What To Look For

Sauces and baked goods, like cookie dough in ice cream, are generally a giveaway of gluten. Look for ingredients such as wheat flour and barley malt syrup, which contain gluten. Many brands will also include a note in the ingredients section about allergens like gluten or soy.

While ice cream that doesnt have any ingredients that contain gluten listed on the label is safe for people with gluten sensitivity or people who are hoping to avoid gluten, there is still a risk of cross-contamination. People with celiac disease should avoid them.

Cross-contamination is a major concern for the 3 million people in the United States with celiac disease. Even microscopic amounts of gluten can cause a reaction, according to the Academy of Nutrition and Dietetics. For people with celiac disease, its extremely important that ice cream be labeled as gluten-free, or that it has a gluten-free certification. All foods labeled as gluten-free, free of gluten, no gluten, or without gluten must have less than 20 parts per million of gluten, according to

No Churn Dairy Free Cake Batter Ice Cream

For years, one of my favorite gluten free no churn ice cream recipe has been my gluten free cake batter ice cream. With real birthday cake batter flavor (thanks to some toasted gluten free flour, or cake mix, a blue buttercream frosting swirl and a ton of sprinkles, it is always a hit.

Earlier this summer when I shared a picture of my gluten free birthday cake ice cream, I asked on Instagram if there was interest in a dairy free version. The answer was a resounding YES!

If you like fun, bright colored ice cream you’ll also love this recipe for cotton candy ice cream. It is perfect for a party!

It has taken me awhile to get the dairy free cake batter ice cream to you, because nailing a no churn ice cream is no easy feat. I ran into a few issues at firsts, and my dairy free no churn ice cream looked like cottage cheese.

I figured it out, and am breaking it all down so that you dont have a curdled mess on your hands.

If you do have an ice cream machine, I’m including directions for making this recipe with an ice cream machine too. Honestly, using an ice cream machine is a TON easier than making it no churn. I love my Bosch Ice Cream Attachment for my Nutrimill Artiste Mixer.

Please note, this ice cream is coconut milk based and so it does taste like coconut to some degree. It will taste less like coconut the colder your ice cream is. It if softens or gets melty, it will taste more like coconut.

Can I Use Something Instead Of Gelatin To Make No Churn Vegan Ice Cream

Every ingredient in this recipe no churn ice cream recipe is vegan, except for the gelatin.

There is a vegan gelatin alternative my friend The Baking Fairy told me about, Bakol Unflavored Jel. She used it to make coconut white chocolate panna cotta. I havent tried it myself, so Id recommend using the directions on the back of the box to add it to the canned coconut cream. One package sets about 2 cups of liquid, which is equal to about 1 envelope or 1 tablespoon of unflavored gelatin. If you use Bakol Jel, you’ll need about of the package.

You may also use ½ teaspoon of xanthan gum instead of gelatin. This wont thicken your mixture the same way as gelatin, but will help to emulsify it so that the coconut cream doesnt separate out while chilling. The gelatin helps it to be more scoop able, in addition to emulsifying the mixture so you dont have clumps of coconut cream in your chilled mixture. If you use xanthan gum, add it very slowly, just a pinch at a time, while whisking.

If you don’t use gelatin, you can add 1 tablespoon of vodka to your ice cream to help prevent it from being too icy.

Looking At Natural Sweeteners In A New Way

The Gluten & Dairy

If you follow my , youll know that earlier this year I read through the book Sugarproof Kids. The authors sent the book to me for review, and while Ill be the first to admit that there is no way I know *everything* there is to know about sugar and feeding kids, I remember thinking there probably wasnt too much in the book that would be new information to me. Sugar is still sugar, and it truly does effect so many things for kids, but reading through this book did make me re-think how I am naturally sweetening things. Learning about how even natural sweeteners like honey and maple syrup attach to our taste receptors effecting the way our brain sees sweet, and spikes blood sugar similar to plain sugar was a really good reminder. I remember when the girls were very little, I used to sweeten everything from their oatmeal to their treats with whole fruits only. As they got older the ease and convenience of honey or syrup won me over, and I figured a little dash here and there each week wont matter. There is nothing wrong with a drizzle of honey over oatmeal, or a little splash of syrup in a muffin recipe, but reminding myself that the fiber in whole fruits helps the sweet spike to blood sugar slow downwell lets just say Ive been challenging myself to use whole fruit to sweeten things where I can! Ive even gone back to just blending fruit to stir into the girls oatmeal instead of a few slices of fruit and drizzles of honey.

