Ramen noodles arent the only source of gluten in instant ramen noodle soup. If you use soup packets or eat instant ramen noodle soup there are ingredients in the broth you should look out for. It isnt uncommon for the broth of packaged ramen to contain ingredients derived from rye, barley, wheat and other sources of gluten, like soy sauce.

Check out the list of common gluten containing additives to look out for on food labels below. Its safest to only buy instant ramen that is labeled gluten free. To be legally labeled gluten free, according to the U.S. Food and Drug Administration , a product must contain less than 20 parts per million of gluten.

No matter the ramen recipe or the noodle you choose, make sure you take into account the boiling method.

You cant cook a veggie noodle like you would a classic wheat-based ramen noodle, and a soba noodle wont cook like a glass noodle. Some cook so quickly you could end up with soggy noodles . And others just need a little more love.

Read the package of your gluten-free noodles to ensure youve got the cook time on lock. Then adjust your prep time and make your ramen accordingly.

They also come in a prepackaged bowl so all you have to do is add hot water. Simply Asia Rice Noodle Bowls are also cholesterol free, egg-free and steam cooked. While I liked these better than the similar Thai Kitchen bowls, they still did not add up to the Lotus or King Soba.

Can I Make This Without An Instant Pot

Yes, you can! Obviously, my favorite way is the instant pot because you can use frozen chicken for days you forget to thaw itwhich is most days for me. But, you can make this on the stove topbut I would only recommend doing that with thawed chicken. Follow all of the same directions, except simmer on the stove until the chicken is cooked through.

You could even make this in a slow cooker. Youd need to crisp the bacon on the stove and then sauté the mushrooms in the bacon grease and then add them to the slow cooker, along with the ginger, broth, soy sauce, rice vinegar, red curry paste, sesame oil and chicken. Slow cook 6-8 hours until the chicken is soft. And, then following the remaining directions for adding the noodles and garnishes.

Glass noodles are another neutral flavor option, though you might taste of hint of sweetness or nuttiness from the mung beans, which are the primary ingredient here. Some products will have pea starch mixed in as a dough conditioner other than that, it’s just starch and water.

Soba noodles are one of my favorite ramen noodle alternatives because they are thick and filling. Their tough texture helps them stand up to the hot broth and they dont get mushy or fall apart in the soup. Soba means buckwheat in Japanese.

So whenever you see soba noodles on a menu or package you can assume that they are gluten free because they are made with buckwheat flour. However, take this advice with a grain of salt and always check the packaging or ask your server to double check.

Sometimes soba noodles are cut with wheat flour. If you want to buy gluten free soba noodles here are a few brands that I trust:

How To Make Baked Tofu

I make baked tofu all the time for dinner, and serve it in all sorts of ways that everyone in my family loves. Of course, you can eat any tofu raw right out of the package, and I love it like that, but I think most people prefer it cooked.

I always begin with extra firm tofu, and my favorite brand is Trader Joe’s. Their extra firm tofu is packed in water, as all tofu is, but it’s super dense so it’s very easy to squeeze most of the water out of it with nothing more than a paper towel.

If your extra firm tofu is more porous, you might want to press out the moisture. You can use either a tofu press or place it in a few layers of towels on a plate and pressed with something heavy like a book or canned goods. Either method is really time-consuming and annoying, but effective.

After removing the moisture, simply slice the tofu into chunks, toss them with a tablespoon or two of extra virgin olive oil, add kosher salt to taste, toss again, and spread into an even layer on a nonstick or lined baking sheet. Bake in a 400°F oven for about 20 minutes.

Be careful not to bake the tofu for so long that it becomes crunchy through to the middle. You only want a crust on the outside of the tofu. If you’re very, very patient, you can flip the pieces of tofu halfway through baking, so it crisps evenly on both sides. I am not very, very patient.

How To Make Gluten Free Ramen

GLUTEN FREE CHICKEN RAMEN SEASONING | Ramen Seasoning Recipe

The full recipe follows – end of this post – but heres the pictorial walk through, and some additional tips:

Preparation

Before getting started with the recipe, I recommend preparing all of the toppings. First thing is slicing vegetables, etc. Then slice your meat, and get your eggs cooking.

Sometimes I’ll toss my meats with a bit of a marinade – a little GF soy sauce, ginger, garlic, and sesame oil, I never measure – and let it chill in a baggie while I get everything else going.

Noodles

Prepare your selected ramen noodles, following the directions on the package. Youre wanting to aim for al dente, in terms of texture – theyll absorb a bit of the broth.

Once cooked, divide between 4 bowls, set aside.

Broth

As your ramen noodles are cooking :

In a large pot over medium heat, heat sesame oil. Add ginger and garlic, cook for 1 minute. Add mushrooms, cook for 3 minutes or so, until mushrooms start to soften.

Add broth, soy sauce, fish sauce, and rice vinegar, bring to a simmer. Season with sriracha or crushed chilis, salt, and pepper to taste.

Assembly

Heat sesame oil in a pan. Season your meat with a little salt and pepper, cook over medium-high heat until browned all around.

Divide broth mixture and mushrooms between bowls, top with cooked meat, eggs, and any other toppings desired.

Are Ramen Noodles Gluten Free

Traditional ramen noodles are made out of wheat so they are not gluten free. They do sell different types of gluten free ramen style noodles in the supermarket.

My favorite brand of gluten free ramen noodles are Lotus Foods. But there are plenty of brands of gluten free ramen and different types of naturally gluten free alternatives that you can use instead of traditional wheat-containing noodles.

For the soup or sauce packets included with some of the products, dehydrated soy sauce and or hydrolyzed wheat protein is among the ingredients in the soup/sauce flavoring powder so gluten is present in the soup/sauce as well. At this time, we do not offer any gluten-free options.
