When my husband saw me making it he couldnt believe all the veggies that were in the sauce, and proceeded to call me a magician I dont know about that but it is pretty magical to see the humble ingredients come together to make the best vegan mac and cheese!
So what is this vegan mac and cheese made of?
Consider The Preparation Process
Packaged mac and cheese is popular for convenience hence, you can expect them to be relatively easy to prepare compared to the made-from-scratch version. Check the cooking directions to see whether the meal is prepared using a microwave or stove.
Some may require you to boil water, cook and drain the pasta, then mix in the seasonings, while others are cooked in the microwave. For microwaveable cups, you usually only need cold water to prepare.
Dont forget to check whether you need to add extra ingredients like butter, milk, or yogurt. Those with powdered sauce mixes will call for some of these. Ones with pre-mixed sauce only expect you to cook the pasta.

Tips For The Best Vegan Mac And Cheese
- Is the sauce too thin? The sauce will thicken slightly once itâs mixed in with the pasta. If itâs still too thin, you can stir in just a pinch of flour at a time until itâs to your liking.
- Is the sauce too thick? The sauce will thicken as it sits, so just stir a little hot water into the leftovers upon reheating. The mac and cheese should turn out creamy again once the leftovers are warmed up.
- Noodles Use classic elbow noodles for the true mac and cheese experience, or any small pasta shell you like!
- Non dairy cheese Use any non-dairy cheese you like. I tried it with Follow Your Heart which was good, but the Violife version was much better.
- Gluten free For gluten free mac and cheese, use your favorite gluten free pasta noodle and swap the flour for any gluten free flour.

How To Make It Spicy

- Macaroni Noodles: to make this gluten free, these awesome GF macaroni pasta noodles work perfect in this recipe. If you arent gluten free, then you can use normal macaroni, whole wheat, or a veggie pasta.
- Mustard Powder: I love adding this mustard powder to any mac and cheese type dish it adds a nice sharpness and bright yellow color.
- Smoked Paprika: give an additional depth of flavor to this dish.
- Turmeric a staple in our spice cabinet! Aside from all the wonderful health benefits of turmeric , the flavor is fantastic. I try to add a teaspoon of turmeric into soups, stews, and rice dishes too.
- Nutritional Yeast: not to be confused with bread baking yeast, nutritional yeast has a cheesy nutty umami flavor which is great in all kinds of dishes I even sprinkle it on fresh popped pop corn and WOW! Also great in soups and sauces of all kinds.
- I used unsweetened Almond Milk for my version of this recipe. I prefer almond milk, which Silk has a shelf-stable version that lasts up to a year in the pantry!
What Cheeses Are Gluten Free
While most cheese is gluten free, it is always a good idea to check the ingredients of any cheese you want to purchase. Look for words like wheat starch or modified food starch, which is usually made from corn but a label will tell you if it is derived from wheat. My kids like these gluten free cheese brands:

Vegan cheeses are more at risk of containing wheat flour and gluten so check the labels. Our favorite vegan cheese is VioLife brand and these are gluten free. Kite Hill and Daiya vegan cheeses are also dairy-free.

Lets Make Some Yummy Baked Mac & Cheese
We are going to start with a box mix of Daiya Deluxe Cheesy Mac and add some goodies to it that will make this baked mac & cheese casserole extra yummy. This recipe is my go-to recipe now for holidays and special occasions. When I ask my family if they want some baked mac & cheese with the chips they all say yes!
You should be able to get this at your local grocery store. Im not sure why but my local grocery store moved our Daiya Cheesy Mac to the area by the boxed meals like Hamburger Helper instead of being by the other boxed macaroni and cheese. If you have any trouble finding it you might check your store in both places.
You can also find it on and Thrive Market.
First, make the macaroni & cheese according to the package directions.
Then were going to add in one tablespoon of Smart Balance Buttery Spread and 1/4 cup of unsweetened almond or cashew milk. Mix that all up and place in a greased 8-inch square baking pan or use a pie pan.
Next, were going to take 4 cups of gluten-free potato chips and crush them into bite-size pieces and then mix them with 2 tablespoons of melted Smart Balance Buttery Spread. Spread the buttery chips over the macaroni and then bake in a 350° oven for 15 minutes.
This is seriously yummy with the combination of the buttery crunchy topping and the cheesy macaroni. It definitely wins in the comfort factor!

