Soften Rice Noodles In Boiling Water

This is my preferred method for cooking rice noodles. They always seem a little under done with the tap water method.

  • Place rice noodles in large bowl. Cover with boiling water and let sit for 5-10 minutes. Drain and set aside.
  • Five minutes is good if the noodles will get additional cooking time in a stir-fry. Eight to ten minutes is best for a noodle bowl or cold salad where there will be no further cooking. The time varies depending on the thickness of the noodles so just taste them and decide what you call cooked.

    Buying And Storing Rice Paper Wrappers

    Rice Paper Wrappers are made from a mixture of rice flour, tapioca starch, water and salt that is then rolled and dried into very brittle, thin shapes. The round papers are used for salad rolls and spring rolls, while the triangular ones are traditionally used at the table to wrap grilled foods.     Cooking Procedure Of Rice Noodles Tested

    Water was boiled, and approximately 20 g of noodles was cooked for different lengths of time. The texture of noodles is affected not only by its composition but also by the cooking duration. Boiling the noodles for a short duration leads to a firm texture, whereas cooking for a longer time results in a softer texture. To ensure that the water content of the cooked noodle samples, which were boiled for different periods, was the same, the contents were measured to determine the relationship between the boiling time and water content. The water content shows an approximately linear relationship with the boiling time in a realistic boiling time range. The boiling time at which the water content of the rice noodles was 70% was determined from the obtained relationship. The water content was determined from the weight of the noodles before drying and that after drying at 130 °C for 2 h, having allowed them to cool in a desiccator for 30 min.

They are available in a variety of widths broadly classified as thin, medium and wide. In my pantry I always keep two widths thin vermicelli noodles to make soups and salads plus one wider variety for stir-fry recipes.

    Rice noodles are also called rice sticks, vermicelli and other variations of these words. The noodles are naturally gluten free with a typical ingredient list of rice flour and water. Vermicelli actually refers to the width of the noodle rather than the flour it is made of. You can buy wheat noodles called vermicelli but Asian recipes calling for vermicelli generally mean rice vermicelli.

    If possible I buy the wider rice noodles in packages I can use for one meal. I just open the whole package into a large bowl and pour the water on top.

    Thin vermicelli noodles however, come in large packages that need to be opened and separated to get the amount you need. When you take them out of the package they break and fly onto the kitchen floor so here is my solution to this problem.

    Which Brands Of Rice Noodles Are Gluten Free

    There are many brands of rice noodles that are safely gluten free. Here are my favorite brands, that are gluten free as of this writing :

    • Dynasty maifun rice sticks
    • Annie Chun’s maifun rice noodles
    • A Taste of Thai is a great brand for all shapes and sizes of rice noodles
    • Thai Kitchen is also a great brand for lots of gluten free products, including gf thin rice noodles
    • Lotus Foods makes tasty rice noodles with great texture, but they don’t seem to have a maifun variety

    Other Gluten Free Asian Noodles

    Are rice noodles gluten free? If you are worried about the gluten content of noodles, here are some of the gluten-free Asian noodles you can enjoy.

    1. Acorn noodles These Korean noodles are made from acorn flour and wheat or buckwheat flour. They are chewy, slightly sweet and nutty, so they are good for cold salads and may be used to replace soba.

    2. Bean threads Known as glass noodles, bean vermicelli, or cellophane noodles, these are thin, translucent noodles made from the starch of mung bean. They are common throughout East Asia and Southeast Asia. Since they are almost flavorless, they may be used in a variety of dishes like soup,salads, stir fries, and rolls.

    5. Sweet potato vermicelli These Korean noodles are made from sweet potato starch. They are chewy and glassy, with little flavor on their own. However, they tend to pick up the seasonings when stir fried or used in soup.
