yourself.

Teff Flour: Tough And Tasty

Rich in nutrients, teff flour is a healthy and versatile gluten free flour. It is particularly rich in fibre, iron, phosphorus, calcium and B vitamins. Teff flour is best used in combination with other gluten free flours because it may leave your baked goods dry and coarse if used alone. Keep in mind as well that teff comes in several colours lighter colours have a mild flavour while darker colours are earthy in taste. Often used in breads, pancakes and cereals, teff flour should only be used in small amounts because it has a strong multigrain flavour. You can substitute it directly for millet in recipesor use it in combination with other flours. Try it with buckwheat to make pancakes and waffles or for injera, a type of sourdough flatbread typical in Ethiopia and Eritrea.

To Assemble The Cakes

The 6 Best Gluten
  • Level the cakes. There shouldnt be too much to level off but if needed, remove any domes on the cakes.
  • Layer the cakes. Add a dollop of frosting to the cake board and top with the first cake layer. Pipe a layer frosting working in circles from the outside edges into the middle and spread evenly. Add the second cake on top and flip it upside down so the bottom of the cake is now the top. This gives you a nice, flat layer to decorate.
  • Frost the cake. First, apply a crumb coat to the cake after the second layer is added, just enough to cover the outside. Freeze for 5 to 10 minutes to set then add the remaining frosting to the side and top.

Can I Use Gluten Free Flour In Place Of Regular Flour

Yes, you can use gluten free flour in place of regular flour, however you will need to adapt the liquid in the recipe accordingly. Most gluten free flours are drier and more absorbent meaning youll need to add more milk, water or oil, depending on what youre making. If youre following a recipe that calls for regular flour, its a good idea to try it a few times until you find the correct liquid levels.