What Makes This Recipe With 3 Varieties Special
This recipe is a 3-in-1, so the ingredient list might seem intimidating. But let me show you the way, and youll probably be able to commit your favorite variety of the recipe to memory. Then, it will really be yours.
Baked gf macaroni and cheese is more like a casserole, and it calls for eggs. You can easily make that whole recipe ahead of time, freeze or refrigerate it, and then bake it when youre ready.
But these 3 recipe varieties are all egg-free. The cheese sauces must be made right before serving, but you can boil the pasta ahead of time, toss it with some olive oil, then cover it and keep it at room temperature for hours .
The first variety, pictured above, is the roux-based macaroni and cheese. It calls for a few more ingredients, but it makes a just-right balance of creamy and cheesy.
The second variety, called queso-style, is pulled from our recipe for gluten free cheese sauce. It makes a thick, rich sauce thats the easiest way to make the cheesiest sauce.
The third variety, called almost-instant, calls for cheddar cheese powder. Its a specialty ingredient that you probably dont already have, but it tastes like The Box and its the only type of gf mac and cheese that my non-gooey-cheese eating gluten free son loves.

I could eat mac and cheese every meal of the day and never get sick of it. And now I can! Since this sauce is made totally from vegetables, spices, and almond milk its totally guilt-free in my book. And unlike regular boxed mac and cheese, this isnt loaded with sodium. You can control the amount of salt you use in the dish, not the other way around!

Best Cheese For Mac And Cheese
I love cheddar and parmesan, but there are plenty of others to choose from.
Smoked gouda, brie, gruyere, fontina, cream cheese or goat cheese melt terrifically and add modern flavor profiles.
What I wouldnt use is pre-shredded cheese because the additives that are added keep it from melting and the mac and cheese will most likely be gritty.
Feta is too dry and crumbly. It wont melt smoothly and will leave clumps of cheese. So thats not good.
Can I Make This If I Dont Have A High Powdered Blender
Yes! If you dont have a high powered blender like a Vitamix or Blendtec, then we recommend that you put all the ingredients except the cheese shreds into a normal blender or food processor and blend until creamy.
Afterwards, move the sauce to a sauce pot on the stove over medium heat and add the vegan cheese shreds. Stir until your vegan cheese has melted and you have a smooth, uniform vegan cheese sauce.

Freshly Grated Cheese Vs Pre
Freshly grated is the way to go! But why?
Pre-packaged shredded cheese is convenient, its helpfully measured and its fuss-free, but thats about it.
For this mac and cheese, its a big no because there are ingredients like potato starch that keep the cheese from clumping together in the package, and consequently making it where the cheese doesnt melt.
Along with potato starch is natamycin, a mold inhibitor, that keeps shredded cheese fresh. Whole Foods list natamycin as an unacceptable food ingredient, and I definitely agree.
And then theres the antifungal ingredient. Its a natural soil bacteria, but its a byproduct of an insect. It doesnt absorb well into the body, so there arent any serious side effects, but kind of gross.
Another component in some shredded cheese is cellulose which keeps the cheese from absorbing moisture. Cellulose is a non-digestible plant fiber and although it absorbs moisture, its yet another additive. Though a bag of shredded cheese is easy, it isnt as natural as I would like.
Grating fresh cheese, for me, is the best option. You know what it is in it, it costs less than pre-packaged cheese, and its a little effort to ensure the best taste and texture for this mac and cheese.
