There are certain times of year when I crave this salad. Sometimes its due to the hot weather and a desire for the cold, crisp crunch of iceberg lettuce. Sometimes its because I want to indulge in the absolute creamy, salty flavor of the dressing. Sometimesits both.

I love serving this salad at barbecues because its easy to make for a crowd. Its also the perfect accompaniment to a well-cooked steak. And, of course, the blue cheese dressing can be used on other types of salad.

Mini Wedge Salads With Homemade Blue Cheese Dressing

Everything is cuter when it is small. Puppies. Babies. Love Handles. Mini Coopers. They just ooze cuteness. I for one am not impressed when my food is small. I mean, yes it could be considered adorable to have a stack of tiny silver dollar pancakes. But it is only adorable to my mind. My stomach thinks it looks ridiculous. So I was hesitant to call these Mini Wedge Salads. Each salad is actually a good size, it just so happens they are smaller than a traditional huge head of lettuce wedge salad. And yes, gosh darn it, these are in the same category as baby chicks super cute.

These are perfect for appetizers, because you could even cut these up in half again, so they are more small bite sized. They arent heavy but the flavor of bacon and blue cheese is classic. I almost called these California Wedge Salads because of the avocado. We here in on the West Coast add avocado to everything. I know if you live in other states, avocado might be scarce. And Im sorry about that. I will try to pool my money together to send you some. Not to rub it in but avocado is one of my most favorite ingredients. It is so creamy, full of healthy fat, and brightens up any dish. Avocado and bacon, goes together like blue cheese and bacon. Thus making x +y = m. Pretty much all three ingredients go together well.

This bacon comes out bueno in the microwave. Shout out to K.A. for not using this anymore!

Ill be honest: it never occurred to me that there might be a gluten issue with blue cheese. Cheeses are naturally gluten-free, and it wasnt until I was researching a possible dairy intolerance issue that I discovered what I can only describe as the Great Blue Cheese Controversy.

In a nutshell, the issue is this: some of the molds used to create blue cheeses are grown on gluten-based breads. The mold spores are used in the cheese-making process. There is a question for many as to whether or not these cheeses contain gluten. Of course, there is strong evidence that relatively few blue cheeses available in the wider market contain gluten.

First. Modern cheese-making techniques have somewhat obsoleted the need for bread as a mold-growing medium. Second. There are artisans who engage in old school practices. Third. The community is divided on this issue.

A study done in 2009 by the Canadian Celiac Association found that even those blue cheeses made with spores grown on a gluten-containing medium showed no traces of gluten. They used the most sensitive tests available at that time. This pretty much resolves the issue for me.

I havent noted any adverse reactions when Ive eaten blue cheeses, but have read many anecdotes from people who point to blue cheeses as a source of inadvertent glutenings.
