I used to have an absolute obsession with chewy granola bars. They were always in my bag and a complete pantry staple. Looking back it is comical that I thought those 90 calorie bars filled with sh!t would fill me up but we have come a long way since then.

You guys know I am a huge snack bar gal. I always share my favorites over on Instagram. And I love making my homemade chewy granola bars too when we want a more traditional granola bar. They are the type of snack you can serve to the whole fam or enjoy the batch yourself. We demolish them over here in a couple days. And Ezra loves having them as dessert too.

I love that these are made with only 5 ingredients and they take less than 10 minutes to whip up. It just doesnt get easier guys!

The key part in making these is letting the bars cool after they bake. Before slicing into bars, let them cool a bit or they will fall apart on you and we of course dont want that to happen.

Tips For Making Homemade Granola Bars

  • Make these bars thicker by making them in an 8×8-inch pan. Since these are made for kids and they hold well together, I like this thinner bars made with the larger pan.
  • Press mixture very firmly into the prepared baking pan. You really need to pack it in tightly using a rubber spatula or back of a greased measuring cup. This will help them stick together in the end so they dont crumble.
  • Dont skip the cooling process. Not only does cooling them allow the butter to harden so all the ingredients stick well together, but it also makes it easier to cut.
  • Use parchment paper for storage. It helps to wrap them in parchment paper or place thin pieces of parchment paper between the layers so they dont stick together.
  • How To Make Granola Bars:

    Alright, lets do this! To make these homemade granola bars, simply:

  • Simmer the peanut butter, honey and coconut oil. Yep, were going to heat these three ingredients first, which Ive found is a key step in helping these bars stick together. Combine the PB, honey and coconut oil in a saucepan and heat over medium until it comes to a simmer , stirring occasionally. Continue simmering for 1 minute, stirring often so that the bottom of the peanut butter does not burn. Remove then pan from the heat and
  • Add in the vanilla and salt. Stir until combined.
  • Add in everything else. Well, if you would like the chocolate chips to hold their shape, I recommend stirring in everything but the chocolate chips. Then once the granola is combined, pop it in the fridge to cool off for 15 minutes, and then stir in the chocolate chips. )
  • Press the granola into a square baking pan. Line an 8×8-inch or 9×9-inch baking pan with parchment paper. And then press the granola firmly and evenly into the pan. I use the bottom of a measuring cup to help press it down so that its nice and flat.
  • Refrigerate until chilled. Then cover the baking pan and pop it in the fridge for an hour or so, until the bars are chilled.
  • Cut the bars. Lift up on the parchment paper to transfer the big slab of granola to a cutting board. Then cut the bars into your desired shape and size.

    How To Make Homemade Gluten

    • Line an 8-inch by an 8-inch baking pan with parchment paper.
    • In a large bowl, stir together the peanut butter, honey, pure vanilla extract, cinnamon, and salt, until smooth.
    • Add the gluten-free quick oats and mini chocolate chips. Stir until fully combined. The mixture will seem dry at first, but itll come together.
    • Press the mixture firmly into the pan with your hands or a spatula. Use the back of a ¼ measuring cup to help flatten the mixture.
    • Cover with plastic wrap and chill for at least 1 hour, then slice into bars.
    • Store the cut bars in an air-tight container and refrigerate.

    Ive been eating a lot of butter lately. Im not talking sticks of butter straight out of the wrapper although, I did eat butter straight from the butter bowl as a child.

    My recent butter obsession has been in the form of chocolate brownie cookies, butterscotch chocolate caramel cookie cups, and loaded baked potatoes oozing with melted butter. While it has been a delicious few weeks, my thighs are beginning to rub together, which means its time to stop my butter-eating shenanigans and move on to healthier choices.

    I decided to ease my way back into healthy snacking by mixing a bunch oats, seeds, and almonds with creamy peanut butter and crisp rice cereal to create chewy chocolate chip peanut butter granola bars.

    I even added some chopped up prunes.

    Yes, I said the word prune. Wait, dont go running for the hills just yet!
