Modern Bread & Bakery

I stumbled upon Modern Bakery completely by accident , and what a happy coincidence that turned out to be. Without realizing that Modern Bread & Bakery was a gluten-free bakery in New York City, I ordered a bagel.

The bagel was so delicious that I promptly returned the following weekend for more. It wasnt until my second visit that I noticed the gluten free signage.

And then it hit me, did I accidentally eat a gluten-free bagel last weekend?

Turns out I did, and I loved it as much as a traditional bagel which is why I consider this one of the best gluten free bakeries in New York City. Their baked goods span the gamut and youll find everything from challah to cupcakes, filling both your sweet and savory cravings.

I took my friend here during her visit and she raved about the bagels as much as I did. In fact, we returned to this gluten-free bakery a few times during her month-long stay.

How To Make Gluten

Follow these steps to bake your own crumb cake:

Prepare for baking: Preheat the oven to 325°F. Grease a 9×13-inch baking dish with nonstick spray or line it with parchment paper .

Make the crumb topping: In a mixing bowl, combine the flour, brown sugar, and cinnamon. Pour the melted butter on top and gently combine everything with a fork until you have a crumbly texture.

Make the crumb cake batter: In a mixing bowl, combine the remaining gluten-free flour, white sugar, baking powder, and salt. In a separate bowl, whisk together the egg, milk, oil, and vanilla. Combine the wet and dry ingredients with a rubber spatula until just combined.

Fill the cake pan: Pour the cake batter into the prepared baking dish and spread it into an even layer with a spatula. Sprinkle the crumb topping over the batter.

Bake: Bake the New York crumb cake for 20 to 25 minutes, rotating the pan after 10 minutes. The cake is done when a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it cool in the pan.

Serve: Dust the cooled with powdered sugar just before slicing and serving.

How To Succesfully Make Levain Style Cookies

Gluten Free NYC: The 19 Best Restaurants in New York City for Celiacs
  • This dough works the best after being chilled for 12hrs or longer . I tried baking my gluten-free levain cookies after only being chilled for 30 minutes and they spread out.
  • When you portion out the cookies, its okay if they just look like a pile of dough on the sheet tray. I use a kitchen scale to measure them out. I have tried this recipe with 3oz portions and 6oz portions.
  • Salt I top my unbaked cookie dough with flaky sea salt before baking to ensure it actually sticks to the cookie. I dont recommend salting the cookie dough before freezing.
  • Start baking them at 375F and after 10 minutes reduce the oven temperature to 350F. This way the outside of the cookie bakes quickly on the outside to ensure that crispy edge.
  • The cookies are slightly underbaked this is how they are gooey and chocolatey on the inside.
  • This cookie is the best the day they are baked off. I recommend baking only as many as you would like to enjoy and freeze the leftover portioned dough.

Gluten Free New York Guide

Tulu’s Gluten Free Bakery in New York offering gluten free Cake and Pastry

Its got to be New York, New Yorrkkkk and there is so much gluten free New York to be discovered. New York truely is amazing for gluten free food and a great place to visit as a coeliac!

During my last couple of work trips to the City That Never Sleeps, I managed to squeeze in some gluten free adventuring and I ate really, reeeeeeally well.

One thing I want to stress up front however: there are lots of fantastic coeliac-safe gluten free options in NYC, but also numerousgluten free offerings that are not coeliac friendly due to cross-contamination risks.

Always ask the extra questions when going to a place that isnt 100% gluten free people are usually very helpful and its better to be safe than sorry.

Lots of fully gluten free spots have opened up since I last visited, so Ive added them to ensure the best places are covered. This guide was last updated in March 2022.

Senza Gluten

After reading a tonne of enthusiastic gluten free reviews about 100% gluten free restaurant Senza Gluten, I knew it was a must-visit for my latest trip. Its a lovely little Italian place, which would be perfect for date night but equally I happily ate there solo . A portion of bruschetta and large serving of mushroom, speck and truffle oil pasta later, I could wholeheartedly agree with the other recommendations for Senza Glutine. It is a must visit for coeliacs in New York.

Inday

An Indian restaurant with a menu that is all gluten, soy and refined sugar free, however they do serve gluteny chapati. They have processes to ensure this item stays away from the other menu items. They have lots of dairy free options too. Three locations across the city. They have Indian-inspired lunch bowls, curries and salads.

Smorgasburg

Take a stroll across the river to Williamsburg its a cool area with markets to explore, including the Smorgasburg food market. There were a number of gluten free food choices, including epic truffle parmesan hand cut chips with roasted garlic and lemon aioli from Home Frite I checked with them about whether their food is coeliac friendly and they confirmed they dont use any wheaty coating on their fries. To go with my fries, I had a quinoa arepa with jumbo shrimp and avocado from Palenque. Note: closed in winter.

She returned to Australia in 2015 and worked in a commercial bakery, wholesaling a variety of gluten-free items for local bakeries and cafes. At the same time, she developed a line of gluten-free flours, Blends by Orly, designed to be used for a variety of different baking applications. She introduced her line of specialized flours to the market by traveling to the United States regularly to participate in trade shows and cooking demonstrations.

Before opening Modern Bread & Bagel, Orly Gottesman developed a line of gluten-free flours, Blends by Orly, designed to be used for a variety of different baking applications.

But when the couple stumbled across that for-rent sign in Manhattan, they decided it was time to open their own shop. They both felt that the Upper West Side was the right place to start. It has a big Jewish customer base and we are dealing with bagels and Jewish food, Gottesman said. They decided to make Modern Bread & Bagel kosher to further reflect our values, she said.

Gottesmans bagels are made from her Manhattan Blend, which contains the ancient grains millet and sorghum. This particular gluten-free flour variety includes high-protein, gluten-mimicking ingredients, and she adds xanthan gum to the mix to give stretch to the dough.

God, Gottesman added, has a plan.

Note About Ovens And Oven Temperatures

All my recipes are tested and developed with a conventional oven. I always bake my baked goods on the rack placed in the MIDDLE of my oven. This way the heat coming from the bottom will not burn my baked goods.

If you are baking with convection , please adjust the recipes accordingly. Be also prepared that the convection oven can cause your baked goods to dry out quickly and still be raw inside. Be aware that it takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.