If Im gonna have ice cream, I want it to taste and feel just like ice cream! You know what I mean?! Dates have a very neutral sweetness, with a slight hint of warm caramel notes. Since dates are dried and packaged without any added sugar, you are truly just getting the sweetness from the whole fruit. How To Make Gluten-Free, Dairy-Free, Soy-Free Ice Cream!!

Use quality ingredients â When making homemade ice cream, youâll want to make sure you are using high quality ingredients for the best outcome.

Chill out â If possible, always start with chilled ingredients. This is important for homemade no-churn ice cream recipes and ice cream maker recipes.

Donât skimp on the fat â High fat milks and creams are essential when making homemade ice cream. Opting for a low-fat option often leads to icy ice creams and inconsistency in the texture.

Donât go crazy with the add-ins â If youâre adding in additional ingredients, pick one or two and make sure they are chopped into pieces no larger than a blueberry or pea.

Ruby Rockets Better Bars

We had mixed feelings when we first tried these bars. The Fudge flavor really did not go over well. And the healthier taste of the fruit flavors was a little odd at first. But once I picked up a fruity flavor after a long walk, I was hooked. They have a mellow, rich sweetness that really satisfies when your taste buds are more heightened or if you just prefer treats that are less sweet.

Does Ice Cream Have Gluten

Ice cream, if made from basic, natural ingredients, is naturally gluten free. Issues come in when ice cream has things added to it that include gluten, or if there is cross-contamination during production. I feel much safer making my own gluten free ice cream from scratch so that I can control all of those variables.

Best Chocolate: Cado Avocado Frozen Dessert

Cado ice cream stands out from the bunch because its main ingredient is avocado, not plant-based milk. This chocolate dessert starts with a mixture of organic avocado puree and avocado oil thats then sweetened and flavored to perfection with organic cane sugar and organic cocoa powder. The end result is a deep chocolate flavor with no hint of avocado whatsoever.

If youre feeling a little more adventurous, Cado also offers salted caramel, java chip, vanilla bean, cookies and cream, cherry amaretto, lemon, and mint chocolate chip flavors.

Chocolate and vanilla are ice cream flavor staples, but if youre in search of something deliciously indulgent, Haagen-Dazs Chocolate Salted Fudge Truffle always does the trick. Instead of almond, coconut, or oat, it uses Belgian chocolate as its core ingredient, and then mixes in salted fudge swirls and fudge truffle chunks. The end result is a rich and creamy plant-based ice cream that truly lives up to their traditional standard. This product is egg-, gluten-, and peanut-free, although it does contain soy.

While Haagen-Dazs doesnt have as many dairy-free options as some others on this list, other flavors include peanut butter chocolate fudge, mocha chocolate cookie, and coconut caramelall of which are just as satisfying.

Pressed Juicery Coconut Vanilla

Makes me wish I liked vanilla more because that was good! Jessie

Overall impression: Similar to the chocolate flavor above, this one beat our expectations. Its light, refreshing, and one of those desserts that leaves you satisfied without feeling weighed down.

Flavor: This tasted like a true vanilla ice cream with coconut undertones. The coconut flavor did not overpower, but was definitely present.

Texture: As with the chocolate flavor, the only area of improvement with this pint was the texture. It could have been a bit more smooth and creamy.

Light and goes down smooth. It could have more cookies and cream chunks though. Emily

Fluffy and sweet. Megan

Overall impression: Nadamoo got its start in Austin, but has become one of the most well-known dairy-free ice cream brands around. They have tons of delicious coconut-based flavors, but the Cookies N Créme is a cult favorite. We were all fans of this one, and while the flavor was delicious, the texture was even better.

Flavor: We all agreed that Nadamoo does a great job balancing out the coconut in all of their flavors. This one tasted like a classic cookies n cream, with creamy vanilla ice cream and delicious chocolatey cookie bits in between.

Texture: The texture of this one is thick and velvety, and every bite feels fluffy and smooth.

Tastes shockingly close to regular mint chocolate chip ice cream. Katie

Was surprised at how much I loved this. Crisp and delicious. Jessie

Why Is My Ice Cream Hard To Scoop

You should see in the instructions that I recommend letting the ice cream sit at room temperature before scooping. Directly from the freezer, it will be too hard to scoop, but should be easy after thawing a bit.

Commercial ice creams typically include preservatives which allow them to be softer when frozen. Since our homemade gluten free ice cream doesn’t include any chemicals, we need to use time to get it soft enough.
