Living in Virginia Beach since I was 5, I cant say that Ive had a true New York bagel as Ive never actually been to New York City. Its sad I know, but one day Ill get there and maybe enjoy a gluten free bagel. Ive heard there are some fantastic gluten free bakeries up there.
Until then, these homemade gluten free bagels will just have to fill the void, but Im totally okay with that. They have the wonderful chew that I remember from a great bagel.
Ingredients Needed To Make Gluten Free Bagels
If youve ever made my gluten free mall style pretzels, you already know how to make these bagels. Bagels and pretzels are very similar. Theyre usually made from the same dough with the same technique. The only real difference is the shape and the toppings.
A normal bagel dough is about 60% hydration, which means its a more dense dough than a regular bread dough, which is about 75%. The density is required so the bagel wont fall apart when it hits the water bath. The bagels get their chewy crust from taking a bath in a boiling solution of baking soda, and a little bit of molasses for color and flavor.
- Instant yeast
- Brown sugar
- Butteryou can substitute with a non-dairy butter for dairy free. You may also be able to sub with canola or vegetable oil, but you may need to add slightly more flour.
- Baking soda and molassesfor the boiling water.
- Eggthis is only for an egg wash, but you can skip it if you need to be egg free. To add toppings without an egg wash, simply remove the bagels from the boiling water and immediately dip in or sprinkle on the toppings.

Fifteen years ago, Carolyn Arcario had a high-stress financial position in the city and her diet consisted mostly of bagels and pizza. One day, she woke up and her joints were so stiff, she couldnt move. It turned out that she was highly gluten intolerant and needed to remove it from her diet completely. Unfortunately, gluten was in many of the things she loved to eat and she felt like she couldnt eat anything.

When it comes to gluten free baking, there are a few tricks you can use to make sure youve got the perfect level of moisture in your baked goods.
Usually, its just a matter of adding in a bit of additional wet ingredients. Here are my favorite moisture enhancing add ins:
- Apple suce – the applesauce adds both moisture and a subtle sweetness that goes perfectly with the cinnamon and carrots
- Yogurt – this one is great for breads and cakes and has a nice neutral flavor
- Milk, juice, liquids – this one is pretty self explanatory, the more liquid the less dry your baked goods will come out
Dont be afraid to experiment with what you have on hand and make a few mistakes! They will only help you in becoming a more confident baker .
What Is Dulce De Leche Served With
Since you have extra sauce, Dulce de leche is used to flavor all sorts of desserts and sweet baked goods from frostings to cakes and cookies. It is also spread and drizzled onto pancakes, waffles and used as a flavor for ice cream. And lets not forget, its used to create the most amazing Dulce de Leche cupcakes.

What Is The Difference Between Caramel Sauce And Dulce De Leche
Caramel is made from slowly cooking down granulated sugar with a splash of water and is really sweet. Traditional Dulce de leche is made from slowly cooking milk and sugar together, hence its name sweet milk.
Technically, dulce de leche and caramel can be used as substitutes for one another. They have similar tastes, colors, and textures, and will do the same thing for whatever dish you are using them in. However, if youre trying recreate a Spanish or French dessert, then you must stick with the dulce for an authentic flavor.
How To Make Homemade Dulce De Leche Sauce Without Condensed Milk
Its easier than you think!
- In a small saucepan, whisk flax milk , soy or coconut milk powder and arrowroot. Stir constantly until mixture starts to thicken.
- Add brown rice syrup and stir until it disolves, then add brown rice syrup to the pan. Turn up heat and bring to a gentle boil then bring back down to simmer on low.
- Stir frequently until mixture is thick and slightly reduced. Whisk in vanilla and then remove from heat and let cool before spreading on warm cupcakes.

How Long Can Dulce De Leche Stay In The Fridge
Depending on how heavy-handed you are on the drizzle, you should have a little extra dulce de leche sauce. If not, then I suggest making a little extra and saving for later. Simply stir the dulce de leche frequently until it cools completely. Pour into an airtight container then place in the refrigerator. The dulce de leche will last for one month.

How To Shape The Bagels
Before shaping, put a large Dutch oven filled with water on the stove to begin boiling.
Knead the dough until smooth. This dough kneads really well and isnt sticky at all , so you shouldnt need much extra bench flour. Divide the dough into 9 equal-sized pieces and roll each into a ball. Dip your thumb into a little bit of extra gluten free flour blend and poke it through the center of each ball. Then begin spinning it on the surface to widen the hole finger to do this). Making the hole larger works the best because the hole will shrink as the bagel is boiled and baked. Place each bagel on a parchment-lined baking sheet and cover with plastic wrap until water bath is ready.

So, lets talk cupcakes! And better yet, lets talk Dulce de Leche Cupcakes!
These are the basic steps for making the light-textured, coconut milk cupcakes. The vanilla cake is so fluffy, soft, and delicious itll be your new fav!
- Preheat oven and make dulce de leche first.
- Sift flour, baking soda, baking soda and salt. Then add sugar and brown sugar.
- In a medium bowl, whisk oil, dairy-free milk, coconut milk, lemon zest and vanilla.
- Make a well in the center of the dry then pour in the wet. Mix until mostly smooth.
- Fill cupcake liners 2/3 of the way and pour a teaspoon of Dulce de Leche on top. Swirl then bake.

A mail-order bakery on Long Island has been voted the best gluten-free menu for its large selection of yummy treats for those who suffer from Celiac disease or have a gluten allergy.
Bliss Pastries, located in Suffolk County in Dix Hills was voted the best Gluten-Free menu by Bethpage Best of Long Island 2022.
Known for its tasty brownies, cakes, and muffins, the road to the success of the bakery came about as a search by one Long Island woman to make something sweet to eat for her daughter who has Celiac disease.
Owner Stacy Malinow, whose daughter was diagnosed with Celiac disease in 2005, was disappointed with the gluten-free options in the stores, so she baked and baked until she came up with the perfect product.
After getting lots of compliments, her next step was to open a bakery, which also specializes in nut-free options.
“I named my company Bliss Pastries LLC because when people who avoid gluten can eat something without gluten but that tastes and looks just as good, the look on their face says it all it’s pure bliss,” Malinow said on Yelp.
She added that the bakery also makes large chocolate chip cookie pies in various sizes that can be decorated for special occasions.
They also ship nationwide, so friends and family can be treated as well.
