Eating gluten-free at fast food restaurants is a challenge. A few chains have their stuff together and have enough items where one could eat a relatively decent meal, but others have menus that are difficult to understand. This article will answer all of the questions above in detail. It will also provide a breakdown of the gluten-free options available at ten more fast food restaurants.
Generally, I would advise caution when eating at these fast food restaurants since much of the food can be prepared in the same area as foods containing gluten, so the gluten can contaminate what is normally gluten-free food.
What Is Celiac Disease?
Celiac disease is an autoimmune disorder that is triggered by eating gluten. The immune system attacks the lining of the small intestine, damaging the lining and preventing nutrients from being absorbed.

As you can see, despite the fact that Taco Bell says several of its menu items are made without gluten, it is not safe to eat at this restaurant.
Two of the made without gluten menu items contain oats, which likely contain detectable levels of wheat. On top of that, each of the three menu items I tested with my Nima Sensor either contain gluten ingredients or are heavily cross contaminated with other menu items that contain gluten.
Bottom line: Taco Bell is NOT safe for anyone serious about following a gluten-free diet. Those with celiac disease and gluten sensitivity should heed this warning not to eat at Taco Bell.

How To Make Loaded Nacho Fries
Pop your fries in the oven on a sheet pan according to the package directions.
While they are cooking you are going to cook your ground beef and onion in a skillet. Cook until your beef is cooked through and the onion is soft. Drain any fat and return to the skillet.
Mix in the taco seasoning and salsa. Heat the mix through. Your fries should be about finished.
When your fries are done, toss them with seasoned salt. Then start layering the ingredients. Top the fries with cheese, then the beef mixture, then some more cheese.
Return to the oven for a few minutes to melt the cheese and then remove and add your favorite toppings! Serve and enjoy!

Most tortilla chips are made with corn tortillas and are gluten free. Be sure they are marked as gluten free by the manufacturer and were not made in shared oil or on shared lines with gluten products.
