Most of us have heard of Americas Test Kitchen. Whether it be from the many cookbooks that they have published or the TV show, it is a name that we have come to trust. The name alone says Weve tried it for you, this is how it works best. It doesnt matter if it has to do with kitchen gadgets, appliances, or recipes, you know that when an item or recipe has been given the Americas Test Kitchen stamp of approval you expect high things of it. The same holds true with The How Can it Be Gluten Free Cookbook.

One can never have too many muffin recipes. Muffins are perfect to grab on your way out the door the mornings youre running late, to pack in lunches, or help stave off a growling tummy in the middle of the afternoon. These gluten free Blueberry Muffins turned out beautifully they are light, moist, beautifully browned, and have a wonderful texture. My thoughts on The How Can it Be Gluten Free Cookbook

The recipes in this book are perfect for any skill-level. There is nothing in it that will stump a new baker, and ATK is sure to give clear, concise directions.

What Could Be Better

My only complaint is that it can be pricey and impractical to bake gluten-free though this could be a complaint of any gluten-free cookbook. The amount of ingredients you have to source and buy in order to make a gluten-free flour blend can be stressful. But the reason that this book succeeds is because of its really great, thoughtfully put together flour blend. So you trade a little bit of stress for a big pay off! In my opinion, thats a small price to pay if you want to eat waffles that taste EXACTLY like waffles.

Americas Test Kitchen: How Can It Be Gluten

If a recipe makes it into one of Americas Test Kitchen cookbooks, you can be assured that its gone through rigorous rounds of testing and editing until it turns out a delicious result every time. The dedicated test kitchen applies the same rigor to their gluten-free cookbook: How Can it be Gluten Free? The recipes are great, but my favorite part of this cookbook was that it will go over common gluten-free baking mistakes: for example, letting you know why your gluten-free cookies are crumbling and how to fix it.

This book also delves into the science behind gluten-free cooking, which helps you understand what you need to do to make up for the lack of gluten in a recipe. Youll also get Americas Test Kitchen custom flour blend recipe, which really does make a good difference.

Trying to be vegetarian and gluten-free can be really tough, and cookbooks that suggest a plate of roasted vegetables as a meal dont help. Gluten free sugar cookies from the cookbook. I used different sugars: cinnamon sugar , pink raspberry-flavored shimmer sugar, and regular white sugar.

In addition to the life-changing pizza recipe, the cookbook also has a really good chewy sugar cookie recipe. Remember when I was missing snickerdoodles? I made the ATK sugar cookies last week and rolled one batch in cinnamon sugar. Craving satisfied! They came out so good. You can also find the recipe online with your trial with Americas Test Kitchen.

My only modification was to roll balls of dough in cinnamon and sugar before flattening them, and then I sprinkled more on top before baking. These cookies stay delightfully chewy I made them about a week ago and they are still good I put half the batch in the freezer for future cookie emergencies.

We heartily recommend this cookbook for your gluten free kitchen. *.

Americas Test Kitchen released a follow-up book, *How Can It Be Gluten Free 2, which introduces a multigrain flour recipe and includes recipes for graham crackers, whole grain rolls and waffles. It also includes a comparison and analysis of several of the commercially available flour blends on the market and tells you how each will perform in different types of baked goods. Again, * and will ship to the UK. If youre only going to buy one, though, make it the original book its essential reading for anyone who wants to bake better gluten free goods!

The Recipes + Cooking From The Book

In order to get a real sense of what this cookbook can do, youre going to have to whip up The Americas Test Kitchen Gluten Free Flour Blend . Like many gluten-free flour blends, there are quite a few ingredients that go into it. This one is a mixture of white rice flour, brown rice flour, potato starch, tapioca starch and some nonfat milk powder.

If you dont have all of those items already in your kitchen, it can be a rather pricey hurdle just for making a loaf of bread. I get it. Ive been there. The cooks at ATK have also taken the time to compare the way their flour blend bakes up against some of the leading blends in each recipe. Say you dont have tapioca starch, but you do have a bag of Bobs Red Mill Gluten Free All-Purpose Baking Flour on hand youre not out of luck. They have included a section for each baked recipe on how to get the best results with flour substitutions. I thought this was thoughtful and handy, and something that will be majorly appreciated by those who feel overwhelmed by making, or simply dont have the time to make, a batch of flour blend every time they go to bake a few treats.

