This is a soft and airy Vegan Gluten free Pizza Crust. It comes out moist an soft and is not dry and crumbly. The crust works well as a pan pizza crust. Use a pie pan or deep dish pizza pan to support the crust edges.

Mix the dry and wet bowls into a dough. Let it sit for 10 minutes, then roll it out between 2 parchment sheets to about 9 inches. Place in parchment lined pan and press to fill the pan evenly and also have about a 1/2 inch crust on the edge.
Spray water on the crust and let it sit in a warm place for 15 minutes.
Cover with another parchment and Bake for 10 minutes.
Add the sauce, veggies, cheese or toppings you want to use. Bake for 15 minutes. Broil for a minute to brown. Cool for a minute. Slice and serve.

Tips For The Best Gluten
- One thing Ive noticed at a lot of restaurants that serve gluten-free pizza is that the pizza never gets crispy on the bottom. Gluten-free things generally need to be baked longer than regular baked goods.
- With this recipe I parbake the crust for 15-20 minute before adding the toppings. Then bake it for another 10-15 minute with the toppings on and youll have perfectly crispy, chewy pizza!
- I bake the pizza on these pans, then transfer it to a wooden cutting board to slice up. Any cookie sheet will work but I recommend greasing the sheet with shortening so it doesnt stick.
- Another great thing about this crust recipe is that it works with basically any gluten-free flour blend. It turns out wonderfully with King Arthur Flour and Bobs Red Mill gluten-free flours. You can use what you have on hand.

The method that we use to make this yeast free gluten free pizza is very similar to the method we use to make yeasted gluten free pizzabut the rise here comes from baking powder instead of yeast.
Theres less flavor because theres no yeast development, but theres no need to allow the crust to rest in the refrigerator for at least 12 hours like with traditional gluten free pizza.
All I did to create this recipe was take the yeast free pizza crust recipe from GFOAS Quick & Easy, and combine it with the gluten free bread flour blend from GFOAS Bakes Bread. The result is nothing short of a dinnertime miracle.
To make this recipe, you mostly just dump the ingredients into a mixer and mix until its all well-combined. One of the methods of making this recipe calls for the specialized gluten free bread flour blend from Gluten Free on a Shoestring Bakes Bread.
I prefer this pizza when its made with the bread flour blend since it still crisps up like a champ on the bottom and browns beautifully. But if the extra ingredient seem overwhelming, this isnt the time to use them.
The purpose of this recipe is ease. So you can absolutely make it with one of our all purpose gluten free flour blends. The dough just needs some more water, and it wont be as easy to handle.

Place Toppings And Cook
Once the bottom is crusty, remove the silpat or parchment paper and place the crust directly on the pizza pan. Add pizza sauce and toppings of choice and bake for another 15 minutes until toppings are ready.

So why is this important? Because using this flour allows you to adjust the texture of the dough! You can make it extra chewy or more flat and crispy, depending on how much xanthan gum you add.

This gluten-free pizza crust recipe yields 3 10-11 Pizzas. If youd like to freeze one or two, do so after par baking, then thaw at room temperature just prior to topping the pizza and baking. In summary, heres how to make the recipe :

- Chickpea flour The chickpea flour will absorb some of the moisture from the canned chickpeas while still keeping this crust gluten-free.

- Avoid over-mixing. I would describe the mixing of gluten-free doughs as a curve: mix too little and you wont get a rise, mix too much and youll have a gummy dough. So how do you know when a gluten-free dough is mixed enough? This particular dough will go from rough and shaggy to smooth with a texture similar to Play-Doh after about five minutes of mixing.
- Let the dough hydrate. One of the small but easy ways to make gluten-free dough more successful is to let the finished dough rest in order to fully hydrate the flour. This pizza dough doesnt primarily rely on the yeast for its rise , so this 30-minute rest is mostly to ensure all the starches in the flour are fully hydrated.

- Partially bake the crust before topping. The biggest issue with gluten-free pizza dough is that it can bake up gummy. Thats why its critical to partially bake the crust before topping it. This allows some moisture to escape from the dough before the sauce, cheese, and pepperoni can trap it inside the crust.

How To Make A No Yeast Pizza Dough
If you do any baking, you probably know that most traditional bread and pizza dough recipes call for yeast. This is because yeast makes them rise and become soft on the inside.

A lot of us who are gluten-free have been working with gluten-free recipes for years, and in the early days, that wasnt always a lot of fun. But these days, gluten-free cooking has come a long way! There are gluten-free workarounds for just about everything, including pizza crust!
My version is very similar to a regular wheat-based pizza crust, using mainly flour, oil, yeast and water. I also add a little bit of baking powder and a spoonful of sugar to my dough, helping to boost the rise in the dough, and give it a little more flavor.

Par Baking Pizza Crusts
Who doesnt love the convenience of pulling a frozen pizza out and shoving it in the oven? Well next time you make this recipe , make two and freeze one! My gfJules Pizza Crust Mix actually makes 2-3 large pizzas already, so if youre not in the mood for two large pizzas today, youll be set, because you can easily par bake one and freeze it for later!
Follow the instructions for making, spreading and rising the pizza just as you would normally, but then bake it at 450F for only about 5 minutes, or until the dough has puffed and is starting to look a bit dry but not brown.
Remove the crust to cool to room temperature and then either cover with toppings or not, your choice. Either way, at that point, wrap the pizza well with plastic wrap twice. This will prevent freezer burn. If you know youll be keeping it in the freezer for a few weeks or even a month, Id suggest another layer of foil, as well.
When youre ready for gluten free pizza next time, preheat your oven to 500F, then remove the foil and plastic wrap. If you havent already topped it previously, add sauce and toppings now.
Place the frozen gluten free pizza on your favorite pan or pizza stone and place it in the preheated oven, baking until the crust is browned and your toppings are melted, at least 10 minutes.

Whats Different About This Gluten Free Pizza Crust Recipe
While the ingredients for this gluten free pizza recipe are almost identical to the Test Kitchens, I did tweak a few. Reducing the psyllium husk powder and baking powder just a bit creates a crisper crust and I also use Bobs Red Mill Gluten Free 1-to-1 Baking Flour sans the Test Kitchens homemade mix.
Additionally, the method I use for this gluten-free pizza dough recipe strays from the Test Kitchens machine mixing, shaping and long low-temperature bake method in favor of hand mixing, different shaping method and quicker bake time somewhat similar to a homemade sourdough pizza crust Ive been making for years.
