What To Look For

Sauces and baked goods, like cookie dough in ice cream, are generally a giveaway of gluten. Look for ingredients such as wheat flour and barley malt syrup, which contain gluten. Many brands will also include a note in the ingredients section about allergens like gluten or soy.

While ice cream that doesnt have any ingredients that contain gluten listed on the label is safe for people with gluten sensitivity or people who are hoping to avoid gluten, there is still a risk of cross-contamination. People with celiac disease should avoid them.

Cross-contamination is a major concern for the 3 million people in the United States with celiac disease. Even microscopic amounts of gluten can cause a reaction, according to the Academy of Nutrition and Dietetics. For people with celiac disease, its extremely important that ice cream be labeled as gluten-free, or that it has a gluten-free certification. No Churn Dairy Free Cake Batter Ice Cream

For years, one of my favorite gluten free no churn ice cream recipe has been my gluten free cake batter ice cream. With real birthday cake batter flavor (thanks to some toasted gluten free flour, or cake mix, a blue buttercream frosting swirl and a ton of sprinkles, it is always a hit.

Earlier this summer when I shared a picture of my gluten free birthday cake ice cream, I asked on Instagram if there was interest in a dairy free version. The answer was a resounding YES!

It has taken me awhile to get the dairy free cake batter ice cream to you, because nailing a no churn ice cream is no easy feat. I ran into a few issues at firsts, and my dairy free no churn ice cream looked like cottage cheese.

I figured it out, and am breaking it all down so that you dont have a curdled mess on your hands.

If you do have an ice cream machine, I’m including directions for making this recipe with an ice cream machine too. Honestly, using an ice cream machine is a TON easier than making it no churn. I love my Bosch Ice Cream Attachment for my Nutrimill Artiste Mixer.

Please note, this ice cream is coconut milk based and so it does taste like coconut to some degree. It will taste less like coconut the colder your ice cream is. It if softens or gets melty, it will taste more like coconut.

Can I Use Something Instead Of Gelatin To Make No Churn Vegan Ice Cream

Every ingredient in this recipe no churn ice cream recipe is vegan, except for the gelatin.

There is a vegan gelatin alternative my friend The Baking Fairy told me about, Bakol Unflavored Jel. She used it to make coconut white chocolate panna cotta. I havent tried it myself, so Id recommend using the directions on the back of the box to add it to the canned coconut cream. One package sets about 2 cups of liquid, which is equal to about 1 envelope or 1 tablespoon of unflavored gelatin. If you use Bakol Jel, you’ll need about of the package.

You may also use ½ teaspoon of xanthan gum instead of gelatin. This wont thicken your mixture the same way as gelatin, but will help to emulsify it so that the coconut cream doesnt separate out while chilling. The gelatin helps it to be more scoop able, in addition to emulsifying the mixture so you dont have clumps of coconut cream in your chilled mixture. If you use xanthan gum, add it very slowly, just a pinch at a time, while whisking.

If you don’t use gelatin, you can add 1 tablespoon of vodka to your ice cream to help prevent it from being too icy.

If you follow my , youll know that earlier this year I read through the book Sugarproof Kids. The authors sent the book to me for review, and while Ill be the first to admit that there is no way I know *everything* there is to know about sugar and feeding kids, I remember thinking there probably wasnt too much in the book that would be new information to me. Sugar is still sugar, and it truly does effect so many things for kids, but reading through this book did make me re-think how I am naturally sweetening things. I remember when the girls were very little, I used to sweeten everything from their oatmeal to their treats with whole fruits only. There is nothing wrong with a drizzle of honey over oatmeal, or a little splash of syrup in a muffin recipe, but reminding myself that the fiber in whole fruits helps the sweet spike to blood sugar slow downwell lets just say Ive been challenging myself to use whole fruit to sweeten things where I can! Ive even gone back to just blending fruit to stir into the girls oatmeal instead of a few slices of fruit and drizzles of honey.

But How Does Date Sweetened Ice Cream Taste

If Im gonna have ice cream, I want it to taste and feel just like ice cream! You know what I mean?! Dates have a very neutral sweetness, with a slight hint of warm caramel notes. Since dates are dried and packaged without any added sugar, you are truly just getting the sweetness from the whole fruit. With the added vanilla extract and splash of almond extract to the ice cream mixture, the ice cream really turns out tasting like vanilla ice cream. Use quality ingredients â When making homemade ice cream, youâll want to make sure you are using high quality ingredients for the best outcome.

Chill out â If possible, always start with chilled ingredients. This is important for homemade no-churn ice cream recipes and ice cream maker recipes.

Donât skimp on the fat â High fat milks and creams are essential when making homemade ice cream. Opting for a low-fat option often leads to icy ice creams and inconsistency in the texture.

Why Is My Ice Cream Hard To Scoop

You should see in the instructions that I recommend letting the ice cream sit at room temperature before scooping. Directly from the freezer, it will be too hard to scoop, but should be easy after thawing a bit.

Commercial ice creams typically include preservatives which allow them to be softer when frozen. Since our homemade gluten free ice cream doesn’t include any chemicals, we need to use time to get it soft enough.
