GLUTEN FREE DINNER ROLLS

Because I havent been able to find store-bought gluten-free puff pastry, I decided to make my own. The only issue is I didnt know where to start.

After combing the Internet to see what options were available, I landed on my friend Crystals blog. She is a fantastic baker and has a recipe for everything check out her site.

Instead of recreating the wheel, I tried making her gluten-free puff pastry recipe and had huge success. You can view her recipe here or my version of her recipe is featured below with a printable recipe card.

Ive made this puff pastry recipe many times and it works beautifully every time. It used to take me awhile to make it, now I whip it up so fast that Im not sure I would buy store-bought puff pastry again, even if it was available.

Ill walk you through how to make a quick and simple gluten-free puff pastry dough so you can enjoy this wonderful treat again.

How I Reformulated My Gluten Free Croissants To Make Them The Best Ever

I consider myself a pretty decent self-taught baker, but I had never made croissants, even in my gluten filled world. After many years of trial and error, I finally developed what I thought to be the be all end all to a gluten free croissant. It was light, flaky, and buttery. How could it get better than that?

I started experimenting with using psyllium husks in my breads. Not necessarily as a replacement for xanthan gum . But as an addition to the recipe.

I found that adding psyllium husks to some gluten free bread dough helps with the extensibility of the dough itself, even more so than xanthan gum in most cases. Using it in my gluten free hamburger and hot dog buns was revolutionary, so I just HAD to try it in the croissants.

But I also watched Youtuber Bruno Albouze from the Real Deal Cooking Channel and found yet another technique that I knew would work wonders. By putting the dough in the freezer first, before locking in the butter, I was able to create a similar consistency of the dough and butter. This made it easier to roll the butter block into the dough without breakage!

Are Crescent Rolls The Same As Croissants

In a word, no, crescent rolls are not the same as croissants. They are similar in shape to one another, but a crescent rolls is bread a croissant is pastry.

You can, indeed, make gluten free croissants . But youll need to work with the dough as if it were pastry, using cold ingredients and rolling and folding the dough so that it creates light, flaky layers. Croissants are like a cross between crescent rolls and flaky layered biscuits.

Making The Butter Block

The next morning, mix the butter and two tablespoons of bread flour in a small bowl until smooth and well combined. Scrape it into a quart-sized ziptop baggie and push it into the corners, then take a rolling pin to roll it into an even block. Place the butter block in the refrigerator while you work with the dough. Please note: this butter block is for HALF the dough. If you plan on using all the dough at once, youll need to double the amount of butter and flour and put it in a gallon bag.

These soft, intensely buttery gluten free crescent rolls are just as flaky and soft as the ready-made kind from the grocery store. And the dough is just as useful!

I assume you already know about the crescent rolls in the refrigerated section of nearly every grocery store in nearly every town in America. And if you havent been gluten free your whole life, youve probably already bought that dough and used it in a bunch of interesting and fun ways.

Well, with this gluten free crescent roll dough, you can have all of those recipes back. And, of course, you can have back the classic basket of buttery rolls that makes any dinner instantly better.

Rolling And Shaping Gluten Free Crescent Rolls

Wax paper is key to successful crescent rolls. It helps with preventing the dough from sticking too much and give you a nice surface to work on for rolling it out.

Using a rolling pin, roll the dough to a 12 inch circle. You might need to sprinkle it with flour a few times.

Then, using a butter knife, slice the crescent roll dough into 12 slices, like a pizza.

Carefully roll each slice, starting from the long end, toward the center of the circle.

Place each crescent roll onto a baking sheet.

Keto Healthy Croissants Recipe ð¥? Low Carb Crescent Rolls Gluten Free

Ive tried every combination of temperatures and times and believe this is the best method for baking gluten free croissants. Its nothing like baking regular croissants, though. Remember everything thats up is down and down is up in gluten free baking sometimes

Before doing anything else, place the baking sheet filled with the croissants on another baking sheet. This will insulate the bottom of the croissants while baking so they wont burn before the rest of the croissant is done.

Preheat the oven to 475 degrees F. Brush your croissants ever so lightly with an egg wash, being careful not to deflate them. Place the croissants in the freezer for about 10 minutes .

Once the oven is preheated, open the door and throw 2-3 ice cubes right onto the oven floor. Place the croissants in the oven and quickly shut the door. Set a timer for 5 minutes.

Lower the temp to 450 degrees F and set a timer again for 5 minutes. Lower the temperature yet again to 425 degrees F and set another timer for 5 minutes.

Remove the croissants from the oven and check to see if theyre done. Carefully lift up one croissant . If it feels relatively light for its size, its done. If it feels at all heavy, place the croissants back in the oven to bake for another 5 minutes at 375 degrees F.
