Apparently, most products nowadays have pretty neat and fulfilling labels that enlist all of their components, but sometimes you are so confused by those tiny and huddling words. Heres the thing, it is not that time-consuming and dead-boring if you know what to find on a label.

Typically, gluten is added for either more flavor or as additives to increase the consistency, so what you would like to look for are terms like wheat, barley, rye, or oats. But it is common to see gluten go around with a natural flavor dressing. In this case, you can see grain derivatives next to the term in parenthesis.

Other names that you wanna be careful with include triticale, spelt, malt, Kamut, farina, wheat berries, wheat starch, and farro. They are grain source products that totally have gluten.

The biggest Yes Sign you want to see whenever you buy your cheese is a great gluten-free label with the bold and catchy font. According to US-FDA Labeling Rules, a product can only be labeled gluten-free if they are not:

  • Containing naturally not gluten-free grains
  • Processed to remove their gluten content entirely
  • Having gluten amounts higher than 20 parts per million .

Enzyme-linked immunosorbent assay kits use color change and antibodies to determine the identity of a substance. According to Anca’s report, analysis of blue cheese samples conducted by Koerner’s laboratory used three different commercial ELISA test kits to determine the gluten content of blue cheese fermented using products that did and did not contain a glutenous base.

The process involved testing five blue cheese and mold samples total, with three made with mold cultured on gluten-containing media and two samples of mold cultured on wheat-based dextrose. Each sample was then tested three times using each of the ELISA tests. As a result, no detectable levels of gluten were found in any of the samples.

The Canadian Celiac Association has added blue cheese to its “Acceptability of Food and Food Ingredients for the Gluten-Free Diet” pocket dictionary, meaning that it should not bother even people with celiac disease, much less those with gluten intolerance or those on a gluten-free diet for health concerns.

Avoid Cheese Packaged At Deli Counters

It’s unfortunately also possible for any cheese to have gluten cross-contamination introduced when it’s handled or packaged. Many stores, especially more upscale supermarkets, buy large wheels or blocks of cheeses, and then cut them up to sell in smaller quantities. If this cutting and repackaging take place in the deli section where workers also make sandwiches, or in the bakery section where workers are using flour, the cheese can become cross-contaminated.

Therefore, it’s best to stick with cheese that was packaged at the manufacturing facility.

To tell the difference, the cheese that’s repackaged at local stores usually is wrapped in basic plastic wrap that’s held closed by a stick-on label, while cheese that’s packaged at the manufacturing facility usually has a more substantial shrink-wrap-style plastic cover, sometimes with the label printed directly on it. If in doubt, of course, you should ask.

In addition, if you purchase cheese sliced at the deli counter, you risk that cheese being cross-contaminated in the slicing machine since a few sliced deli products contain gluten. Again, you’re better off purchasing cheese that was pre-sliced and then packaged at the manufacturer, although some people have reported success by asking the store personnel to slice their cheese and other deli products in the early morning after the equipment has been cleaned and before it’s been used for gluten-containing deli products.