However, I will say that my results with the ATK Gluten Free Flour Blend were pretty incredible!

I asked my husband why these tasted different and he simply said Because, Gina, they taste like regular waffles. Yup, indeed they did. I would definitely make them again!

Our first gluten free pizza in all its glory.

Since I cook for two, I make three crusts instead of two . I use coconut oil which gives the crust a lighter texture. For the sauce , I use salsa-style fire-roasted tomatoes and add cayenne pepper to make it spicy.

The How Can It Be Gluten Free Cookbook Volume 2 From Americas Test Kitchen

Americas Test Kitchen compares recipes made with their flour blend to the same thing made with store-bought blends

Not just a cookbook, this volume starts out with an introduction to Americas Test Kitchen and then general information about gluten and its replacements. That is followed by their flour blends which includes information about why they chose those particular flours as well as the recipes for their blends. They have one for all-purpose flour and one for whole-grain flour. They also have short reviews on a number of various brands of store-bought gluten free flour mixes.

Americas Test Kitchens cookbook also includes a section on gluten free baking techniques with helpful hints, a section on how to make recipes dairy-free, information on binders and grains, and reviews on gluten free products like bread and pasta. Beyond the information section the book has lots of recipes for baked goods and some for salads and main dishes as well.

Helpful Tips For Gluten

  • It is very important to measure flour by weight, not volume, because different flours weigh different amounts.
  • Roll pie crusts between saran wrap instead of on a floured surface. Flour must be hydrated in gluten-free baking , so excess flour will mess up the final product.
  • Problem: gluten-free bread loaves are always tiny. Solution: Make a foil souffle collar to put on top of your loaf pan and fill it with double the amount of dough. This will allow the dough to rise without spilling over during baking.
  • Gluten-free baked goods have a shorter shelf life than foods that contain gluten. Therefore, its best to make recipes that yield less food. You can always double the recipe if youre expecting more people, but you never want to make too much.
  • Gluten controls the spreading of cookie dough. Its common for gluten-free cookies to spread out on the cookie sheet and create one large, flat cookie.

A New America

Makes 42 ounces

Be sure to use potato starch, not potato flour. Tapioca starch is also sold as tapioca flour they are interchangeable.

24 ounces white rice flour

7 1/2 ounces brown rice flour

7 ounces potato starch

3 ounces tapioca starch

3/4 ounce nonfat milk powder

Whisk all ingredients together in a large bowl until well combined. Transfer to airtight container and refrigerate for up to 3 months.

Americas Test Kitchen: Gluten

This past Tuesday, the editors of FaveGlutenFreeRecipes and RecipeLion had the opportunity to attend a gluten-free cooking event presented by Americas Test Kitchen Editorial Director, Jack Bishop. Americas Test Kitchen is the most-watched cooking show on public television, and is now in their 14th season. They recently launched a new cookbook entitled, The How Can it be Gluten Free Cookbook, which was at the center of this presentation.

As a huge fan of the Americas Test Kitchen TV show, I was thrilled to attend this event. Ive watched Bishop run the taste test segment for years, so it felt like I was meeting a celebrity!

I learned a lot about gluten-free cooking at the presentation. Bishop was very knowledgeable about the topic and discussed everything from how to make a gluten-free flour blend to tips on making the perfect gluten-free pie crust. It was fascinating to learn all of the complexities of cooking for this particular diet. As I do not personally follow a gluten-free diet, I did not have a wide knowledge of gluten free cooking. I received a good taste of it that night, though .

We learned a lot about gluten free cooking at this event, and Id like to share a few things right here:

Whole Grain Gluten Free Waffles

I decided to try their whole grain flour mix because it does not call for powdered milk like the all-purpose one does and I wanted to try it exactly their way without substitutions or omissions. Since milk is the thing that upsets my stomach the most Id have to leave out or replace the powdered milk in the standard blend. I found I had to make a substitution in the whole grain blend after all though. The Flax USA brand of ground golden flaxseeds they recommend is not available in any local stores near me and when I tried to order it online every source I checked said it was out of stock. Not knowing if any other brand would be as finely ground as their recommended one should I bother to order it online, I just got what the local store had which was the Bobs Red Mill they said was too coarse.
