Gluten Free Sweet Potato Buns
Our three and a half year old is a vegetable hater but loves bread so we try to get in nutrition where we can. The texture of these buns is great so we always have a batch in the freezer now.

Whats The Best Way To Store Potato Rolls
Gluten free breads in general are not agreeable when it comes to storage time. These potato rolls do give a little though. The moisture of the potatoes helps in that area.
The best storage is a good ole bread box. But if you dont have one of those, a plastic bag is a good alternative. A day or two on the counter is fine, but any longer than that and youll want to freeze them.
How To Store Potato Bread
Storing this gluten free potato bread just requires two things: some wax paper and a freezer safe plastic bag. If youre storing it for longer than 1 day, freezing it is the best way to preserve the quality and the taste.
Id recommend slicing it first before freezing since frozen bread is nearly impossible to slice!
Use a high quality, serrated knife and slice the entire loaf, placing wax paper in between each slice. Place the whole loaf in the plastic bag, seal it well and place it in the freezer. Its best enjoyed within a month.

Start With A Wet Dough
If you want any yeasted dough to rise, you must have a proper wet to dry ingredient ratio. When the ratio of wet to dry ingredients is too low, the dry ingredients are overwhelming the wet ingredients , and the yeast will not rise. Thats just the way it works.
Yeast isnt active at very, very high temperatures or very, very low temperatures, but its rare that temperature will prevent your dough from rising. Those toxic temperatures are very extreme. If your dough isnt rising, its usually because your dough is too dryor you didnt wait long enough.

How To Make Flatbread With Just Potato
First, prepare the potato. I use pre-cooked potatoes for this recipe so cook according to your favorite method: boiled, steamed, baked, etc.
Then, use a potato ricer or grater to mash the potato to form the potato dough.
Cut out two large pieces of parchment paper and place the potato between both layers. Using a rolling pin, roll the potato out into your flatbread size. The thickness of the dough can vary. I find that I prefer the results at 2-3 mm.
You can aim to make it similar in size to regular tortillas or go a bit rustic with it, as I did.
Remove the top layer of parchment paper and optionally spray/brush with a little oil. Ive tried this recipe with both methods but I didnt notice much of a noticeable difference, so it might be worth saving on the calories.
Bake the potato flatbread in the oven for around 10 minutes at 400ºF/200ºC or cook in an Air Fryer for 8-10 minutes at 350ºF/180ºC. The potato should look cooked with some lightly browned spots.
Allow the wrap to cool just enough to handle and use it as you would any other wrap by filling it up with your fillings of choice then enjoy!

These are pretty special rolls, these super soft gluten free sweet potato brown butter rolls. And judging from your reaction to them on my , you kind of agree. Lets review them, okay? First, theyre made with browned butter, which takes butter from one of my favorite things straight to my favorite. Second, theyre made with sweet potatoes. I truly love sweet potatoes, but I always know that if I talk about them at all, I run the risk of getting one of those eye-rolling lectures from someone about the difference between sweet potatoes and yams and how grocery stores the world over name them all wrong. I dont know the difference, and if you try to tell it to me, Im gonna class it up and stick my fingers in my ears .
Oh, and guess what? The bread dough is so dreamy and easy to work with that there is absolutely no need for any sort of long, slow refrigerator rise. You will want to chill the dough a bit, though, after it rises since its just much easier to work with cold dough and thats a fact.

Gluten Free Potato Bread Rolls
This is a recipe from Friendly Food Recipes for Life by Royal Prince Albert Hospital Allergy Unit. This dough produces a very acceptable bread roll. It has a bagel-like crust and chewy texture. Potato rolls can be frozen. Wrape them in foil to reheat in oven. Original recipe did not give a quanity for salt, so not sure if this is the correct amount.

1 packet dry yeast |
1/4 cup sugar |
1 cup warm mashed potatoes |
2 eggs, beaten |
2 -2 1/2 cups potato flour |
1/4 cup extra potato flour |
1 teaspoon salt |
- Combine warm water, yeast and half the sugar. Allow to stand for 10 minutes.
- Add oil and potatoes to yeast mixture.
- Stir in 1 cup potato flour along with salt.
- Add 2 beaten eggs.
- Beat 1 minute with wooden spoon.
- Stand in warm place until mixture forms a sponge. It willrise and look foamy.
- Add rest of flour to make a firm dough.
- Stand in warm place until doubled in bulk.
- Using extra potato flour, shape dough into rolls. Place on lightly oiled oven trays.
- Cover with plastic wrap.
- Stand in warm place and let rise.
- Uncover and glaze with beaten egg .
- Bake at 190 deg C for 10-12 minutes.
