The language is important because you will have to go searching for edible confetti thats reliably gluten free. I cant even provide you with a link to a shop that Im sure will sell them, since conditions seem to change frequently. But once you do find a source and order a container of them, theyll last quite a while.

Measure For Measure Gluten
Lets talk flour. The goal is to make this as easy as possible for you. Thats why I love using a measure to measure gluten-free flour. What does that mean? It means that its an exact replacement of regular flour for gluten-free flour. It also means the flour includes xanthan gum.
Xanthan gum is an important ingredient. Its a stabilizer and binding agent used in gluten-free baking. It essentially acts like gluten would in traditional baked goods.
Not all gluten-free flour contains xanthan gum. Thats why its important that you look for a cup-for-cup replacement, so you dont have to buy additional ingredients. So check the packaging before you buy it!
My favorite gluten-free flour is from King Arthur, I think it has the best texture for gluten-free baking. I have not developed this recipe with gluten-free flour that does not contain xanthan gum, so I dont have a recommendation to provide if your flour does not contain it.
Important note! If preparing this recipe using a food scale, thus going by weight measurements, double check the weight measurement in grams for the actual gluten-free flour you are using and use the weight measurement according to the packaging so that it is equivalent to 2 1/2 cups because not all flour weights are equivalent. Over or under measuring the flour can affect the end results of the cupcake.

Sprinkles dont bring much to the table nutrition-wise. Theyre primarily made of sugar, starch, and artificial colors. Their main purpose is to make baked goods more visually appealing, so any food with sprinkles on it is likely a high-sugar treat.
While some of the ingredients in sprinkles might seem strange , these ingredients are all generally recognized as safe by the Food and Drug Administration.
The bottom line is that sprinkles arent necessarily bad for you, but they dont do much for you nutrition-wise either.

What Kind Of Sprinkles Should I Use For Funfetti Cake
Good question! Theres lots of sprinkles on the market. For funfetti cake, I use sprinkles, they are also labeled jimmies. Dont confuse these with nonpareils. Sprinkles are long and soft. Nonpareils are tiny, hard sugar balls. In batter, nonpareils tend to melt and bleed color, while sprinkles dontgiving you nice bursts of color throughout the finished cake.

How To Bake As A Cake
Butter two 9-inch round cake pans, line the bottoms with parchment paper cut to fit, and butter the parchment paper.
Flour the pans, coating the bottom and sides of each pan, then tap out the excess flour.
Divide the batter between the two pans and bake until the tops are dry to the touch, the sides of the cake start to pull away from the pan, and a toothpick inserted into the center comes out clean. Generally you bake the cakes at the same baking time as the cupcake recipe.
Let the cakes cool on a wire rack, then remove each cake from its pan, discard the parchment paper, and set one cake layer on a cake round, frosting turntable, or the final serving platter.
Frost the top of that cake layer with the frosting, stack the second layer on top, frost the top and sides with the remaining frosting.

What Flavor Is Funfetti
Theres a lot of debate around this. I believe that the unique funfetti flavors comes from a combination of clear vanilla extract and a dash of almond extract. Its funny that I call for clear vanilla extract. If youre familiar with vanilla, you know that clear vanilla is artificial vanilla. And thats the point. Boxed funfetti cake mix, the type you probably grew up eating, includes artificial vanilla. If thats the flavor you crave, grab a bottle. It makes a difference! Id use clear vanilla extract in my frosting too, for the full effect.
As for the almond extract, it adds an almost maraschino cherry flavor. The almond extract isnt required. Feel free to skip it if you dont want to buy a bottle.

I don’t know about you, but when we went gluten free, I never gave a second thought to those colorful rainbow sprinkles. I assumed they were purely made from sugar and food coloring. I didn’t think that some brands are made on shared equipment with wheat!
With the holidays approaching, I wanted to investigate what brands of Christmas and other confetti sprinkles are safe. Colored sprinkles made on shared equipment may be okay for many who are gluten sensitive or gluten intolerant, but they are definitely not Celiac safe.
