IF Helene Godin had decided to rethink her life at a different time, a bed and breakfast might have been her chosen fate. Or perhaps a little independent bookstore with a marmalade cat, good coffee and some comfortable armchairs.

But this being the second decade of the 21st century, Ms. Godin chose a different course after she quit her job as a Manhattan lawyer, resolved to temper her workaholic ways, and set out on a second career. She opened a gluten-free bakery.

So did Edie and Dan Irwin in Los Angeles after their graphic-design business faltered in the recession. And Christine Reed in Ashford, Conn., when she concluded that working as a buyer for a manufacturing company did not fulfill her soul. And Michelle Gillette in Bayport, on Long Island, when she gave up teaching high school Spanish.

As long as there have been jobs, there have been fantasies about leaving them. Often this involves escapes to pretty settings , or fitness nirvana , and, if not financial reward, at least no irritating co-workers or domineering bosses .

Some fantasies run their course owning a little country newspaper, a common daydream of past generations of journalists, has all the allure of a migraine these days. But into the vacuum usually come other ideas more illustrative of a particular moment. And so it is today that we find the growing appeal of gluten-free, not just as a dietary regimen but as a professional Plan B.

We often get asked whether we can make a special cake gluten-free. The answer is yes! That is, if you like chocolate almond. Roanna Canete Is A Contestant On Sugar Rush Show On Netflix

Roanna Canete, who is gluten intolerant and owner of Gluten Free Baking Company, never thought she would be on a cooking show since gluten free baking is not mainstream. On Nov. 29 Netflix will release the holiday season new episodes of Sugar Rush with Canete as one of the contestants with cake designer Lisa Altfest.

Canetes baking company was inspired by the discovery of her sons gluten allergy and subsequently her own gluten intolerance. The business she started out of her house was originally called Coronado Gluten Free Pantry. As the business grew Canete started baking out of a commercial kitchen and recently changed the name to Gluten Free Baking Company.

Canete and Altfest met at a gluten free expo a few years ago. I asked her for advice because she is very good at decorating cakes. We became friends. She lives in Orange County. When the show asked her to be part of Sugar Rush and pick a co-competitor she called me, explained Canete.

Altfest was chosen for the show after the Sugar Rush staff looked at her Instagram account. Altfest has worked for Food Network Chef Jeffrey Adam Duff Goldman, who had one of the first cooking show on TV. He owns Charm City Cakes in the Baltimore area and Charm City Cakes West in L.A.

The Gluten Free Bakery bakes fresh bread and pastries every day in New Yorks Hudson Valley. In 1977 they started as Our Daily Bread, a family owned and operated bakery, making traditional, artisan loaves in the European Style. In 2011, to meet the demands of those people looking for a healthy alternative and fresh gluten free options, they opened The Gluten Free Bakery, a dedicated and certified gluten-free baking space, delivering their first loaves and cookies to market in February of 2012 after months of recipe tasting.

Their approach to gluten free baking is the approach of bakers. They brought all of their experience and knowledge to the task of developing a line of gluten free products. They additionally use local buckwheat flour, whole grain and organic alternative grain flours, non-GMO oils and local free range eggs and dairy.

I want to know about Roanna Canete, the leader. I know why she got into gluten-free baking and why she just opened Gluten Free Baking Co. in North Park. Her boys have food allergies. While parenting experts differ on best practices, most agree we should feed kids. That led to experiments which led to a successful five-year wholesale run and, as of this month, the first storefront. Shes keeping her wholesale kitchen. This is a showroom. A charming, tiny one.

I know shecompeted on the Netflix showSugar Rush with her business partnerTorrey Pines High grad Lisa Altfest, who has Celiac disease and worked at Duff Goldmans Charm City Cakes. But Canete has a master’s degree in leadership, and left that career to do donuts and scones and muffins and lemon bars and cakes. There are many skills you need to run a food business, and baking prowess is neck-and-neck with leadership.

So I ask her to tell me her favorite story as a professional leader.

A friend of mine was a Peace Corps worker in Burkina Faso in mid-Africa, she recalls. As soon as a child was weaned in the village, they were served formula that was just boiled flour in water. Kids were dying, but she couldnt get through to the moms, because the grandmothers had done the same thing. It was tradition.

Baby booties started arriving from Turkey, Spain, everywhere. One nursing home sent boxes full of them.

So food was always in my destiny.
